- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
- Transfer potatoes to a large bowl; mash butter, garlic, basil, and thyme into the potatoes with a potato masher until smooth.

MASHED POTATO SOUP
Mashed Potato Soup is a great way to use up leftover mashed potatoes. This quick cooking soup comes together in 30 minutes with just 6 ingredients. Even better, your family will never know they are eating the leftover mashed potatoes!

Steps:
- In a large stock pot melt butter on medium heat.
- Then add in onion. Caramelize until golden brown mixing periodically, for 10 minutes.
- Once the onions are golden in color add the all-purpose flour and mix well until the onions have been coated with the flour mixture.
- Pour the milk into the pot and stir for one minute.
- Then add in the mashed potatoes. Mixing until all the potatoes have broken up. Cook on medium-low heat for 10-15 minutes or until potatoes are smooth. Taste the soup and add salt and black pepper if desired.
- Ladle into bowls and top with dried parsley, shredded cheddar cheese, crumbled bacon, and cracked black pepper. Enjoy!

- In a small saucepan, saute the garlic in butter over medium low heat. Be careful not to burn the burn the garlic!
- Add milk, salt, pepper and instant potato flakes.
- Heat to almost boiling, stirring constantly, otherwise the soup might be too thin. If you would like to add some leftover cooked potatoes, simply chop them up and throw them inches.
- Remove from heat.
- Garnish with shredded cheese.

- 1. In large pot, melt butter. Add leeks and saute until tender. (If using garlic add after leeks are tender and cook just until fragrant)
- 2. Add broth, milk and potato flakes. Stir until desired thickness. (you can always add more broth or milk to make it thin back out)
- 3. Add seasonings (if no added earlier- like garlic) and serve.
EASY LEFTOVER MASHED POTATO SOUP
This recipe is so tasty and easy, you'll be making extra mashed potatoes just for the soup! If you don't have mashed potatoes, just dice up a potato into 1/4' cubes and cook for about 15 minutes.

- Melt butter over medium-low heat in a pot large enough to hold the soup.
- Add the minced onions and saute for a 3-4 minutes until the onions are soft and translucent.
- Add the remaining ingredients and simmer for about 10 minutes stirring occasionally.
- The soup will keep for a day or two in the fridge.
LEFTOVER MASHED POTATO SOUP
One Thanksgiving, I asked my son-in-law, who was visiting with our daughter and her family, to make the mashed potatoes. I neglected to say how much, and he ending up paring and cooking an entire 10-pound bag of Idaho russets. After they left, we had about six cups of leftover mashed potatoes I like potato soup, so I thought maybe I could turn the leftover mashed potatoes into soup.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly thoroughly cooked but not crisp, about 8 minutes. Drain bacon slices on paper towels. Cut strips in half lengthwise, then chop into small pieces.
- Leave 1 tablespoon bacon drippings in the skillet and reserve another tablespoon separately.
- Saute onion in the bacon drippings over medium heat just until pieces start to turn brown, 5 to 7 minutes.
- Meanwhile, combine leftover mashed potatoes, chicken broth, and half-and-half in a 6-quart pot over medium-high heat; whisk until smooth. Mix in reserved bacon drippings plus corn, garlic and herb seasoning blend, green hot pepper sauce, paprika, Worcestershire sauce, pepper, and red hot pepper sauce. Add sauteed onion and chopped bacon; bring to a boil. Reduce heat and simmer for 30 minutes.

UNBELIEVABLY EASY POTATO SOUP
Don't let the sparse ingredient list fool you. This is a recipe that's so easy to make yet so delicious that everyone inhales it. My mother was raised on this soup and she served it often to us. My grown daughters now demand it when they are home. To this day, entering the house on a cold day and smelling this soup is the most comforting, delicious aroma imaginable. It's also non-fat if you use skim milk. (But I like half-and-half, myself!)

Steps:
- Peel and cube potatoes.
- Put in a saucepan along with the onions and celery.
- Add water, but don't quite cover the vegetables.
- Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.
- Using a potato masher, coarsely crush the potatoes, but don't mash them--you want chunks left.
- Add enough milk or cream to thin to desired thickness and add salt& pepper to taste.
- (It will take a lot of salt!).

This recipe came from a friend of mine that lives in the back country of Tennessee. It tastes so much like Bennigans Potato Soup but soooo easy to make!

- Cut potatoes into small pieces, add onion and boil in water just covering potatoes, about 20 minutes or until done. DO NOT DRAIN.
- Mix 1 packet of original country gravy in small amount of water until lumps are gone.
- Add to potatoes, slowly and heat until thickened (about 5 mins or so). If soup still looks watery, add another packet of country gravy.
- Some people have used 1/2 cup spud flakes to make it thicker also but I haven't needed it.
- Serve hot, topped with bacon bits and shredded cheese.
