1 quart heavy whipping cream
1 cup powdered sugar
One 9-ounce box thin chocolate wafer cookies

Steps:

  • In the bowl of an electric mixer using a whisk attachment, whisk the heavy cream and powdered sugar until stiff.
  • Crush one-third of the wafers by hand or with a rolling pin inside a resalable plastic bag until they become coarse crumbs. Set aside.
  • In a round 9-inch springform pan, layer in one-third of the whipped cream, smoothing evenly with a spatula. Then layer half of the remaining flat whole wafers close to each other, then one-third more of the whipped cream, then the remaining whole wafers and finally top with the rest of the whipped cream. Garnish the top of cake with the crushed wafers.
  • Cover and refrigerate for at least 6 hours.
  • Run a paring knife around the springform pan and release the wall of the pan from around the cake. Leave the cake on the bottom of the pan and transfer to a serving dish or cake stand, then slice and serve.

1 (14.4 oz) box graham crackers or honey graham crackers (I used honey)
1 (14 oz) can sweetened condensed milk
1/4 teaspoon ground cinnamon
3/4 cup halved candied red cherries
1/2 cup chopped dried or candied pineapple
1/2 cup chopped dates (or dark raisins)
1 tablespoon sugar
1/2 cup sweetened flaked coconut
1/2 cup coarsely broken walnuts
1 cup coarsely broken pecans

Steps:

  • Chop everything that needs chopping; put the cherries, pineapple, and dates in a mixing bowl. Sprinkle sugar over the fruit and lightly toss together to unstick the fruit. Coarsely break nuts into a separate bowl. Set aside. Coarsely break apart the graham crackers then pulse in a food processor until fine crumbs. (I did this in 3 batches). Pour crumbs into a large mixing bowl; add cinnamon and the sweetened condensed milk. Using a spoon or your hands, combine to form a stiff dough. Add remaining ingredients and knead them into the dough using your hands. Dump the mixture out onto a piece of Saran plastic wrap or aluminum foil. Firmly shape into a log about 3-4 inches in diameter. Roll up tightly and place in the freezer for about an hour before removing the wrap. To serve, cut into 1/2-inch slices with a sharp knife and arrange on a serving plate. Store covered in the refrigerator.

1 package white cake mix (regular size)
1 package (3 ounces) strawberry gelatin
3 tablespoons sugar
3 tablespoons all-purpose flour
1 cup water
1/2 cup canola oil
2 large eggs, room temperature
1 cup finely chopped strawberries
FROSTING:
1/2 cup butter, softened
1/2 cup crushed strawberries
4-1/2 to 5 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Line the bottoms of 2 greased 8-in. round baking pans with parchment; grease parchment., In a large bowl, combine cake mix, gelatin, sugar and flour. Add water, oil and eggs; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in chopped strawberries. Transfer to prepared pans., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For frosting, in a small bowl, beat butter until creamy. Beat in crushed strawberries. Gradually beat in enough confectioners' sugar to reach desired consistency. Spread frosting between layers and over top and sides of cake.

1 pound (4 sticks) butter, room temperature
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans or walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • With an electric mixer or by hand, cream butter and sugars in a large bowl. Add eggs and vanilla. In a separate large bowl, sift together the flour, cream of tartar, baking soda and salt. Add flour mixture to egg mixture in 3 additions. Stir in nuts.
  • Divide the dough into quarters, and then roll it into 4 logs. Place dough in refrigerator to chill for 2 hours. Remove dough and cut into 1/4-inch thick slices. Place on a floured, but not greased, baking sheet and bake for about 15 minutes. Remove to a rack and cool.

8 large marshmallows
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) box vanilla wafers, crushed
1 cup coconut
10 candied cherries, chopped
1/8 lb candied pineapple, if desired
1/8 lb raisins, chopped, if desired
wine, if desired

Steps:

  • Combined crushed wafers, coconut, chopped cherries, pecans and pineapple and place in large bowl. Mix well. Also add raisins, if desired.
  • Melt marshmallows in top of double boiler.
  • Add milk to melted marshmallows and mix well.
  • Remove from heat and pour onto wafer mixture. Mix well.
  • If desired, pour 1/4 to 1/2 cup of any good sweet wine - scuppernong, blackberry, pear, etc. When cool enough to handle, form into "logs" and wrap in waxed paper.
  • Chill at least 24 hours before serving -- the longer the chilling, the better.
  • Serving Suggestions Slice into 1/2" slices and arrange on small platter.
  • Best served cold.
  • Can be made 2 weeks in advance.

1 cup chopped pecans
1 cup chopped walnuts
1 cup chopped raisins
1 (4 ounce) jar maraschino cherries, drained and chopped
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) package vanilla wafers, crushed

Steps:

  • In a medium bowl, stir together the pecans, raisins, walnuts, cherries, condensed milk and vanilla wafers. Dough will be very thick, you will need to use your hands.

  • Melt butter and marshmallows together. crush graham crackers or use crumbs. chop and mix all dryed fruits and nuts together. mix together with hands. pack in greased pan. best to use loaf pans so you can slice them in nice slices. let refrigerate for 48 hours.

My family doesn't really like the traditional fruitcake, but will eat this like crazy. The thing I like most about it is that it freezes really good. You can make it a month in advance, freeze, defrost and serve later. Cook time is actually chill time.

1 cup raisins
1 cup pecans, chopped
1 cup walnuts, chopped
1 (10 ounce) container chopped candied fruit
2 (14 ounce) cans sweetened condensed milk

Steps:

  • Mix graham cracker crumbs and milk until well blended.
  • Add remaining ingredients until well blened.
  • Mixture will be very stiff.
  • Pack into a Christmas mold, which has been sprayed with oil, or form into logs and wrap with wax paper.
  • Cover and keep refrigerated.
  • Remove from mold just before serving.

1 cup coconut

Steps:

  • Combined graham cracker crumbs, coconut, cherries, pecans and pineapple in large bowl.
  • Mix well.
  • Mix marshmallows& milk in top of a double boiler.
  • Stir constantly until marshmallows are melted.
  • Pour over dry mixture and stir till well blended.
  • Line loaf pan with foil.
  • Press fruit cake mixture into pan forming a loaf.
  • Chill for at least 3-4 hours.

1/2 pound(s) candied cherries

1 can(s) eagle brand milk

Steps:

  • Crush graham crackers very fine( in those days I used graham crackers but today I would use 1 pound graham cracker crumbs.
  • Chop and combine fruits and nuts
  • Heat butter, Eagle brand milk and marshmallows until marshmallows melt
  • Mix graham cracker crumbs with fruit and nuts, add spices and combine with Eagle Brand milk and marshmallow mixture. Mix well and pack in pan that has been lined with plastic wrap or cheese cloth. The mixture will be very sticky and I used my hands to mix as soon as the hot mixture cooled enough. Cake will keep indefinitely in the refrigerator Also in those days plastic wrap was not avaiable. Note: my step mom would wrap the fruit cake in the cheesecloth and then pour some brandy over it. I mix a little brandy extract in while mixing the whole thing together. This fruit cake tastes just like "Claxton Fruit Cake" if you've ever had any.
