The best buffalo wings are a perfect mix of crispy, tender, and saucy, and this recipe does it all. After coating the wings in cornstarch, you cover them in a spicy, flavorful batter before quickly frying them for 8-10 minutes. All that's left is mixing them in a bowl with your favorite buffalo sauce and plating them with all the fixings -celery sticks, ranch, blue cheese dip. It doesn't really matter, because these juicy, crunchy wings will be the true game night stars no matter what!

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
- Transfer the chicken to a clean bowl and drizzle with with the buffalo sauce, tossing to coat. Transfer to a serving plate. Serve with either ranch or blue cheese dressing and celery sticks.

- Preheat your oven to 425 F degrees. Line a baking sheet with parchment paper.
- Wash and pat dry the chicken wings and place them in a large bowl. Season them with salt and pepper and toss well.
- Arrange the wings in a single layer on the prepared baking pan. Bake for 20 minutes then brush them generously with Litehouse Chunky Blue Cheese Dressing. It's not necessary to brush them on both sides, also it's not necessary to turn the wings over, they will be crispy on both sides.
- Place the wings in the oven for another 20 minutes or until they are dark golden brown, you'll notice the skin will be very crispy.
- Transfer the wings to a large bowl and pour the buffalo sauce over them, then toss well. Make sure you do this while they are still warm.
- While the wings are in the oven you can start preparing the dip by dumping all the dip ingredients together into a medium size bowl and stirring everything together.
- Transfer the dip to a smaller baking dish (make sure it's oven safe) and bake (in the preheated oven @ 425F) for 10 minutes or until the cheese is bubbly.
- Serve the wings with dip, alongside veggies, such as carrots or celery sticks and tortilla chips.

- Preheat the oven to 350 degrees F.
- Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise and buttermilk with the blue cheese, minced garlic, Worcestershire, the 1 tablespoon vinegar, hot sauce, garlic powder and a generous pinch of salt. Taste for seasoning. Add more vinegar if it needs additional acidity. Add more salt, if necessary. Add a splash of water, if necessary, to loosen the dressing or if the flavors are too intense. Set aside.
- Make the Buffalo sauce: Melt the butter with the garlic in a medium saucepan over medium heat. Whisk in the hot sauce. Keep warm.
- Prepare the wings: Pour the oil into a deep, heavy-bottomed pot. Heat the oil to 350 degrees F over medium heat. Prepare 2 rimmed baking sheets, one lined with a wire rack. In a large bowl, combine the flour and cornstarch. Separate the larger wings from the smaller ones. Season all of them with salt and toss in the flour mix. Shake off the excess.
- Fry the wings: Lower half of the larger wings into the oil and gently "swirl" the oil with a slotted spoon as they fry. This swirling will assure the wings fry more evenly on all sides. When they are light to medium brown, 5 to 7 minutes, remove them with the slotted spoon and lay them out on the wire rack. Season with salt. Cook the rest of the wings in batches, keeping the fried wings warm on the second baking sheet in the oven until all are cooked. Leave the wings in the oven for at least 10 minutes to assure all are cooked through.
- Toss the wings in a large bowl with all of the Buffalo sauce. Serve on a large platter with the blue cheese dressing and vegetables on the side.

- Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
- Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
- Mix the flour and paprika in a shallow dish. Dredge the wings in the flour mixture to coat, tapping off the excess. Fry the wings in batches, turning as needed, until cooked through and deep golden brown, about 15 minutes. (Return the oil to 375 degrees F between batches.) Remove with tongs and transfer to the rack to drain.
- Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes. Reserve one-quarter of the sauce for serving. Add the cooked wings to the pot and toss with the remaining sauce. Serve with the blue cheese dip and reserved sauce.

This is MY recipe and method for preparing hot wings for a party! Prep and clean up is a breeze! I always get RAVE reviews! Especially from the clean up crew! lol I have changed this recipe to include instructions on fresh OR frozen wings. Please let me know what you think. Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high. Oiled grill racks and seared each side of the chicken, then cooked over low to perfectly done and brown, crispy perfection. Removed from grill and tossed in sauce! Again, no messy pan to clean! :)

- IF USING FROZEN WINGS: I buy IQF - individually quick frozen- chicken wings that come in a bag and have already been separated into two sections and tips removed. If using FROZEN wings DO NOT THAW just rinse chicken in a large strainer to remove any ice crystals.
- IF USING FRESH/THAWED NOT FROZEN WINGS: Rinse chicken wings and follow directions starting at #3) BUT you may need to reduce your cooking time. I have not done them this way so I dont know how long they will take. Please watch them so they dont burn and do let me know how long they take to cook. Thanks!
- Pat wings dry with some paper towels. They do not have to be perfectly dry-just get most of the water off.
- Place wings in a large disposable foil roasting pan that has been sprayed or oiled well. I also take some foil and very loosely crumple it into balls and fill the pan so the wings can sit on the top of those and everything can drain off.
- Season wings with cajun seasoning and garlic powder. Toss to coat.
- Bake at 375°F until browned -about 30-40 minutes, using tongs flip each wing piece so that the browned side is down. Bake another 30 minutes or until chicken is browned and crispy all over. If you prefer them nice and crispy make sure to use a pan with a rack so that any liquid and grease can drain off.
- Sauce: In microwave safe bowl, combine hot sauce, butter, vinegar and more garlic powder if desired.
- Heat for about 2 minutes of until butter is melted and sauce is hot.
- To Serve: Depending on the formailty of your party- lol- if you are having hot wings it isnt too formal is it?- you can serve directly from the foil pan OR place wings on a platter.
- I like my wings to stay crispy after they are drenched in the sauce SO I serve them with the sauce on the side and allow guests to place the wings in a bowl and add sauce as desired. Some have them swimming and others- like me- dip each wing just before it is eaten. The crispiest!

- Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
- Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
- Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side

BUFFALO WINGS WITH DAIRY FREE BLUE CHEESE DRESSING
I gave up dairy years ago but with so many food substitutions I haven't had to go without. The vegan cheese substitutes are very tasty and this one is no exception. Remember to disjoint the chicken wings and discard the little tips and save for soup stock. I got the original recipe from Cooks.com. Note: I didn't include the over night times in the recipe.

- FOR THE MARINADE:.
- Mix everything but the chicken wings together in a bowl.
- Put the cut up chicken wings in a large plastic container with a tight fitting lid and pour the marinade on top.
- Over the next 24 hours turn the plastic container upside down then right sight up several times to ensure the marinade gets into all the wings. Leave in the fridge over night.
- When it comes time to grill, oil the grill and heat to high, then grill for about 25-30 minutes until the juices run clear form the wings. Keep an eye on the wings, don't want to burn them!
- FOR THE BLUE CHEESE DRESSING:.
- Mix the sour cream, Vegenaise, garlic, Worcestershire, salt, pepper and a little soy milk together in a bowl. Crumble up the blue cheese and put into the mixture. Give it a good stir. Add some more milk if you think it's too thick. Refrigerate over night.
- Serve along side the Buffalo Chicken Wings with celery if you like.

- Wash and clean the chicken wings; trim off excess fat, and unwanted parts. Drizzle the bottom of a large pan with olive oil, then arrange the wings in the pan.
