CHICKEN WITH SUN-DRIED TOMATOES, FETA AND SPINACH IN PHYLLO CUPS

* You will need a muffin tin - a 6 portion tin for large muffins or a traditional 12 portion tin - to prepare this recipe. Disposable muffin tins in both sizes are available in many large markets on baking aisles.

1/2 stick butter, melted
3 sheets phyllo pastry dough, found in the freezer section
Coarse salt and black pepper
2 tablespoons extra-virgin olive oil
1 1/2 thin cut boneless skinless chicken breast, sliced into thin strips on an angle
3 cloves garlic, chopped
1 small yellow skinned onion, chopped
1/2 cup sun-dried tomatoes in oil, drained, 10 to 12 pieces, chopped
2 boxes chopped spinach, defrosted and squeezed dry
3/4 pound, 12 ounces, feta cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F.
  • Brush 6 or 12-cup muffin tins with butter using pastry brush. Brush a layer of phyllo dough with butter, top with a second sheet of pastry, butter, then season the phyllo with salt and pepper and then top with a third sheet. Cut into 6 or 12 squares and arrange the phyllo in cups, allowing the dough to crumple and spill out of the tops of the tins. Brush the inside of the pastry cups with remaining butter. Bake until golden, 5 to 8 minutes. Cool.
  • To a skillet preheated over medium high heat add chicken, garlic and onions and season with salt and pepper. Saute 5 minutes, add the sun-dried tomatoes and spinach and cook another 3 to 5 minutes. Add feta and taste to adjust seasonings.
  • To serve, place phyllo cups on a serving platter and fill with mounds of chicken, sun- dried tomatoes and spinach mixture. A hearty vegetable and olive salad makes a perfect starter or side to this delicious, quick cross between chicken pot pies and spanakopita.

Juicy chicken breast is quickly marinated with the lemons, sun-dried tomatoes, and fresh basil, then it's seared and baked with the same lemon, sun-dried tomatoes, and fresh basil marinade.

24 oz boneless, skinless chicken breasts ((about 4 raw chicken breasts))
7 oz sun-dried tomatoes in olive oil
1 large lemon
1/4 cup minced fresh basil (don't pack too tight)
salt
fresh cracked black pepper

Steps:

  • Julianne the sun-dried tomatoes and place the tomatoes and the oil they came in into a mixing bowl (or a gallon zip-lock bag).
  • Slice lemon thinly and add it to the tomatoes.
  • Add minced basil, salt, and pepper to the tomatoes as well.
  • Add chicken breasts to the mixing bowl as well, mix and let it sit for about 20 minutes to marinade. (You can also do the same in the zip-lock bag if preferred.)
  • Preheat a cast iron skillet (or an oven save cooking pan) by adding a little bit of olive oil and preheat it over medium-high heat.
  • Preheat the oven to 350 degrees.
  • Once the skillet it hot, add chicken breasts and let them sear for a couple of minutes on each sides.
  • Add the tomato/lemon/basil mixture that chicken was marinating in right into the pan. Spread everything evenly, bring to simmer, and place into the oven.
  • Bake for 20-30 minutes, until chicken is just done. Bake time depends on thickness of the chicken breasts.
  • Serve with any side dish you desire.

I took a regular method of baking chicken and added my own twist to it. Very simple and delicious. I think that the mayo is what makes it moist. Be careful not to over season with the Adobo because you can oversalt your chicken. If you can't find Goya Adobo, feel free to use Season All. I buy whole cut up chicken to save time. I preffer to use the organic mayo (central market organics) because the taste is VERY different from regular processed mayo.

1 whole cut up chicken, washed and rinsed
1/3 cup butter, melted
1 -2 teaspoon of goya adobo with saffron or 1 -2 teaspoon Season-All salt
1 1/2 table spoon chopped fresh cilantro
1/2 tablespoon sun-dried tomatoes, tampanade or 1/2 tablespoon pesto sauce
1 tablespoom mayonnaise

Steps:

  • Preheat oven to 400°F.
  • Place chicken in large baking dish and brush each piece lightly with mayonnaise.
  • Sprinkle Adobo seasoning on each piece of chicken.
  • Mix melted butter, chopped cilantro, and sundried tomato in a bowl. Pour over chicken. Use all the butter.
  • Bake uncovered for 35-45 mins or until juices run clear, basting chicken every couple of minutes with the pan juices. Do not overbake.

2 boneless chicken breasts, large size
1 teaspoon black pepper
1/2 teaspoon kosher salt
2 cups breadcrumbs
1/2 cup sun-dried tomato, drained, sliced (oil packed)
4 garlic cloves
1/2 cup all-purpose flour
2 eggs
2 tablespoons water
2 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees F.
  • Slice each breast in half lengthwise and pound to approximately 1/2 inch thick.
  • Season with salt and pepper.
  • Place the bread crumbs, sun-dried tomatoes and garlic in a food processor and pulse.
  • Place flour in shallow bowl.
  • Mix eggs and water in a third shallow bowl.
  • Dredge both sides of chicken in flour, then egg mixture, then crumb mixture.
  • Pat crumb mixture into both sides of chicken and place on a plate.
  • Heat oil, in an oven proof skillet, over medium high heat.
  • Saute chicken for about 3 minutes on one side, flip it over, then place in oven.
  • Bake in the oven for 8-10 minutes, or until cooked through, this will depend on how thin you pounded your chicken.
  • Let rest for 5 minutes before serving.

1/2 cup plus 3 tablespoons reduced-sodium chicken broth
1/4 cup chopped dry-packed sun-dried tomatoes
1/2 cup sliced fresh mushrooms
1 green onion, thinly sliced
2 teaspoons minced garlic, divided
4 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon olive oil
2 teaspoons cornstarch
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup fat-free milk
Hot cooked pasta, optional

Steps:

  • Bring 1/2 cup broth to a boil; remove from the heat. Stir in sun-dried tomatoes; let stand for 10 minutes. In a large nonstick skillet coated with cooking spray, saute the mushrooms, onion and 1 teaspoon garlic for 1 minute. Stir in the remaining broth; cook 2 minutes longer or until mushrooms are tender. Remove mushroom mixture and set aside., Rub chicken with remaining garlic. In the same skillet, brown chicken in oil for 3 minutes on each side. Stir in tomato mixture; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until chicken juices run clear. Remove chicken; slice and keep warm., In a small bowl, combine the cornstarch, basil, salt and pepper. Stir in milk until smooth; add to tomato mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in mushroom mixture. Spoon over chicken. Serve with pasta if desired.

4 boneless skinless chicken breasts (about 4 to 6 ounces each)
1 1/2 tablespoons olive oil
salt, to taste
fresh ground black pepper, to taste
flour, for dredging
1/2 cup low sodium chicken broth
2 tablespoons lemon juice
1/2 cup sun-dried tomato, rehydrated and chopped
2 tablespoons capers
2 tablespoons parsley, chopped

Steps:

  • Lay the chicken between two pieces of waxed paper and flatten each cutlet with the flat end of a mallet until thin.
  • Heat the olive oil in a large, non-stick skillet until hot. While the oil is heating, season the chicken with salt and pepper and dredge it in flour.
  • Sauté the chicken over high heat, about 3 minutes on each side. Remove to a warm platter and keep warm.
  • Quickly add the chicken broth to the pan and stir with a wooden spoon to release any caramelized bits that may be stuck to the pan.
  • Add the tomatoes and cook until the broth has reduced by half. Add the lemon juice and capers.
  • Pour the sauce over the chicken, sprinkle with parsley and serve.
