LEMON-THYME BREAD
Lemon and thyme go together like milk and cookies. Fresh thyme is best, but if you must use dried, reduce the amount to 1 tablespoon and crush it between your fingers before adding it to the batter. -Cathy Tang, Redmond, Washington

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg. Combine buttermilk and sour cream. Combine the flour, thyme, lemon zest, baking soda and salt; add to the creamed mixture alternately with buttermilk mixture, beating well after each addition., Transfer to a greased 8x4-in. loaf pan. Bake at 350° until a toothpick inserted in the center comes out clean, 40-50 minutes. Cool for 10 minutes before removing from pan to a wire rack. Cool completely; sprinkle with confectioners' sugar.

ROASTED POTATOES WITH THYME
These roasted potatoes with thyme comes out crispy and seasoned to perfection! Red potatoes and fresh thyme make a classic pairing.

- Preheat the oven to 425 degrees Fahrenheit.
- Wash the potatoes, then slice them in half (for baby potatoes) or dice them into 1/2-inch cubes.
- In a large bowl, stir together potatoes, olive oil, garlic powder, kosher salt, and several grinds of fresh ground black pepper.
- Line a baking sheet with parchment paper. Spread the potatoes in an even layer on the sheet cut and make sure they are side down. Roast for about 30 to 35 minutes without stirring until browned, depending on the size of the pieces. (To step up these potatoes, remove from the oven at 15 minutes and toss with 1/2 cup shredded Parmesan cheese.)
- Remove the potatoes from the oven and toss with the fresh thyme. For a more forward garlic flavor, grate the fresh garlic onto the pan with another drizzle of olive oil and use a spoon to gently toss it all together (separating any grated garlic that clumps together). You can also spritz with lemon wedges for a tangy flavor.

LEBANESE THYME BREAD

Steps:
- In a small bowl, mix together the yeast sugar and 2-3 tablespoons of the warm water and set aside.
- Sift the flour into a mixing bowl and add in the salt. Make a well in the centre of the flour and pour in the yeast mixture and the remaining warm water.
- Knead together until the mixture forms a stiff dough.
- Knead the dough on a lightly floured surface for 10-15 minutes, adding in a tablespoon of olive oil to the dough to soften it.
- Wash and dry the mixing bowl and rub with a little of the olive oil. Return the dough to the ball and roll it around the bowl until well oiled. Cover with a clean cloth and set aside in a warm place to rise for 2 hours.
- Knead the dough again, then divide it into 10 portions.
- Roll each dough portion between your palms until smooth and round.
- Using a rolling pin, roll out each portion into a circle. Cover the dough circles and set aside for 20 minutes.
- Preheat the oven to 450°F Place 2 large baking sheets in the oven to heat up.
- Brush the tops of each dough circle with a little of the olive oil. Mix the remaining olive oil with the thyme, marjoram and sesame seeds and spread the mixture evenly over the surface of each dough circle.
- Slide the dough circles onto the hot baking sheets and bake for 8-10 minutes.
- Remove and cool. Serve.
GARLIC-THYME BREAD
This is a great alternative to 'regular' garlic bread. Let it sit in your fridge 3 days before cooking and your garlic index will go through the roof! Prep time includes rising time.

- In a medium mixing bowl, combine yeast and water, and allow to stand in a warm place for 10 minutes or until foamy.
- Stir in oil, salt, garlic, thyme, and whole wheat flour.
- Add white flour 1/4 cup at a time, as needed, until a stiff manageable dough is formed.
- Turn out onto a floured surface and knead for 5 to 10 minutes, or until dough is smooth and elastic.
- Place in a lightly oiled bowl, cover, and set aside in a warm place for 1 hour, or until doubled.
- (For even more garlicky flavour, after the dough has risen once, punch it down and place in refrigerator for 1 to 3 days. Let it come to room temperature, and then proceed with the following directions.) Preheat oven to 450° and dust a baking sheet with cornmeal.
- If desired, work a bit of parmesan-reggiano into the dough at this point with some olive oil for extra flavour.
- Form the dough into a round, place on prepared cooking sheet, cover with plastic, and let rise for 30 minutes.
- Brush lightly with cold water, bake for 5 minutes, then reduce oven temperature to 400° and continue baking for 20-30 minutes, or until loaf is golden brown and sounds hollow when tapped.

- In a large bowl, combine 4 cups flour, yeast, sugar, salt and herbs. Add water; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. - In the stand mixer bowl, stir flour and salt together and stir in the yeast, the sugar, sun dried tomatoes and thyme. While doing this is I add a small tsp of water until it all comes together.
- Brush a bowl with oil and transfer the dough to the oiled bowl. Cover and let it rise for about an hour and half. Dough should doubled in volume.
- When doubled, punch dough down to deflate it and divide in two and shape them in a round or oval shape ( really the shape is up to you). I like round and that is what I did. Place the balls on a cookie sheet with parchment paper, cover them with a towel and let them rest again for about 45 minutes to one hour.
