2 tablespoons olive oil
1 onion, chopped
1 ½ (14 ounce) cans chicken broth
2 (15.5 ounce) cans great Northern beans
1 (4 ounce) can chopped green chile peppers
1 roasted chicken, bones and skin removed, meat torn into bite-size pieces
3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons cayenne pepper
1 (8 ounce) container sour cream
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Heat olive oil in a large saucepan over medium heat. Stir in onions, and cook until softened and translucent, about 3 minutes. Pour in chicken broth, great Northern beans, chopped chiles, and torn chicken. Season with cumin, chili powder, and cayenne pepper. Increase heat to medium-high to bring to a boil, then reduce heat to medium-low, and simmer for 10 minutes.
  • Stir in sour cream and simmer for 5 minutes. To serve, ladle into bowls and sprinkle with Monterey Jack cheese.

1 (48 ounce) jar great northern beans
2 (9 3/4 ounce) cans white meat chicken
1 (14 ounce) can chicken stock
1 cup salsa
1/2 cup carrot (diced)
1/2 cup celery (diced)
1 (1 1/4 ounce) package taco seasoning
1 tablespoon masa harina flour (can use corn starch)
1/2 teaspoon salt (to taste)
1 cup colby-monterey jack cheese (shredded)

Steps:

  • Drain and rinse the beans. Drain the chicken.
  • Dump the first seven ingredients into a crockpot. Set to High and cook for two hours, stirring occasionally.
  • Add masa and stir - turn off crock and let set for five minutes.
  • Stir again and salt to taste.
  • Stir in cheese.
  • I like to serve in bowls topped with fresh diced onion, crushed tortilla chips, jalapeños, and some hot sauce.

1 cup diced yellow onion
2 stalks celery, diced
4 cups diced chicken

3/4 pounds boneless, skinless chicken cut into cubes
1 small sweet onion, thinly sliced
1/2 pound small red potatoes cut into quarters, about 8 potatoes
Coarse salt
Cracked pepper
1 cup shredded carrots
1 garlic clove, minced
2 teaspoons sweet paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1 (15 ounce) can whole plum tomatoes
3/4 cups long grain rice
1 1/2 cups low sodium, fat free chicken broth
1 cup frozen peas

Steps:

  • Heat the oil in a non-stick paella pan, wok pan or 12-inch skillet. Add the chicken, and cook until golden brown on all sides, about 3 to 5 minutes. Remove from pan and set aside. Add the onions and potatoes and cook, stirring often, until onions have softened and are lightly golden, about 10 to 12 minutes. Season with salt and pepper. Add carrots, garlic, paprika, cumin, oregano, tomatoes, rice, broth and the cooked chicken. If it appears too dry, add more liquid. Bring to a boil and immediately reduce to a simmer. 1 yellow or orange bell pepper, chopped
Kosher salt and freshly ground pepper
1 medium sweet potato, peeled and grated on the large holes of a box grater
3 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons ground cumin
1 26-ounce box chopped or crushed tomatoes (about 3 cups)
1 16-ounce can chili beans in sauce
3 cups shredded rotisserie chicken
1/2 cup chopped fresh cilantro

Steps:

  • Heat the olive oil in a Dutch oven or wide pot over medium-high heat. Add the onion, bell pepper, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables soften, about 5 minutes. Stir in the sweet potato, garlic, chili powder and cumin and cook until combined, about 3 minutes.
  • Stir in the tomatoes, chili beans with their sauce and 2 cups water. Bring to a simmer and cook, stirring, until the chili thickens slightly, 10 to 15 minutes. ½ teaspoon pepper
1 egg, beaten
¾ cup flour
1 green pepper, sliced
1 red pepper, sliced
rice, to serve
3 cloves garlic cloves, crushed
1 red chilli, chopped
3 tablespoons soy sauce
2 tablespoons tomato puree
½ cup water

Steps:

  • Season the chicken with salt and pepper.
  • Cut the chicken into thin strips then coat in the egg wash and flour.
  • Shallow fry for a few minutes on each side, until golden brown.
  • Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
  • In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
  • Add back in the chicken and peppers and stir well in the sauce.
  • Serve with rice.
