SINCE I eat very little meat, I'm always on the lookout for vegetarian and low-fat recipes. I came up with this recipe after a lot of experimenting. I used tomatoes as a base for the sauce, and my version of pasta primavera has been enjoyed by both family and friends.-Clara DelVitto, Midlothian, Virginia

1/2 cup sliced onion
1/2 cup julienned green or sweet red pepper
2 teaspoons olive oil
1/2 cup sliced zucchini
1/2 cup sliced yellow summer squash
2 medium fresh mushrooms, sliced
3/4 cup stewed tomatoes
1/4 to 1/2 teaspoon dried basil
2 cups hot cooked pasta
Shredded Parmesan cheese, optional

Steps:

  • In a large skillet, saute onion and green pepper in oil until crisp-tender. Add the zucchini, yellow squash and mushrooms; saute for 1 minute. Add tomatoes and basil. Bring to a boil; reduce heat. Cover and simmer for 8-10 minutes or until vegetables are tender. Toss with pasta; sprinkle with cheese if desired.

2 green onions, sliced
5 garlic cloves, minced
2 tablespoons olive oil
2 medium red sweet peppers, sliced
2 medium yellow sweet peppers, sliced
2 -3 medium carrots, sliced
1 small zucchini, chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup chicken broth
1 cup snipped fresh basil
1/2 cup finely shredded parmesan cheese (2 ounces)
2 tablespoons pine nuts, toasted

Steps:

  • Cook pasta according to package directions; drain. Return to saucepan; cover and keep warm.
  • Meanwhile, in a large skillet, cook green onion and garlic in hot oil for 30 seconds. Stir in sweet pepper and carrot. Cook and stir for 3 minutes.
  • Stir in the zucchini, salt, and black pepper. Cook and stir for 3 minutes more. Add broth. Bring to boiling; reduce heat. Cover and simmer about 1 minutes or just until vegetables are tender.
  • Add vegetable mixture and basil to pasta; toss to combine.
  • Transfer to serving dish. Sprinkle with Parmesan cheese and pine nuts.

2 heaping cups orecchiette (about half of a 16-ounce box)
5 tablespoons extra-virgin olive oil, plus more for drizzling
3 cloves garlic, thinly sliced
3 summer squash (yellow squash and/or zucchini), trimmed, halved lengthwise and thinly sliced crosswise
1/2 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Ladle 1 1/2 cups cooking water into a liquid measuring cup and set aside, then drain the pasta in a colander.
  • Meanwhile, heat the olive oil and garlic together in a large pot or Dutch oven over medium-high heat. Cook, stirring, until the garlic is browned, 1 to 2 minutes. Add the squash and 1/2 teaspoon salt. Reduce the heat to medium, cover and cook, stirring occasionally, until the squash is very tender and starting to break down, 6 to 8 minutes.
  • Add 3/4 cup of the reserved cooking water to the squash and bring to a simmer. Cook, stirring and breaking up the squash with a wooden spoon, until the sauce is slightly thickened, about 1 minute. Add the pasta and toss until well coated. Add more cooking water to loosen, as needed. Season with salt.
  • Divide the pasta among bowls. Drizzle with more olive oil and sprinkle with the Parmesan.

3 tablespoons olive oil
1 large red bell pepper, cut into 1/2-inch dice
1 large yellow squash, quartered lengthwise, cut into 1/4-inch pieces
2 cloves garlic, thinly sliced
4 ounces sugar snap peas, strings removed, halved
6 asparagus spears, ends trimmed, cut into 1-inch pieces
2 tablespoons flour
1 teaspoon salt
2 cups milk
1 cup grape tomatoes, halved
1 cup grated Parmesan cheese, divided
⅓ cup chopped fresh basil
¼ cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees F. Spray a 9x13-inch baking dish with cooking spray.
  • Cook pasta according to package directions. Drain and transfer to a large bowl.
  • Meanwhile, heat oil in a large skillet over medium heat. Cook bell pepper, squash, and garlic, stirring occasionally, until pepper is crisp-tender, 7 to 10 minutes. Add snap peas and asparagus and cook, stirring, until asparagus is crisp-tender, 2 minutes more.

2 pounds assorted summer squashes and zucchini, quartered lengthwise, sliced

1 teaspoon Aleppo-style pepper, plus more for serving
12 ounces paccheri, ziti, or other large tube pasta
2 ounces Parmesan, grated (about 1/2 cup), plus more for serving
1 tablespoon fresh lemon juice
1/2 cup basil leaves

Steps:

  • Heat oil in a large skillet over medium. Cook garlic, stirring occasionally, until very lightly browned around the edges, about 4 minutes. Add squash; season with salt. Cook, tossing occasionally, until squash begins to break down and gets jammy (they may start to stick to the skillet a bit, which means you are there!), 12-15 minutes. Toss in 1 tsp. Aleppo-style pepper.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente.
  • Transfer pasta to skillet using a slotted spoon or spider and add 1/2 cup pasta cooking liquid. Cook pasta, adding 2 oz. Parmesan in stages along with more pasta cooking liquid as needed, until sauce coats pasta and pasta is al dente. Toss in lemon juice and most of the basil.
  • Divide pasta among bowls and top with more Parmesan and Aleppo-style pepper and remaining basil.
