Steps:
- Preheat oven to 450 degrees.
- Drizzle potatoes with olive oil and season with basil, oregano and salt. Toss to coat.
- Place in baking dish and bake for 30 minutes. Toss every now and then to prevent sticking.
- After potatoes have been baking for 15 minutes, heat butter in a skillet and saute peppers and ham for about 5 minutes on medium heat.
- Add eggs and scramble.
- Serve egg mixture over potatoes. Sprinke with cheese.

Steps:
- Cube baked potato into bite-sized pieces.
- Add green pepper, onion, garlic powder, hot sauce, and pepper to taste.
- saute in margarine in a non-stick skillet for 2 minutes.
- Beat gently into potato mixture.
- Cook until firm.
- Sprinkle with cheese and served with sliced tomatoes on the side.

SCRUMPTIOUS SCRAMBLE
Steps:
- In a medium sized, non-stick skillet, heat the oil over medium heat. Add the onion and cook for 2 minutes, stirring once or twice. Add the tomatoes and cook for 1 minute more. Transfer the onion-tomato mixture to a bowl and set aside.
- In a medium bowl lightly beat together the whole eggs, egg whites and water, if using. Pour the egg mixture into the skillet and cook over a medium-low flame, stirring frequently, until the eggs are almost set. Drain any excess water from the tomato mixture and stir the mixture gently into the eggs. Toss in the dill, season with salt and pepper, and serve.
- Serving suggestion: Serve with a piece of whole-grain toast spread with 1/8 of an avocado, instead of butter.

- In a large skillet, heat the olive oil on medium high heat. Add the diced onions and stir the onions for about 2 minutes.
- Add the diced bacon, garlic, jalapeno peppers, and stir. Take the already-baked potatoes and dice them with the skin. Add the diced potatoes to the rest of the mixture and allow to cook while periodically stirring for 6-10 minutes. Season with salt and pepper.
- In a large bowl, whisk together eggs, add the cheese, and whisk once more. Pour the eggs into the skillet and begin to stir until the eggs are scrambled. Remove from heat and serve.
