Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
- Spread the oats and coconut evenly across a baking sheet.
- Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
- Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
- Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

- Preheat the oven to 350 degrees. Line a 9-inch square baking dish with parchment or foil and lightly spray with cooking spray.
- Place the oats and nuts on a rimmed baking sheet and bake for 8-10 minutes until lightly toasted.
- While the oats are toasting, add the honey, butter, and brown sugar to a small saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring constantly. Let the mixture bubble, while stirring, for 1 minute and then remove from the heat.
- Place the nuts and oats in a large bowl.
- Stir in the vanilla and salt to the butter mixture. Pour this mixture over the oat and nut mixture and stir to combine. Add any extra ingredients (except for chocolate) and stir to combine. Make sure none of the oats are dry.
- If you are adding chocolate, wait about 15 minutes for the mixture to cool a bit before adding the chocolate and then stirring to combine.
- Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press the mixture into the pan. Press it in very firmly, this is what makes the bars stick together.
- Chill the granola bars for at least 2 hours. Lift the bars from the pan using the edges of the foil or parchment and place them on a cutting board. Cut into desired shape/sizes and serve.
- Store in an air-tight container in the fridge for up to 10 days. If you are stacking the granola bars place a piece of parchment between the layers to help prevent sticking.

NO BAKE GRANOLA BARS
Great quick and easy granola bar recipe that kids can make. Perfect to throw in lunches or in your purse for travel. You can also add 1/4 cup wheat germ without changing the consistency. Change up the dried fruit, nuts, and chocolate for different flavors. I generally keep the bars in the refrigerator until I am ready to eat them, but these keep well to take to work or school.

SUPERFOOD GRANOLA BARS

- For the base: Preheat the oven to 350 degrees F.
- Toss the oats with the butter on a rimmed baking sheet and spread in an even layer. Bake until toasted, 18 to 20 minutes. Let cool completely, then transfer to a large bowl. Stir in the almonds, pepitas and walnuts.
- For the bars: Line a 9-by-13-inch baking pan with foil, leaving an overhang. Coat the foil with cooking spray.
- Combine the sugar, butter, honey, vanilla and salt in a medium saucepan. Bring to a boil over medium heat, stirring occasionally; the mixture will bubble and foam. Boil for 30 seconds, then pour over the oat mixture and stir. Let cool slightly, then stir in the blueberries, goji berries, quinoa and chia seeds. Pour the mixture into the prepared pan and press firmly with a rubber spatula to spread in an even layer.
- Let the bars stand at room temperature until completely cool and firm enough to slice, 1 to 3 hours. Lift out of the pan using the foil overhang and cut into 20 bars. Store in an airtight container at room temperature for up to 5 days.

- Set oven to 350 degrees.
- Grease BOTTOM ONLY of a 13 x 9-in baking pan.

(SUPER HEALTHY) CHEWY GRANOLA BARS
This is a base recipe that is full of nutrient rich ingredients but yet is not overly sweet. The result is a chewy, almost cake-like granola bar though not at all similar to any that you would find in the supermarket. This recipe is pretty flexible so don't hesitate to modify to suit your tastes. For a vegan version, replace the honey with maple syrup. And, try some of the suggested additions. (Updated March 2008)

- Preheat oven to 350°F.
- Toast oats for 5 minutes in a dry skillet over medium heat. Let cool.
- In a large bowl, combine dry ingredients (including oats) and whisk together until well combined.
- In a separate bowl, whisk together wet ingredients until well blended.
- Add wet mixture to dry ingredients and blend gently until well moistened. Add any of the suggested additions now (see Step 8). Mixture should be moist but not too wet. If it seems too dry and crumbly, add a little more applesauce (by the spoonful).
- Line a 9in x 13in pan with parchment paper and press mixture into pan.
- Bake at 350°F for 30 minutes. Cut into bars while warm, but let cool completely before removing from pan.
- Suggested additions (add up to 2 cups of any of the following): chocolate chips, raisins (soaked in hot water for 10 minutes then drained), unsweetened shredded coconut, sunflower seeds (unsalted), pumpkin seeds (unsalted), dried fruit (like chopped apricots, cranberries), chopped toasted nuts.

- Place a medium saucepan over medium heat and add honey, dark brown sugar, canola oil, vanilla extract, and salt. Just stir that until the sugar has completely dissolved.
- Add oat mixture, and chopped dried fruit mix.
- When the mixture is completely mixed and no more liquid seems apparent, move that into a well-oiled 9 x 9 baking dish.
