Time 4h15m

Number Of Ingredients 18

1 (15 ounce) can pumpkin
⅓ cup sugar or sugar substitute (see Tips)
2 tablespoons honey
1 ½ teaspoons pumpkin pie spice
½ cup refrigerated or frozen egg product, thawed (see Tips)
1 teaspoon vanilla
¾ cup evaporated fat-free milk
½ cup lightly sweetened toasted oat bran cereal flakes with oat clusters (such as Smart Start®)
⅓ cup coarsely chopped almonds, toasted
¼ cup dried cranberries
½ teaspoon finely shredded orange peel
8 gingersnaps, broken
2 ounces dark or bittersweet chocolate (60 to 70% cacao), chopped
2 teaspoons finely chopped crystallized ginger
2 gala or Jonathan apples (or 2 ripe pears)
¼ cup water
¼ cup chopped walnuts or pecans, toasted
1 tablespoon pure maple syrup

Steps:

  • Preheat oven to 350 F. Lightly grease an 8-inch springform pan. In a medium bowl, combine pumpkin, sugar, honey, and pie spice. Add eggs and vanilla. Beat lightly just until combined. Gradually stir in evaporated milk. Pour into prepared pan and place on a foil-lined baking sheet.
  • Bake for 45 to 50 minutes or until center appears set when gently shaken. Cool for 1 hour on a wire rack. Cover with foil and chill for at least 2 hours or up to 24 hours before serving.
  • To serve, loosen pie from sides of pan by running a thin metal spatula around the edge. Remove sides of pan. Cut pie into wedges to serve.
  • Cranberry-Orange Almond Crunch: In a small bowl combine lightly sweetened toasted oat bran cereal flakes with oat clusters (Smart Start®); coarsely chopped almonds, toasted; dried cranberries; and finely shredded orange peel. (This makes a great snack mix or breakfast cereal: make extra of the mixture and store in an airtight container in the refrigerator up to 2 weeks.)
  • Ginger-Chocolate Crunch: Top chilled pumpkin mixture with 8 gingersnaps, broken. Then top evenly with 2 ounces dark or bittersweet chocolate (60 to 70% cacao), chopped; and 2 teaspoons finely chopped crystallized ginger.
  • Maple-Apple Pecan Crunch: Core, quarter and thinly slice gala or Jonathan apples or ripe pears. In a large skillet, cook apples and pears, covered, in water over medium heat for 5 minutes or just until softened and pliable but not mushy. Drain off liquid. Arrange apple or pear slices atop pumpkin when directed in step 3. Sprinkle with coarsely chopped pecans or walnuts, toasted, and drizzle with pure maple syrup.

Categories     Dairy Free     Dessert     Fall     Pie     Thanksgiving

Time 1h30m

Number Of Ingredients 13

1 pie crust
For the pumpkin filling:
1 (15 ounce) can pumpkin puree
3 eggs
¼ cup pure maple syrup
¼ cup coconut sugar (or organic cane sugar)
¼ cup unsweetened almond milk (any milk will work)
1 teaspoon vanilla extract
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon ground ginger
½ teaspoon allspice
¼ teaspoon salt

Steps:

  • Make pie crust as directed.
  • Preheat oven to 350 degrees F.
  • Make the filling: In a large bowl, add the pumpkin puree, eggs, pure maple syrup, coconut sugar (or regular sugar) almond milk, vanilla, cinnamon, nutmeg, ground ginger, allspice and salt. Mix until well combined and completely smooth. Pour into pie pan.
  • Bake for 50-60 minutes until filling is no longer jiggly. Check pie after every 20 minutes to make sure crust isn't burning. If it is getting a little too golden brown, simply cover pie edges with foil or a pie shield.
  • Allow pie to cool for at least an hour before serving. Pie should be kept in fridge once completely cool. Top with whipped cream or ice cream. Store pie in fridge. Serves 9.

MY SKINNY PUMPKIN PIE (CRUSTLESS, LOW FAT, LOW SUGAR)

My Skinny Pumpkin Pie (Crustless, Low Fat, Low Sugar) image

I just tweaked a standard pumpkin pie recipe to use with my food program. This is "technically" a dessert but I also eat it for breakfast. I bake it in an 8" square baking pan because the batter doesn't all fit into a 9" round pie pan. Note that the more spice you use, the more sweetener is needed to balance the taste, so I don't go above 1 1/2 teaspoons of spice in this recipe.

