2 slices bread ( rye , whole grain, or sourdough )
2 tablespoons peanut butter (smooth or crunchy)
1 tablespoon jelly (or jam, your choice of flavor)
1 tablespoon butter (or margarine, softened)

Steps:

  • Gather the ingredients.
  • Prepare peanut butter sandwich using desired jelly or jam . Make sure it isn't too runny because the sandwich will be heated and jam could leak out.
  • Heat a frying pan to melt 1 tablespoon of butter. Tilt pan so butter covers pan evenly. This is key to get a perfectly crispy crust on the bread.
  • Butter one side of sandwich. Place buttered-side down in the pan. If possible, place a steak weight or bacon press on sandwich so it cooks evenly. When one side is golden brown, butter other side. Turn sandwich over and place weight back on sandwich. The second side will cook faster because sandwich is already heated.

Release your inner child!! Or feed your actual child. This is a super sandwich for adults and kids alike, and makes a healthy breakfast, lunch, or snack. I modified this from a slightly more ridiculous recipe in Vegetarian Times. I use a George Foreman Grill, but if you don't have one you can just butter the outsides of the bread and make it in a frying pan.

2 slices whole wheat bread
1 tablespoon crunchy natural-style peanut butter (non-natural and smooth PB are probably OK too)
1/2 tablespoon honey
1 tablespoon raisins
1/2 crispy apple, sliced thin
1/2 teaspoon cinnamon sugar

Steps:

  • Mix the peanut butter and honey together, and spread on one slice of bread.
  • Sprinkle raisins over peanut butter, layer apple slices on top and sprinkle with cinnamon-sugar.
  • Toast in George Foreman grill, panini grill or frying pan until the bread is toasty and the peanut butter is a little gooey.

4 tablespoons natural-style chunky peanut butter
4 tablespoons strawberry jam
2 fresh ripe strawberries, hulled sliced
2 tablespoons granola cereal

Steps:

  • Lay the two slices on a clean work surface. To one of the slices, spread the peanut butter and to the other slice, spread the strawberry jam.
  • Sprinkle the granola over the peanut butter and layer the strawberry slices over the granola covered peanut butter.
  • Top with the strawberry jam covered piece of bread and enjoy.

2 slices 100% whole wheat bread (thick slices)
2 tablespoons natural-style peanut butter
1 tablespoon creamed honey
1 small banana, sliced

Steps:

  • Place bread under broiler to that one side toasts.
  • Spread peanut butter on the toasted side of one slice, and spread creamed honey on the toasted side of the other slice.
  • Place banana slices on the peanut butter slice.
  • Press together to make a sandwich (the untoasted sides should be out).
  • Toast in a toaster oven or on a hot skillet until the out-facing sides are nice and crispy.

1 tablespoon peanut butter
2 slices cinnamon raisin bread
1 piece dark chocolate (I like to use Dove or Ghiradelli)
1 small banana, thinly sliced
1 tablespoon preserves, I prefer raspberry

Steps:

  • Toast the two slices of bread, right after it pops out of the toaster, top one side of toast with the grated dark chocolate. On the other toast add peanut butter. Layer banana slices on top of peanut butter, then add jam preserves on top of bananas. Put both slices together and enjoy the best peanut butter sandwich ever! You can add more or less of the ingredients, according to taste.
  • Great for Breakfast or whenever you want a great snack. This is my son's favorite sandwich.

1 teaspoon brown sugar
1 teaspoon cinnamon
3 tablespoons peanut butter
1/4 teaspoon vanilla
2 slices whole wheat bread
1 apple
2 tablespoons butter
1/8 cup water

Steps:

  • Step 1: Cut the thin slices of cored apple.
  • Step 2: In a saucepan, add 1 tbsp butter, water, sugar and cinnamon, and stir well.
  • Step 3: Add apple slices and toss well, so that the liquid mixture is coated nicely.
  • Step 4: Heat the pan covered until apple slices become soft and crispy.
  • Step 5: Add vanilla, then again toss well. Keep apple slices aside.
  • Step 6: Spread peanut butter over the two pieces of bread and place apple slices on one buttery side of the bread.

1 1/2 c peanut butter (creamy or smooth)
1 c butter flavored crisco
2 1/2 c brown sugar, firmly packed
6 Tbsp milk
2 Tbsp real vanilla extract (not imitation)
2 large eggs
2 1/2 c all-purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt

Steps:

  • 1. Preheat oven to 375 degrees. Prepare sheets of foil for cookies to cool on.
  • 2. Combine peanut butter, shortening, sugar, milk and vanilla. Beat until well blended. Add egg and beat just until blended (do not over beat, it makes cookies tough).
  • 3. Combine flour, salt and baking soda. Sift, or if you do not own a sifter, just whisk it really well, until you are sure it is well integrated.
  • 4. Add to creamed mixture at low speed. Mix just until well blended. Place round balls (about 2-2 1/2" in diameter for big cookies onto an un-geased cookie sheet, about 2 inches apart. Try to make the balls uniform in size. Flatten with the tines of a fork, going vertical and crossing over horizontally (trademark of peanut butter cookies). Flatten each cookie to about 3/8" thick. Bake for 10-13 minutes until barely set and edges just almost brown. Remove from oven and allow to rest on sheets for about 2 minutes. Remove to foil sheets to continue cooling (cookies will continue to cook a little after being removed from the oven, on the cookie sheets and on the foil.
  • 5. Frosting Filling: 1/2 cup butter, a little softened, but not a lot 2 3/4 cups powdered sugar 3/4 cup cocoa powder (I use Hershey's) 1/2 cup evaporated milk (not condensed) pinch of salt
  • 6. For Frosting: Beat butter until smooth. Whisk together thoroughly the baking cocoa, and salt with the powdered sugar. Add the cocoa mixture and beat, adding some milk alternately. End with dry mixture. Add a very little more milk if desired to preferred consistency. A little bit thick is best for sandwich cookies, to prevent dripping and oozing.
  • 7. Make sandwich cookies, by frosting one cookie generously, but about 1/4 an inch from the edge all around. Place a similar sized cookie on top and press gently. Voila!
