CRISPY PAN FRIED FISH
Recipe video above. 3 key tips to ensure your pan fried fish comes out beautifully golden and crispy every time: pat the fish dry, press flour on well but shake excess off well, and heat the pan first before adding the oil or use a heavy duty non stick pan. With a good fish, well seasoned and crispy skin, I don't need a sauce....but I've added a couple in the notes just in case! :)

Steps:
- Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.
- Season the fish well on both sides with salt and pepper (key!).
- Mix the flour and paprika on a plate.
- Coat fish on both sides with flour, pressing down firmly so it adheres, but shake well to remove excess. (Note 2)
- Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke. Add oil and swirl to coat the pan - it will heat within seconds.
- Add fish - it should sizzle straight away. Shake the pan lightly to move the fish. Cook for 2 minutes until golden and crisp, pressing down gently, then flip. Cook the other side for 2 minutes until crisp then remove.
- If it's browning too quickly, just remove pan from the stove briefly. If it's stuck, don't move - it will release naturally once golden.
- Serve fish immediately with lemon wedges and garnished with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

Steps:
- Preheat the oil in a large pot to 300 degrees F. Preheat the oven to 350 degrees F. Line a tray with paper towels.
- Cut the potatoes into large wedges, about 10 per potato. Fry the potatoes for around 4 minutes. (They will be soggy.) Remove them to the lined tray and pat them dry. Turn the oil to 375 degrees F.
- Meanwhile, sprinkle the fish all over with salt. Combine 1/2 cup flour and 1 teaspoon turmeric on a plate, then season with salt. Dredge the fish in the flour mixture and let sit on the plate. Mix the baking soda with the remaining 2 cups flour and 2 teaspoons turmeric in a second bowl. Season well with salt. Slowly whisk in the beer until the batter has a pancake-batter consistency (you might not use it all). Fold in the egg whites. Adjust with more or less flour or beer as needed.
- Line a sheet tray with a wire rack. Fry the potatoes at 375 degrees F until crispy, about 4 minutes. Transfer to the rack and season with salt immediately. Hold the chips in the oven while you fry the fish.
- Lower the fry oil to 250 degrees F and line a plate with paper towels. Pat the excess flour from the fish, then coat in the batter. Gently lower the fish into the oil and fry until golden brown and the fish is cooked through, 3 to 4 minutes. Transfer the fish to the lined plate and season with salt. Serve with Tartar Sauce, chips and lemon wedges.
- Combine the mayonnaise, pickles, capers, peppers, lemon zest, lemon juice and dill in a medium bowl. Season with salt and pepper and mix until combined.

- Magic Crispy Chicken. For the satisfaction of fried chicken without the fuss, coat boneless breasts in toasted panko, then bake them. They’re crunchier than any baked chicken you’ve ever had—and they use fewer than 10 ingredients.
- Croissant Dough. You don't need to go to pastry school to make bakery-worthy crispy croissants. Once you've practiced this dough a few times, you can use it to make pains au chocolat or Parma braids, too.
- Crispy Curry-Roasted Chickpeas. These spicy chickpeas are a crowd-pleasing snack to serve with cocktails—but they're so easy to make, it's not a bad idea to keep some on hand at all times.
- Crispy Eggplant Fritters With Smoked Mozzarella. For this eggplant Parm-inspired appetizer (or anytime snack), seasoned chopped eggplant envelops balls of cheese before taking a dip in hot oil.
- Crispy Chicken Cutlets with Cherry Tomato Panzanella. Leaving the skin on chicken cutlets allows them to develop fantastic savory crunch without the need for dredging through flour.
- Crispy-Skinned Salmon with Whole Lemon–Sesame Sauce. Adding an entire lemon—skin, pith, and flesh—to the sauce provides brightness and texture. Any bitterness from the pith will be offset by the sesame oil and honey.
- Crispy Chicken Over Turmeric-Lemon Cabbage and Peas. For an easy, one-pan weeknight dinner, crispy chicken goes on top of a pile of silky cabbage to finish in the oven, then gets topped with sweet peas and fresh herbs.
- Crispy Fish Sandwich. One of our favorite crispy recipes, this classic fish sandwich envelops fried white flounder fillets in two thick slices of white bread, piled high with iceberg lettuce, pickles, onions, and of course, potato chips.
- Cocoa Brioche Morning Buns. These chocolaty pastries have the attributes of a gloriously flaky croissant on the top, a sticky bun on the bottom, and a rich chocolate-studded brioche in the middle.
- Crispy Shredded Duck and Noodle Salad. You'll get a double dose of crispy with this light but satisfying salad. The crackly skin of the confit duck legs, with all their fatty richness, contrasts the fresh, delicate crispy Boston lettuce leaves.
