RICOTTA FRITTATA WITH TOMATO SALAD



Ricotta Frittata With Tomato Salad image

8 large eggs
1/4 cup milk
1/3 cup grated parmesan cheese
2 medium tomatoes, chopped
3 tablespoons chopped fresh basil
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper

1 bunch scallions, sliced
1/2 small head radicchio, coarsely chopped (about 4 cups)
Pinch of sugar
1/2 cup ricotta cheese (preferably fresh)

Steps:

  • Position a rack 4 to 6 inches from the broiler and preheat the broiler. Whisk the eggs, milk and cheese in a large bowl. In another bowl, toss the tomatoes, basil, 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste.
  • Heat 1 tablespoon olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the scallions, radicchio, sugar, and salt and pepper to taste. Cook, stirring, until the radicchio is tender, about 3 minutes, then add to the bowl with the egg mixture and stir. Wipe out the skillet.
  • Heat the remaining 1 tablespoon olive oil in the skillet over medium-high heat, tilting to coat the pan. Add the egg mixture and cook, undisturbed, until the bottom starts setting, about 30 seconds. Top with spoonfuls of ricotta; transfer to the broiler and cook until the frittata is set and golden, 3 to 5 minutes. Loosen the edge with a rubber spatula; slide out of the skillet. Cut into wedges. Serve with the tomato salad.

1 1/2 pounds russet potatoes, peeled and cut into 1/4-inch rounds
5 tablespoons extra-virgin olive oil, plus extra for baking dish
1 pound zucchini
3 tablespoons minced garlic
Sea salt, preferably gray salt
Freshly ground black pepper
3 1/2 cups tomato puree, recipe follows
4 tablespoons chopped garlic
1 cup freshly grated Parmesan
About 1 cup fine dried bread crumbs
1/3 cup coarsely chopped fresh basil leaves
20 tomatoes, core removed

Steps:

  • Place potatoes into a glass bowl, coat lightly with about 2 tablespoons of extra-virgin olive oil. Mix to coat.
  • Trim the ends of the zucchini, then cut lengthwise into 1/4-inch-thick slices. Put in a separate bowl. Top with 3 tablespoons of extra-virgin olive oil, and season with salt and pepper, to taste.
  • Preheat the oven to 375 degrees F. Lightly oil a deep 2 1/2 to 3-quart baking dish (about 9 by 12 inches). Then place about 1/4 cup of tomato puree and spread out to coat the bottom of the pan.
  • In zucchini and potato bowls, add 2 tablespoons of garlic each and mix in well with a rubber spatula. Using the potatoes and zucchinis, make a layer in the prepared baking dish, alternating between the potato and zucchini, filling in any gaps with small pieces. Spread 1/2 cup of the tomato puree on top, then sprinkle 2 tablespoons of the Parmesan and 2 tablespoons of the bread crumbs. Top with some of the basil. Repeat the layering of the vegetables, tomato puree, Parmesan, bread crumbs and basil using all the vegetables. Cover the top with the remaining bread crumbs and Parmesan.
  • Bake, uncovered, for about 1/2 an hour, then cover for the next 45 minutes of baking, finally uncovering for the last 15 minutes, until tender and bubbling, about 1 1/2 hours total cooking time. Remove from the oven and let cool to room temperature to allow the dish to settle and deepen in flavor.
  • Tiella may be served hot, warm, or at room temperature. Reheat in a low oven, if desired. To serve, cut into squares and carefully lift out of the pan with a spatula.
  • Bring 2 large pots of water to a boil. Lower the tomatoes into the water, blanch for 45 seconds to 1 minute. Place blanched tomatoes on a baking sheet, and peel the loosened skins. With a colander over a bowl, squeeze the seeds and innards out of each tomato. Set aside and refrigerate the clear strained liquid for other uses. Slice the peeled tomatoes into 1-inch chunks, and place chunks into blender. Puree thoroughly. Pour into bowl.
  • Yield: 10 to 12 cups

ZUCCHINI, SQUASH AND TOMATO PACKETS

1 green zucchini, sliced into 1/4 inch rounds
1 yellow squash, sliced into 1/4 inch rounds
1 Vidalia onion, sliced
5 plum tomatoes, sliced into 1/4 inch rounds
1 cup sharp white cheddar cheese, grated
4 tablespoons olive oil
Salt
Pepper
1/4 cup basil, chiffonade

Steps:

  • Preheat the grill. Combine the zucchini, squash, onion, tomatoes and cheese in a large bowl. Toss with 2 tablespoons of the olive oil and season with salt and pepper. Take a piece of aluminum foil that is at least 24 inches long and brush with the remaining olive oil. Place the vegetables and cheese on the aluminum foil. Fold up the aluminum foil so the contents are sealed in. This can be done up to 4 hours in advance and stored in the refrigerator. Place the packet on the grill. Grill for 7 minutes. Flip the packet over and grill for another 5 to 7 minutes. Remove from the grill and let rest for 5 minutes before opening the packet. Open the packet and sprinkle with basil.

