DELICIOUS FLUFFY PANCAKES
These pancakes are melt in your mouth delicious! Serve with your favorite maple or fruit flavored syrup. Easy to double and freeze the left overs for quick weekday breakfasts.

Number Of Ingredients 7
Steps:
- Preheat griddle to medium heat.
- Mix together all dry ingredients.
- Add the rest of the ingredients.
- Stir until well mixed, but do not over mix as this will toughen the pancakes.
- The batter will be slightly lumpy.
- Spray non fat cooking spray on to preheated griddle.
- Pour 1/4 cup of batter onto griddle.
- Cook for 2 minutes on one side.
- Flip pancake over and cook for 1 more minute.
- Only flip pancake once for best results.
- Top with your favorite toppings and serve.

Steps:
- Stir milk and vinegar together in a bowl; set aside to 'sour' for about 5 minutes.
- Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Whisk egg and butter into sour milk. Pour flour mixture into milk mixture and whisk until batter is smooth. Add cinnamon and vanilla extract to batter; mix well.
- Heat a large skillet over medium heat and coat with cooking spray. Drop batter, 1/4 cup per pancake, onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

- Get your favorite griddle hot 400 deg.
- I use pam to coat griddle. Pour batter onto griddle like normal pancakes.
- Once cooked top them with sugar free maple syrup. mmmmm goood.
SUPER DELICIOUS BASIC PANCAKES
I got the recipe from my "Joy Of Cooking" Cookbook. They are so easy and are amazing. You can add fruit, cinnamon, chocolate chips, or whatever else you want to jazz them up. ENJOY!!! Cooking time is for each set of pancakes. You can freeze any leftover pancakes to re-heat later.

Steps:
- Prepare and preheat your griddle. I typically heat mine to 375 degrees.
- You can also use a skillet on the stove.
- Whisk the flour, sugar, baking powder and salt in a large bowl.
- In another bowl, whisk together the milk, melted butter, eggs and vanilla.
- Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined. Batter should be lumpy.
- Spoon 1/3 cup batter onto the griddle for each pancake, nudging the batter into rounds.
- Cook until the top of each pancake is speckled with bubbles and some of the bubbles have popped open.
- Once the bubbles start to pop, turn the pancakes over and cook until the underside is lightly browned.
- Serve immediately or keep warm in a 200 degree oven while you finish cooking the rest of the pancakes.

SUPER FLUFFY PANCAKES
My Mom taught me this recipe and she always complained the pancakes came out "too fluffy", REALLY is that possible!! By not mixing out all the clumps the pancakes "pop" up when you flip them and are SOOOO good topped with fresh berries and whipped cream!

- Mix all of the dry ingredients in large bowl. Create a crater in the middle and then add milk, slightly beaten egg, vanilla and melted margarine.
- Mix ONLY ENOUGH TO MOISTEN, you want there to still be clumps.
- In a greased or cooking sprayed pan, over medium heat pour about 1/2 c batter.
- Let cook until bubbles break on surface or when you gently lift and edge it is nicely browned. FLIP and let cook for a bit longer checking to be sure your not burning.
- Cool pan slightly between each one, I carefully wave the pan (away from the stove and any people) a couple times to cool it quicker ;) regrease and cook another.
SUPER DUPER DELICIOUS CINIMINI PANCAKES
I like to experiment with my food so I got a little creative with this one. Made it in my culinary arts class.

Steps:
- Use the required amount of mix and eggs as shown on Bisquick box. Add all ingredients in a bowl and mix (adding milk slowly until batter is gooey).
- Spread desired amount of butter on bottom of pan and let melt.
- Pour a little bit of batter at a time and wait till the air bubbles rise to the top of the pancake and then flip.
- Repeat till both sides are golden brown with little blackish cinnamon bits in them. Repeat till all batter is gone.
- Enjoy.