Time 35m

Yield 1 pie, 4-6 serving(s)

Number Of Ingredients 6

3 large eggs or 2 jumbo eggs
1 cup vanilla almond milk, unsweetened
1 1/4-1 1/2 teaspoons pumpkin pie spice
5 drops liquid stevia extract (or to taste)
1 tablespoon agave nectar (or to taste)
1 (15 ounce) can pumpkin puree

Steps:

  • Blend almond milk and eggs. Add spices, stir until blended.
  • Add stevia and sweetener, stir until blended.
  • Add pumpkin, a few spoonfuls at a time; blend.
  • Pour into an ungreased 8 inch square baking pan.
  • Bake at 375 degrees F. about 30 min., or til small knife inserted in center comes out clean.
  • Cool in pan, then refrigerate.
  • If you want to make this richer, serve with cream or replace some of the almond milk with cream.

Skinny Pumpkin Pie image

53% less fat • 80% less sat fat • 24% fewer calories than the original recipe. The real secret's in the crust.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 2h25m

Yield 8

Number Of Ingredients 12

1 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/4 cup vegetable oil
3 to 4 tablespoons fat-free (skim) milk
3 egg whites or 1/2 cup fat-free egg product
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1/8 teaspoon salt
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 can (12 oz) evaporated fat-free milk
1/2 teaspoon vanilla

Steps:

  • Heat oven to 425°F. In medium bowl, mix flour, 1 teaspoon sugar, 1/4 teaspoon salt and the oil with fork until well mixed. Stir in milk, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl. Shape pastry into a ball, using your hands. Press pastry in bottom and up side of 9-inch glass pie plate; flute as desired or press pastry to top edge of pie plate with fingers or fork.
  • In medium bowl, beat egg whites slightly with wire whisk or egg beater. Beat in remaining filling ingredients. Pour filling into pastry-lined pie plate; carefully place on oven rack. Bake 15 minutes.
  • Reduce oven temperature to 350°F. Cover edge of pie crust with 2- to 3-inch strip of foil to prevent excessive browning. Bake about 45 minutes longer or until knife inserted in center comes out clean. Cool on cooling rack at least 1 hour before serving. After cooling, pie can remain at room temperature up to an additional 5 hours, then should be covered and refrigerated.

NO SUGAR, NO FAT, NO CHOLESTEROL PUMPKIN PIE

No Sugar, No Fat, No Cholesterol Pumpkin Pie image

Usual, not-healthy pumpkin pie recipes call for 3/4 cup sugar, 2 -3 eggs (yolks!), and 1 12-oz can of innocent-sounding evaporated milk. Yikes. One 12-oz can of fat free evaporated milk has 45 g carbs, which quickly break down to 12 tsp sugar (that's a candy bar). Then there's the lardy, sugary, floury pie crust. This healthy, high protein recipe serves 8 at 112 calories per serving, including the no sugar Healthy crust. (Make the crust first.)

Provided by HealthyChocolate

Categories     Dessert

Time 30m

Yield 8 serving(s)

Number Of Ingredients 9

3/4 cup Splenda granular, sugar substitute
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1 (15 ounce) can pumpkin pie filling
1/2 cup pasteurized liquid egg-whites
1/2 cup pre-shredded fat free mozzarella cheese
4 teaspoons egg substitute
6 tablespoons warm water

Steps:

  • Preheat oven to 400 degrees.
  • Combine the first four ingredients in a small bowl.
  • Stir pumpkin into skillet & heat slowly.
  • Add the egg whites and cheese, stirring until cheese starts to melt. (If the eggs start to cook, remove from heat for a bit.).
  • Mix in the Splenda and spice.
  • Mix egg replacer well with the water, add.
  • Stir whole mixture, pour into crust.
  • Bake at 400 degrees for 10 minutes.
  • Reduce temperature to 350, bake 15-20 more minutes or until toothpick inserted comes out clean.
  • The cheese is what "binds." Blended with the egg whites, the two substitute beautifully for the not-healthy evaporated milk. (Fat free, nice, but as much sugar as a candy bar.) And you needn't bake at such high temps for so long, because you're not waiting for sugar to melt, egg yolks to cook - and you've already heated your ingredients.
