SUNNY'S STYLE HOMEMADE PIZZA...ON THE STONE
When I was going to school at ASU, I was manager of a pizza and pasta joint called Sunnys. Since then the ownership has changed and last time I was there the pizza was awful but in its hey day watch out... My mom makes great dough but mine lacks so I buy a doughball for a buck down the street it's your option. Also the recipe shows for pepperoni but go nuts. Just remember, if you are using fresh spinach put it on under the cheese or it will burn.

Steps:
- Rub handful of cornmeal on stone.
- Put stone in oven, heat to 450.
- Rub flour/cornmeal onto large surface to roll pie.
- Roll out dough using pin or can or whatever.
- Transfer to pizza peel letting dough hang over sides.
- For Sauce, mix all sauce items in blender.
- Refrigerate allowing to thicken.
- With wooden spoon apply sauce to cover dough.
- Add Cheese liberally, Add toppings.
- Pull dough edges over to make crust
- Sauce should be inside crust.
- Turn heat down to 425 and transfer to stone.
- Cook 13 minutes pushing down crust twice
- Crust should be firm to touch.
- Remove and let stand 5 minutes.
- Cut into slices.

SUNNY'S PIEROGI PIZZA

- In a slow cooker on low, add the onions, 2 tablespoons oil and a pinch of salt. Cook, stirring every hour or so, until deep golden brown, 8 to 10 hours. Cook uncovered for the last hour.
- Preheat the oven to 400 degrees F.
- Roll the dough out to fit an 11-by-17-inch baking sheet or a large round pizza pan. Drizzle the remaining 2 tablespoons olive oil over the top and pierce the dough with a fork all over to minimize bubbles. Bake the dough, checking every few minutes to ensure it doesn't burn, until lightly golden in the center, about 15 minutes. Remove from the oven and set aside. (Leave the oven on.)
- In a medium bowl combine the Monterey Jack and Parmesan. Add half of the cheese mixture to the mashed potatoes.
- Top the dough in an even layer with the mashed potato mixture. Add the caramelized onions, bacon, chile flakes and the remaining cheese. Bake until the cheese is melted and the edges of the crust are golden, 8 to 10 minutes. Top with a drizzle of the yogurt and sprinkle with the chives.
SUNNY'S EASY AS 1-2-3 PIZZA

- Preheat the oven to 400 degrees F.
- For the dough: In a stand mixer with the paddle attachment, add the flour, yogurt and seasoning blend and mix until combined and tacky. Scrape off the dough from the paddle and replace the paddle with the kneading (dough hook) attachment. Sprinkle in a bit more flour and knead on medium until a ball forms. On a floured surface, roll out the dough to a big thin circle or divide the dough in half to make 2 pizzas.
- For the toppings: Place the pizza on a baking sheet or pizza stone. Leaving a 1-inch border around the edge of the dough, top the pizza evenly with the sauce and cheese, then the selected toppings. Bake until the edges are golden brown, 8 to 12 minutes.
SUNNY'S PIZZA BITES
I saw Sunny Anderson making these on the Food Network and just had to put these in my appetizer cookbook as I want to make these for Thanksgiving! for Special Equipment: You will need a 2 inch pastry cutter or 2 inch biscuit cutter to cut the rounds.

- To Roast the Tomatoes:.
- Preheat the oven to 350 degrees. Season the tomatoes with oregano, salt and pepper to taste. Drizzle with oil and arrange them on a cooling rack over a baking sheet. Roast until they are golden, 20 to 25 minutes.
- Raise the oven temp to 400 degrees when the tomatoes are roasted. Unfold 1 puff pasty sheet onto a clean cutting board. Prick the dough evenly, multiple times, with a fork. Using a 2 inch pastry cutter, cut out 12 circles and arrange them on a parchment lined baking sheet. Repeat with the second sheet of pastry. Prick the rounds another 3 times. Bake until they are nicely puffed and golden, about 8 minutes or so.
- To assemble:.
- Cut the puffs in half horizantaly. Spoon a generous teaspoon of marinara sauce into the bottom of half of the puffs and sprinkle with parmesan. Put a roasted tomato on top of each followed by the basil and a sprinkling of the moxxarella. Top with the other puff pastry halves and arrange them on a baking sheet.
- Bake for another 5 minutes, giving the cheese time to melt. Transfer the bites to a serving platter and serve warm.
