This super speedy supper is a great way to transform hardy winter greens into a deliciously silky pasta sauce. So simple, but, boy, is it good.

150 g dried spaghetti
4 cloves of garlic
200 g cavolo nero
30 g Parmesan cheese
30 g ricotta cheese

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Meanwhile, peel the garlic. Tear the stems out of the cavolo and discard, adding the leaves and the garlic to the pasta pan for 5 minutes.
  • Pour 1½ tablespoons of extra virgin olive oil into a blender, then finely grate in the Parmesan.
  • Use tongs to carefully transfer the cavolo leaves and garlic straight into the blender and blitz for a few minutes until super-smooth. Taste and season to perfection with sea salt and black pepper.
  • Drain the pasta, reserving a mugful of cooking water.
  • Return it to the pan and toss with the vibrant green sauce, loosening with a splash of reserved cooking water, if needed, then divide between your plates.
  • Dot over the ricotta, drizzle with a tiny bit of extra virgin olive oil, and tuck right in.

You won't regret making your own pesto over the shop-bought variety. It has so much more flavor and vibrancy that you may never buy it again.

50 grams (2 ounces) basil leaves
30 grams (1 ounce) Parmesan cheese, grated, plus extra to serve
50 grams (2 ounces) pine nuts, plus extra to serve
1 large garlic clove
85 milliliters (1/3 cup) extra-virgin olive oil, plus extra for frying
2 zucchini, diced
300 grams (10 ounces) frozen peas
500 grams (1 pound 2 ounces) fresh tagliatelle

Steps:

  • In a food processor blitz the basil with the Parmesan, pine nuts and garlic, season well with salt and pepper and gradually whizz in the oil until you have a glossy pesto.
  • Heat a little oil in a frying pan and fry the zucchini for 2 to 3 minutes until lightly colored. Add the frozen peas and allow to defrost and warm through.
  • Cook the pasta in a saucepan of boiling salted water for 2 to 3 minutes, then drain and add to the pan of veg along with the pesto. Serve with a scattering of pine nuts and Parmesan.

Sneak some extra green veg into pesto-based pasta sauce

400g spaghetti
100g bag baby spinach
140g frozen pea
small bunch basil , leaves picked, a few reserved to serve
3 tbsp green pesto
150ml pot single cream
50g parmesan (or vegetarian alternative), grated, plus a little extra to serve

Steps:

  • Cook the spaghetti following pack instructions. Meanwhile, boil the kettle, put the spinach and peas in a bowl, and cover with boiling water. Leave for about 3 mins until the peas are tender, then drain well. Tip the veg into a food processor or blender, add the basil, pesto, cream and Parmesan, and whizz to make a smooth sauce.
  • Drain the pasta, reserving a little of the cooking water, and return to the pan. Pour over the sauce and return to a low heat to cook for a few mins, until the sauce clings to the spaghetti. Add a little pasta water if it looks too dry, season to taste and serve with extra Parmesan and scattered with basil leaves, if you like.

Kosher salt
1 pound (453 g) whole wheat spaghetti, or whatever type of pasta you'd like
5 ounces (141 g) fresh baby spinach
6 large leaves fresh kale (any type), tough stems discarded, torn into large pieces
1 large handful fresh basil leaves (about 12 large leaves)
2 garlic cloves, peeled
½ cup (50 g) crumbled feta cheese, plus extra for serving
3 tablespoons cream cheese
3 tablespoons extra- virgin olive oil

Steps:

  • Set a large pot of water to boil and salt it generously. Add the spaghetti to the pot and cook according to the package directions.
  • Meanwhile, place the spinach, kale, basil, garlic, feta cheese, cream cheese, and olive oil in a blender and add 1 cup (240 ml) of the boiling salted water from the pasta pot. Puree until smooth and season to taste with salt (it might need quite a bit depending on how salty your water is-don't be shy!).
  • Drain the spaghetti in a colander and then return it to the now-empty pot. Add the green sauce and stir well to combine.
  • Serve immediately with extra crumbled feta cheese on top.
