Sirloin Steak and Potato Bites are an easy one-pan dinner. It's full of delicious flavor and comes together quickly- the perfect option for meat-and-potatoes on a weeknight.

Steps:
- In a large saute pan, melt 1 Tablespoon butter and olive oil over medium high heat.
- In a small bowl combine, salt, pepper, onion powder and garlic powder. Set aside.
- Once oil is shimmering, add potatoes to the pan in a single layer and sprinkle them with 1/2 the seasoning mixture. Cook for around 4-5 minutes.
- While potatoes cook, toss steak bites in Montreal Steak Seasoning.
- Turn the potatoes and sprinkle with remaining seasoning. Cook for 4-5 more minutes. Remove from pan to a bowl and cover with foil. Set aside.
- Melt 1 Tablespoon butter and add steak bites in a single layer. Cook for 2-3 minutes for medium rare (or a little long if you'd like it more well done). Turn frequently to brown all sides- this goes fast!
- During the last minute of cooking add potatoes back into the pan.
- Rest for 2 minutes and serve immediately with a sprinkle of parsley for garnish.

- Pat dry the steak cubes. Melt the 2 Tablespoons of butter a large skillet over high heat. Add the steak cubes and lay in a single layer. Sear all sides on high heat until a crust forms around the steak cubes, usually about 3-5 minutes depending on size of the steak & how hot the skillet is.
- Add the garlic, optional Worcestershire sauce, salt and pepper. Continue to cook steak bites to your preferred doneness, usually another minute or two.
- Add some chopped parsley, optional chili flakes, and more salt and/or pepper if desired. Optional - finish with a tablespoon or so more of butter melted on top of the steak bites. Serve hot.

- Cut the sirloin steak into equal, bite-sized pieces.
- Marinate the steak bites with smoked paprika, salt and black pepper. Set aside.
- Heat up a skillet, cast-iron preferred on high heat. Add the butter. As soon as it melts, add garlic cloves and stir a few times. Add the steak bites. Stir and cook continuously, flip, turn and toss around with the garlic. Add the Italian seasoning and homemade dry rub, stir to combine well.

- If your sirloin needs trimmed, remove the bone and cut off all of the white/gristle. Cut steak in to 1 inch cubes and season with salt and pepper.
- In a cast iron (preferred, but can use regular skillet too -- see notes in post), melt butter over medium-high heat until butter starts to turn brown.
- As soon as butter turns brown, place sirloin in the skillet. The skillet/butter should be hot enough that it sizzles when the meat is added. This is GOOD! The steak is getting it's "sear" that is so flavorful and MAKES this recipe so good!
- After about 30-60 seconds, check to see if underside of at least one piece is brown (with sear). If it is, flip over all of the pieces so the other side can cook and get the "sear".
- Cook for another 30-seconds (or until "sear" shows) and quickly remove from skillet in to serving dish.
- Let the steak rest for a minute, sprinkle on additional kosher salt, if desired, to allow the meat to finish cooking and soak in that flavor. Serve immediately!

Today I'll show you how to make my gourmet Steak Bites, which are actually about as UN-gourmet as it gets.

- Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

- Remove the steaks from the fridge about 30 mins before you plan to cook, so they're closer to room temperature. Pat the steaks dry with kitchen paper, and season with salt and pepper. Take a heavy-based frying pan that will comfortably fit both steaks, add the oil and heat over a high flame.
- When the oil is shimmering, turn the heat down to medium-high and add the butter. Once it's sizzling, carefully lay the steaks in the pan, tucking the garlic and herbs in at the sides.
- With a pair of tongs, sear and turn the steaks every 30 secs to 1 min so they get a nice brown crust. As a rough guide, each steak will take 3 mins in total for rare, 4-5 mins in total for medium and 7-8 mins for well done. - Melt 2 tbsp butter in a pan.
- Add onion and green pepper and cook for several minutes, stirring often.
- Add mushrooms, cook until almost tender, then add the garlic.

- Preheat the Air Fryer to 390° (or 400 if yours will go to that.)
- Cut the meat into 3/4" cubes, and toss the meat with 1 tablespoon of olive oil then sprinkle the seasoning salt over the mean. Set aside.
- Place the butter and grated garlic in a microwave-safe dish.
- Bring a pot of water to boil, and boil the potatoes for 5- 7 minutes to blanch the potatoes so they are just partially cooked.
- Drain the water away and toss with the remaining tablespoon of olive oil.
- Spray the bottom of the air fryer just before you are ready to add in the steak and potatoes with spray oil to prevent the meat from sticking.
- Add the steak first, then place the potatoes on top. Cook for 10 minutes, shaking at 5 minutes. If you want your meat more rare remove the meat, and let it rest while the potatoes continue to cook for 10 minutes.
- If you want your beef to finish more towards medium you will leave the meat in for about 14 minutes.
- The best way to get the meat to the temperature you desire is to use a thermometer to test it.
- Once done pull the meat and potatoes out and let the meat rest for 5 minutes. While the meat is resting place the butter/garlic dish in the microwave for 30 seconds to melt it.
- Once the meat has fully rested, plate up and drizzle a little butter over the top. Sprinkle fresh parsley over the top and serve.
