A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

One 8- to 10-pound fully-cooked bone-in ham
3/4 cup packed dark brown sugar
3/4 cup pure maple syrup
1/4 cup low-sodium soy sauce
Zest and juice of 1 navel orange
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon onion powder
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
  • Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
  • Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
  • Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
  • Let the ham cool for 15 minutes before thinly slicing.

Two 8-ounce cans refrigerated crescent roll dough
1/4 cup jalapeño jelly
6 ounces deli ham, sliced paper thin
3 ounces Gruyere cheese, shredded
3 ounces pepper jack cheese, shredded
2 jalapeños, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a large baking sheet or pizza pan with parchment paper or nonstick aluminum foil. Place a 4.5-inch diameter bowl upside down in the center of the baking dish and use it as a guide (it will be the center, empty area of your wreath). Arrange triangular sections of the crescent dough on the parchment in a circle around the bowl with the long points facing outward as the "rays" and the wide bases in the center with the edges overlapping. Brush the jalapeño jelly on the dough. Remove the bowl.
  • In a small bowl, mix the ham, Gruyere and pepper jack, then layer the mixture on the dough, creating a ring around the center of the circle. Pull the points of dough from the outer edge over the filling and tuck under the center rim of the dough circle. The filling will show and that's ok! Top with jalapeño slices all around.
  • Bake, rotating halfway through, until golden, 20 to 25 minutes. Allow to cool slightly before slicing to serve.

3/4 cup bourbon, divided
2 cups packed brown sugar
1 tablespoon ground mustard
1 tablespoon orange marmalade
1/8 teaspoon ground coriander

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Brush with 2 tablespoons bourbon. Bake, uncovered, at 325° for 2 hours. , In a small bowl, combine the brown sugar, mustard, marmalade, coriander and remaining bourbon; spoon over ham. Bake 30 minutes longer or until a thermometer reads 140°. Let stand for 15 minutes before slicing.

One 10-lb bone-in, fully cooked, spiral-sliced ham
1 cup brown sugar
¼ cup bourbon or other whiskey
2 Tbsp. apple cider vinegar
2 Tbsp. Dijon mustard
1 orange, zested and juiced
1 Tbsp. chopped fresh rosemary
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cinnamon
Freshly ground black pepper

Steps:

  • Remove ham from packaging and bring to room temperature for up to 2 hours before baking.
  • Preheat oven to 325ºF. Arrange a rack in the lower third of the oven and remove upper racks.
  • In a small pot over medium heat, whisk together brown sugar, bourbon, apple cider vinegar, Dijon mustard, orange zest and juice, rosemary, garlic powder, onion powder, cinnamon, and a few turns of the pepper mill. Bring to a low simmer and cook for 5-6 minutes, stirring frequently, until the sugar has dissolved. Remove from heat and set aside.
  • Place ham in a large roasting pan, face down. Brush half the glaze over the surface of the ham. Loosely cover ham with foil and bake for 1 hour and 30 minutes. During cooking, brush with remaining glaze mixture every 30 minutes. For the last 15 minutes of cooking, remove foil. Let stand up to 30 minutes before transferring to a serving platter.

  • Place the ham in a roasting pan, flat side down. Pour the apple juice over the ham and then cover the entire ham with foil. Cook at 300 degrees for 1 1/2 hours.
  • While the ham is in the oven, make the glaze by adding the ingredients to a small saucepan. Heat the glaze until the sugar is dissolved and then set aside to cool.
  • After the 1 1/2 of cooking, take the ham out of the oven and pour the glaze over the ham, using a brush if needed to make sure all the ham is coated. Return the ham to the oven, uncovered and bake for another 30 minutes.
  • Turn the heat up to 400 degrees. Remove the ham from the oven and baste with glaze and juices in bottom of pan. Cook the ham for another 15 minutes at 400 degrees to caramelize the glaze.
