Steps:

  • Heat a skillet over medium heat. Cook sausages in hot skillet, turning regularly, until no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Transfer to a cutting board and slice.
  • Heat olive oil in a separate skillet over medium heat. Cook and stir onion, bell pepper, and garlic in hot oil until tender, about 5 minutes; season with red pepper flakes, salt, and pepper and cook 1 minute more. Add sliced sausage, crushed tomatoes, and sliced zucchini; bring to a boil, reduce heat to low, and continue cooking until the zucchini is tender, about 10 minutes.

This was so good last night, I don't want to forget what I did! This was a great side dish for cheese enchiladas. Adjust the seasonings according to your tastes and the age of your kids. I used the lower end for my 6yo (who ate it without protest) and 20mo (who was not so fond of it). If I were to cook this for just the adults at my house, I would use the upper end. I used really small zucchini for this, less than an inch in diameter and about 5-6 inches long.

1 tablespoon olive oil
1/4 onion, thinly sliced
4 small zucchini
1 -3 teaspoon garlic powder
1 -3 teaspoon chili powder
1 teaspoon salt

Steps:

  • Place oil in a large, heavy non-stick skillet and begin heating over medium high heat.
  • Meanwhile, slice onion and cut zucchini into 1/4" rounds.
  • Once oil is nice and hot, saute onion until it is starting to carmelize (about 2 minutes).
  • Add zucchini and seasonings. Turn heat down slightly (to medium), and cook for about 5 minutes, stirring occasionally.
  • Zucchini should be yellow with some brown spots, slightly transparent looking and soft without being mushy. Onions should be thoroughly carmelized and yummy. :).

4 cups fresh tomatoes, peeled, cut in wedges (save juice) or 2 (28 ounce) cans tomatoes
1 1/2 cups tomato juice
1 1/2 lbs zucchini, cut into 1/4 inch slices
2 teaspoons salt
1 1/2 teaspoons italian seasoning
1 teaspoon sugar
1/4 teaspoon garlic salt
2 green peppers, cut into 1 inch pieces
parmesan cheese, grated (for garnish) or romano cheese (for garnish)

Steps:

  • Brown sausage in large, deep saucepan.
  • Add sliced celery and cook for 15 minute.
  • Drain off fat. Add tomatoes, tomato juice, zucchini and seasonings.
  • Simmer, covered for 20 minute.
  • Add green peppers, summer an additional 15 minute.
  • Garnish with cheese. Serve with French bread.
  • Note: For more liquid, add tomato juice (And I would use garlic cloves instead of garlic salt, if you like garlic).

1/4 cup vegetable oil
2 cups shredded zucchini
1 onion, chopped
1/2 lb bulk sausage
2 cups swiss cheese, grated
1 cup milk
1/2 cup half-and-half
2 tablespoons parmesan cheese, grated
2 eggs, slightly beaten
1 cup flour
1/2 teaspoon white pepper
1 tablespoon butter, melted

Steps:

  • Heat oil in a large frying pan over medium heat and sauté the zucchini and onion for 5 minutes or until soft. Put the zucchini and onion in a large bowl.
  • Add the sausage to the pan. Break up the sausage and cook over medium heat until no longer pink. Drain the sausage and add to the bowl. Mix zucchini, onion and sausage. Then add the remaining ingredients.
  • Mix well and pour into a 9x9 inch baking pan. Bake for 40 minutes at 400 degrees F. Cut into squares. Serve warm or cold.

1 onion, finely chopped
salt and pepper (personnaly I would omit the salt because the sausages are salty enough for us)
1 1/2 cups rice
4 cups chicken broth
1/2 lb hot Italian sausage, casings discarded
2 zucchini, cut into small cubes
3/4 cup parmesan cheese, grated
1/3 cup flat leaf parsley, chopped
1/4 cup pine nuts, toasted

Steps:

  • In a medium saucepan, melt 2 tablespoon butter over medium heat. Add the onion and 1/4 teaspoon each salt and pepper and cook, stirring, until golden, about 5 minutes. Stir in the rice and 3 cups chicken broth and bring to a boil. Lower the heat, cover and cook until tender, about 20 minutes.
  • Meanwhile, in a large skillet, cook the sausage, breaking it up, over medium heat until no longer pink, about 7 minutes. Using a slotted spoon, transfer the sausage to a plate. Add the zucchini to the skillet and cook until tender, about 4 minutes.