2 tablespoons extra virgin olive oil
2 zucchini, thinly sliced
1/2 cup thinly sliced vidalia onion
1 medium tomatoes, peeled and chopped
1 clove garlic, minced

Steps:

  • Preheat the oven to 350°F.
  • In a medium bowl, whisk together the eggs, Parmesan cheese, salt, pepper and chives.
  • Set aside.
  • In a 10-inch ovenproof non-stick skillet, heat 1 tablespoon of oil over medium heat.
  • Cook half the zucchini slices until tender, about 3 minutes, then move them to a small bowl.
  • Repeat with the rest of the zucchini and reserve.
  • Add the remaining tablespoon of oil to the skillet and cook the onions, tomato and garlic for 5 minutes, or until the onions are tender.
  • Return the zucchini to the skillet, evenly distributing it.
  • Add the egg mixture, and cook for 3 minutes, or until the bottom of the frittata is just set.
  • Place the frittata in the oven and bake for 12 to 15 minutes, or until it is completely set and golden brown.
  • Invert it onto a plate, cut into slices and serve.

Nice light meal for summer that uses fresh veggies, and is easy to put together. It is really a meal in itself, but you could always add some fresh french bread & herb butter to go with it.

3 tablespoons butter
1 zucchini, cubed
1 yellow squash, cubed
1 small onion, chopped
4 ounces sliced mushrooms
1 (4 ounce) can sliced black olives
8 ounces roll breakfast sausage, browned & drained
6 large eggs, lightly beaten
3 tablespoons ranch dressing
cajun seasoning
lemon pepper
salt
1 cup shredded Italian cheese blend
1 cup sharp cheddar cheese
1/3 cup fresh basil, chopped
4 slices cheese, any flavor you like I use Pepper jack to give it a little kick

Steps:

  • Melt butter in a 12 inch skillet over Med-Hi heat.
  • Add Zucchini, squash, onion, mushrooms and olives.
  • Sautee until onions are tender.
  • Add pre-cooked sausage.
  • Stir until well mixed.
  • Whisk together Eggs, Ranch Dressing and seasonings until well blended.
  • Pour over veggie/sausage mixture in skillet.
  • Stir in 1/2 of Shredded Cheese.
  • Stirring cnstantly, cook over low heat until bottom and sides of eggs are set.
  • Sprinkle top of eggs with remaining cheese.
  • Move Skillet to oven.
  • Bake at 350 for 10 minutes or until center is set.
  • Remove from oven.
  • Arrange 4 slices of cheese over top of eggs.
  • Sprinkle evenly with Fresh Basil.

1 tablespoon unsalted butter
2 1/2 tablespoons olive oil
7 large eggs
1/4 cup heavy cream or milk
1/4 cup coarsely chopped fresh chives, plus whole chives for garnish
1/4 cup coarsely chopped fresh flat-leaf parsley
1/2 teaspoon coarsely chopped fresh thyme
1/4 teaspoon finely chopped fresh marjoram
1/2 teaspoon coarse salt
Freshly ground pepper
1 small zucchini, cut crosswise into thin rounds
1 small yellow summer squash, cut crosswise into thin rounds

Steps:

  • Heat the butter with 1 1/2 tablespoons oil in a 10-inch ovenproof nonstick skillet over medium-low heat until melted.
  • Preheat the broiler, with the rack about 7 inches from the heat source. Meanwhile, whisk together the eggs, cream, and herbs until well blended. Stir in the salt, and season with pepper.
  • Add the egg mixture to the skillet; cook until the bottom is set and golden, about 4 minutes. Continue to cook, gently shaking the pan occasionally, until 1 inch of the edges is almost set, about 4 minutes more. Remove from heat. Gently press the zucchini and squash on top, overlapping slightly in concentric circles.
  • Broil (checking often) until golden and just cooked through in center, 1 to 2 minutes. Gently slide onto a plate with a spatula; drizzle with the remaining tablespoon oil. Garnish with whole chives.
