- Combine 1st 5 ingredients in a large bowl.
- whisk together buttermilk and eggs.
- gradually stir buttermilk mixture into flour mixture.
- Gently stir in butter.
- (Batter will be lumpy).
- Pour 1/4 Celsius batter mix onto hot butered griddle.
- cook pancakes 3-4 minutes or until tops are covered with bubbles and edges look crispy.
- Turn and cook 304 minutes or until golden brown.
- place pancakes in a single layer on a baking sheet and keep warm in a 200 degree oven up to 30 minutes.

- Heat skillet on med-high heat with vegetable oil.
- Mix all other ingredients together, we try to use left over mashed potatoes, buy fresh are just as good. Crumble bacon up, and make sure to mix very well together.
- Patty up, and place in skillet; cook each side 5-10 minutes or until browned and crispy on the outside.
- Remove from heat, serve and enjoy!

POTATO PANCAKES

- Combine the grated onion and potato in a kitchen towel and wring out as much liquid as you can. Pour the mixture into a mixing bowl. Dust with the flour and mix to disperse it. Add the egg, lemon zest, chopped dill, salt and pepper and mix until well combined.
- Heat the olive oil and butter in a large nonstick saute pan over medium-high heat. Once the bubbles from the butter subside, spoon 3 heaping tablespoons of the potato mixture into the pan. Repeat, making 4 to 8 pancakes. Cook the pancakes about 4 minutes on each side, assuring that both sides are well browned and the potato is cooked through. Reduce the heat of the pan if the potato cakes are browning too quickly in order to make sure the inside is cooked completely.
- Remove the cakes to a paper-towel-lined plate as they finish and season with salt while hot.
- (You can cover them with foil and keep in a 200 degrees F-oven to stay warm until ready to serve.)
- To serve, transfer the potato pancakes to a platter and dollop each one with the creme fraiche. Top with a sprig of dill.
FLUFFY MORNING PANCAKES
These fluffy pancakes beat out the mixes in my cupboard every time! And the funny thing is, it really isn't that much more trouble to make them!

- Combine all dry ingredients.
- Preheat electric skillet to 380º.
- Add butter and milk to eggs.
- Add dry ingredients.
- Stir just to dampen (not too much).
- Adjust milk so it's thin enough to pour.
- Carefully butter skillet and pour pancakes to your desired size. When you begin to see bubbles forming on top of your batter, it is time to flip. Cook on second side until nicely browned.

- Preheat oven to 250°F. Whisk eggs, sugar and melted butter in medium bowl until blended. Add flour alternately with milk in 3 additions, whisking to blend after each addition. Whisk in baking powder and salt.
- Melt enough butter in heavy medium nonstick skillet over medium heat just to coat bottom. Ladle scant 3/4 cup batter into skillet, rotating skillet to spread batter to about 6-inch-diameter round. Cook pancake until bubbles form on surface and bottom is brown, about 1 minute. Turn over pancake and cook until bottom is brown and pancake is cooked through, about 1 minute. Transfer to large baking sheet. Place in oven to keep warm. Repeat with remaining batter to form 5 more pancakes, adding more butter to skillet as necessary. Serve with syrup.
GOOD-MORNING PANCAKES
These are the best; we sometimes have them for supper too. They're fairly thick, but light and very tasty. The recipe makes lots, but my Norwegian background gives me a love for leftover pancakes spread with butter and brown sugar. Yum!

- You can do this the night before, or just before cooking: combine the dry ingredients in a large bowl.
- If doing the night before, cover and leave on the counter.
- You can also do this the night before, or just before cooking: in a small bowl, beat the eggs then stir in the milk and oil, and vanilla if using.
- If doing this the night before, cover and store in the fridge.
- When ready to cook, pour the liquid mixture (stir well again if taking it straight from the fridge) into the flour mixture; stir quickly with a fork until the ingredients are moistened but the batter is still lumpy.
- Lightly grease a frying pan with a lid, like an electric frying pan.
- Pour the batter on to the hot surface-- about a quarter of a cup for each pancake.
- Cover and cook until the surface loses its wet look and bubbles have formed.
- Flip the pancakes over and cook, uncovered, about two or three minutes longer, or until the underside is browned.
- Keep warm in a low oven until all pancakes are cooked.
- Makes approximately 24 pancakes; should serve four to six with leftovers; we love leftover pancakes at my house.
- Best served with warmed real maple syrup, although I am also a big fan of blueberry syrup.
SUNDAY MORNING FRIED POTATOES
We had these potatoes every single Sunday morning of my life and I still love them! I used to put lots of ketchup on them as a child, but now I am grown up (so I only put a little ketchup on them) HA!

- In a large non-stick skillet (so all the spices don't stick to the bottom) melt the butter and add the onions.
- Cook 2-3 minutes, then add raw potatoes chopped to about 1/4 to 1/2-inch dice.
- Add all of the spices and garlic.
- Continue to cook on medium heat until the potatoes are cooked through (about 15 minutes). Be sure to taste for salt because these potatoes need more salt than you might think.
- Serve on the side of a fried egg breakfast.
- Yum!
