SPICY EGG SANDWICH WITH SAUSAGE AND PICKLED PEPPERS
A sausage patty topped with feta, cilantro, sweet, piquant pickled peppers, and a sunny-side-up egg make for a hearty sandwich that's perfect for brunch, lunch, or dinner. You can find Peppadew peppers at olive bars at most large supermarkets, or check the condiment aisle, where they're sold jarred.

Steps:
- Using damp hands, form sausage into two 1/4"-thick patties.
- Heat a large cast-iron skillet over medium-high until hot. Cook patties until golden brown on bottom side, about 2 minutes. Turn and continue to cook until other side is browned and cooked through, 2-3 minutes more. Transfer to a plate. Wipe out skillet.
- Heat butter over medium in same skillet until melted. Cook eggs, undisturbed, until whites are set, edges are golden, and yolks are still runny, 4-5 minutes. Season with salt and red pepper flakes (if using). Remove pan from heat.
- Spread harissa on 2 muffin halves. Top with feta, patties, eggs, peppers, and cilantro. Spread mayonnaise on remaining muffin halves, then close up sandwiches.

MEDITERRANEAN ROASTED TRI-COLOR BELL PEPPER SALAD
(Sorry, I meant broiled.) Another recipe that demands quality ingredients. Please *do not* use green bell peppers in this recipe-they are too bitter tasting for this salad. This can also be served as an appetizer. Being typically Spanish, this is on the oily side. --fyi-- From Classic Spanish.

Steps:
- BROIL the bell pepper halves for about 10 minutes or until the skin is blistered and blackened.
- Place the bell peppers in a clean paper bag, seal bag and allow peppers to "sweat" for 10 minutes.
- In the meantime, heat up 2 tablespoons of the olive oil in a frying pan and sautè the onion.
- Fry for approximately 5-6 minutes until softened and translucent.
- Remove pan from heat and set aside. Important: *Reserve* olive oil in the pan.
- Next, take the bell peppers out of the paper bag and if cool enough to handle, peel the skins.
- Discard the skins and slice the peppers into thin strips.
- Place the bell peppers, the cooked onions and any remaining olive oil from the pan into a shallow salad bowl.
- Add the crushed garlic and pour on the remaining olive oil.
- Add a good squeeze of fresh lemon juice and season with salt and cracked black pepper to taste.
- Mix ingredients well, cover and marinate 2-3 hours. Stir the mixture once or twice.
- Finally, garnish the pepper salad with fresh chopped Italian parsley.
- Serve at room temperature and with crusty bread.
- Servings are estimated as a salad.

16 EASY & DIFFERENT EGG STYLES (HOW-TO GUIDE TO COOK EGGS)
From livesimply.me
- Sunny Side Up. This is one of the easiest methods for cooking eggs very quickly. One egg or multiple eggs are fried in butter or oil. You’ll never flip the egg with this cooking method, resulting in a visible “sunny” yolk.
- Over Easy Fried Egg. Fried eggs can be cooked over easy (with a runny yolk), over medium (a slightly runny yolk), or over hard (fully cooked yolk) and are flipped half way through cooking.
- Over Medium Fried Egg. A cracked egg is cooked in a skillet or frying pan over medium heat, in unsalted butter or oil. The egg is flipped once while cooking using a spatula until the egg whites are set and the yolk is slightly runny, like a custard or jam consistency.
- Over Hard Fried Egg. A cracked egg is cooked in a skillet or frying pan over medium heat, in unsalted butter or oil. The egg is flipped once while cooking using a spatula until the egg whites are set and the yolk is completely firm and cooked.
- Eggs in a Basket. There are many different names for this one dish (over 66), but the way this breakfast recipe is made remains the same: a fried egg is cooked inside a slice of buttery toast.
- Hard Scrambled Eggs. This is a popular and super easy way to cook eggs. 2 or more cracked eggs are whisked in a bowl before cooking, then cooked in butter or oil (like extra virgin olive oil or avocado oil) over medium heat.
- Soft Scrambled Eggs. 2 or more cracked eggs are whisked in a bowl before cooking, then cooked in a tablespoon of cooking fat (butter or oil) over low heat, until fluffy and in the shape of large “curds.”
- Hard Boiled Egg. The entire egg, still in the shell, is cooked in boiling water (over medium-high heat) until the egg white and yolk are completely firm and cooked.
- Soft Boiled Egg. The entire egg, still in the shell, is cooked in boiling water (over medium-high heat) until the egg white is completely cooked (firm) and the yolk is jammy and slightly runny.
- Deviled Eggs. Deviled eggs are a delicious way to use hard boiled eggs. After cooking hard boiled eggs (the egg white and yolk are firm), scoop the cooked egg yolks into a bowl.
