- Mix mayonnaise, tomatoes, garlic, horseradish, ketchup, and cayenne in small bowl.
- Toss onion, peppers, pepper flakes, and some juice from the peppers in another bowl. Let it stand for at least 5 minutes for flavors to blend.
- Spread butter on one side of each slice of bread, and spread mayo mixture on the other side. Sprinkle cheese on two slices, top with roast beef, then some of the salad mixture, then the other slice of bread, butter side up.
- Toast sandwiches in George Foreman grill or in a skillet using another heavy skillet or foil-wrapped brick as a weight. (Cook over medium heat. When first side is browned, flip over and cook the other side, weighting again.).

- Combine olive oil, sugar, paprika, garlic powder, onion powder, salt, cayenne pepper and black pepper in small bowl; whisk until smooth.
- Cut French bread into 1/4 inch slices;.
- Arrange in single layer on baking sheet.
- Brush with olive oil mixture, whisking oil constantly while using to mix seasonings.
- Toast at 200°F for 1 hour or until crisp.
- Remove to wire rack to cool. Store in airtight container for up to 2 days. Serve with soups and salads. May freeze and reheat at 350°F for 5-7 minutes.

- drain the sun dried tomatoes, pat dry and thin slice.
- remove all the pith from the segments.
- If using kumquats omit zest. Think slice kumquats then simmer with next step.
- Simmer the first three ingredients over high heat to reduce to 1/4 cup syrup. Remove and cool.
- Saute the onion and pepper in the oil until tender crisp. Cool slightly.
- Toss all in bowl and let stand 2 hours.
- Will keep covered in refrigerator for 3 days.

I tried a sample of this at Costco and it was so good, I bought a huge jar of the tomatoes just so I could repeat this at home. I am almost embarrassed to share this, as it is so incredibly simple, but they were so good. I am guessing on the amounts.

- NOTE: If your sundried tomatoes do not already have Italian seasoned herbs in their oil, you will need to first stir in 1 Tbsp of Italian seasoning blend to your tomatoes, then cover and chill overnight.
- Drain off the oil from your tomatoes.
- Spread a generous spoonful of cream cheese onto each cracker and top with a strip of marinated sundried tomato.
- Place onto a platter and garnish with strips of fresh basil leaves, if desired.
- Serve immediately.
- (You may need more or less or any of the ingredients- the Zaar computer only accepts specific amounts, so I have tried to give you a rough guess).

You will not BELIEVE the flavor of this spread till you try it! It creates a taste explosion in your mouth and makes you think you're in sunny Greece. Serve with crackers or pita crisps.

Steps:
- To roast the garlic: Cut top 1/4" off the heads, place on foil and drizzle with olive oil. Enclose in the foil and bake at 350 till soft, about 30 - 40 minutes.
- Let garlic cool a bit and squeeze the pulp out of the cut-off top into a bowl. Beat with the cheeses and oregano till smooth.
- Drain and chop the tomatoes, and add with the walnuts to mixture, stir.
- Cover and refrigerate for at least 2 hours, 24 hours is best to blend flavors.
