This take on a classic Italian-American recipe is super easy to make. Slightly reducing the cream and adding a hefty dose of cheese means you don't have to use flour to thicken the sauce.

Kosher salt
12 ounces fettuccine
Olive oil, for tossing
3/4 pound large shrimp (about 16), peeled and deveined, tails removed
Freshly ground black pepper
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.
  • Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.
  • Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.
  • Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.

  • Cook fettuccine according to package directions. Meanwhile, in a large saucepan, melt butter over medium heat. Stir in cream. Bring to a gentle boil. Reduce heat; simmer, uncovered, for 3 minutes, stirring constantly. , Add the shrimp, cheese, garlic and pepper; cook and stir until heated through. Drain fettuccine; toss with shrimp mixture. Sprinkle with parsley.

1 (16 ounce) box dry fettuccine pasta
1 pint heavy whipping cream
1 ¼ cups butter, divided
¾ cup grated Romano cheese
½ cup grated Parmesan cheese
3 cloves garlic, crushed, divided
salt and ground black pepper to taste
2 tablespoons olive oil
1 large onion, chopped
8 ounces diced mushrooms
1 (8 ounce) package frozen shrimp, deveined and tails removed, thawed

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook over medium heat until tender yet firm to the bite, about 8 minutes. Drain.
  • Heat heavy cream and 1 cup butter together in a large saucepan over medium heat until butter is melted. Add Romano cheese, Parmesan cheese, 1 clove garlic, salt, and black pepper; cook and stir until cheese is melted and sauce thickens, about 5 minutes. Remove from heat.
  • Heat remaining 1/4 cup butter and olive oil in another saucepan over medium heat. Add onion; cook and stir until softened and translucent, about 2 minutes. Stir in remaining 2 cloves garlic and mushrooms. Increase heat to medium-high and cook until soft, about 2 minutes. Add shrimp; cook and stir until firm and light pink in color, 1 to 2 minutes.
  • Fold shrimp mixture into sauce. Add drained fettuccine; toss to coat with sauce.

I looked everywhere for a good mushroom alfredo. I used to saute the mushrooms and add them in, but they just weren't as good as I hoped. After some experimentation I came up with this recipe for my Mother-in-Law's birthday party and it was unbelievable. Everyone loved it! I served it over tortellini, but generally I'll just serve it over wheat pasta noodles.

1/2 cup sweet butter (halved)
2 cups portabella mushrooms or 2 cups cremini mushrooms
2 -3 garlic cloves, minced
1 small white onion (optional)
4 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
1 cup mozzarella cheese
16 ounces thin spaghetti noodles (optional)

Steps:

  • Melt half the butter in medium saucepan over medium/low heat.
  • Add the garlic, onion, and mushroom and sauté until the liquid is released. 5-7 minutes.
  • Add the remaining butter, cream, and white pepper and bring mixture to a simmer.
  • Stir often.
  • Begin your noodles or tortellini at this point so everything will be done at the same time.
  • Add the Mozzarella cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth, stirring constantly.
  • When sauce has thickened add the Parmesan cheese and stir frequently until smooth. Remove from heat when sauce has reached desired consistency.

1 lb fettuccine
8 ounces fresh mushrooms, sliced
4 tablespoons butter
3 cloves garlic, minced
2 tablespoons flour
3 cups half-and-half cream
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/8 teaspoon red pepper powder
1 lb shrimp, cooked

Steps:

  • Prepare fettuccine according to package directions.
  • Melt butter in large skillet on a low heat.
  • Saute garlic and mushrooms in butter until limp and browned.
  • Add flour and coat mushrooms.
  • Slowly stir in cream to mixture.
  • Add salt,black pepper, and red pepper.
  • Put shrimp in mixture and let simmer about 15 minutes.
  • Dish up the noodles and pour some of the mixture over it.
  • I like to serve this with a nice green salad and garlic bread.

10 large sea scallops, drained well and 1/4 cut
3 sun-dried tomatoes, julieened
5 button fresh mushrooms, sliced (optional)
1 cup fresh broccoli, cut up in small pieces (steamed almost until tender)
1 cup heavy whipping cream
1/3 cup grated parmesan cheese
2 large garlic cloves, crushed
1/2 cup chopped onion
1/2 teaspoon garlic powder

4 tablespoons salted butter

Steps:

  • sprinkle shrimp and scallops on one side with garlic powder.
  • place 1 T olive oil and 1 T butter in large non stick skillet and quickly saute shrimp over medium heat on both sides until shrimp turns pink. remove and set aside in a bowl.
  • add scallop 1/4s and saute untill opague and has a little brownish sear on a few of the sides remove to the shrimp in bowl.
  • in hot pan add remaining butter (leave any cooked bits and juices from shrimp and scallops) saute onion, and mushrooms in butter until tender.
  • add sundried tomatoes and let cook about 2 minutes.
  • pour in cream and let cook 2 minutes, add garlic let cook 2 minutes.
  • add crushed red pepper, cayenne, and salt stir well.
  • add parmesan cheese and reduce heat to medium low.
  • add shrimp and scallops (and any juice that collected in he bowl) stir well to coat everything.
  • add brocolli and pasta toss well, raise heat to medium or medium high just to throughly heat everything through.
  • serve with a little sprinkle of parsley.
  • enjoy.

1 lb large raw shrimp, Tailed, Shelled and De-veined (Chunk Chopped)
1/2 cup sweet butter
6 garlic cloves, Whole
1/4 cup green onion (Sliced)
1 tablespoon parsley
2 cups heavy cream
1 teaspoon white pepper
1 cup parmesan cheese (Grated)
2 cups mozzarella cheese (Grated)
1 dash sea salt, to taste
1 1/4 teaspoons cornstarch
1 cup tomatoes (diced)
1 cup mixed mushrooms (diced)
1 lb noodles (Any Noodle Work but I prefer Shell or Egg Noodles)

Steps:

  • Melt butter in medium saucepan over medium/low heat, allow it to burn only slightly for flavor.
  • Whisk White Pepper and Cornstarch into Cream and set aside.
  • Cook garlic for about 4 minutes or until soft but not browned and mash with a fork and let cook 1 more minute on Medium to Low heat.
  • Add chopped shrimp and onions.
  • Cook until the shrimp just starts to turn pink, about 2 minutes.
  • Briefly stir cream mixture and pour into frying pan.
  • Bring mixture to a simmer.
  • Stir often to keep from burning.
  • Add the Parmesan cheese and simmer sauce for 10 minutes until sauce has thickened and is smooth.
  • When sauce has thickened, add the Mozzarella cheese and stir until smooth.
  • Stir quite often to again keep from burning and let simmer for another 3 minutes.
  • While the sauce cooks, boil noodles for about 10 minutes or until tender.
  • Drain well and hit with cold water to stop the cooking.
  • Add Tomatoes and Mushrooms to sauce mixture, then add the noodles and stir well.
  • Turn off the heat and let sit for a few minutes to cool and thicken.
  • Spoon onto plate and serve with Cabernet Sauvignon and a light salad.
