SUMMER SAUTéED POTATOES

Steps:
- Place the potatoes in a large pan, cover with water and bring to the boil. Simmer for 5-8 mins until starting to soften but not falling apart. Drain and leave to steam-dry in the colander for a few mins.
- Heat the oil and butter in a large frying pan. Scrunch up the bay leaves in your hands and add them to the pan along with the whole garlic cloves. Once the potatoes are dry, tip into the pan and season. Toss them in the pan and cook over a medium-high heat for 20-25 mins, turning often, using a fish slice so you don't break them up.
- When the potatoes are crisp and golden, grate the lemon zest straight over and cook for 1-2 mins more. Taste for seasoning, then scatter with parsley and serve.

SAUTé POTATOES LYONNAISE
This is the basic method for making sauté potatoes, but if you prefer them plain, simply leave the onion out. The secret of really crisp sauté potatoes is, first of all, to use olive oil and, secondly, to use two or three frying pans so that the potatoes can cook in a single layer and not overlap each other.

- First thinly peel the potatoes and cut them into even-sized pieces - but not too small. Put them in a saucepan, cover them with boiling water, add some salt, bring to simmering point and cook for 15 minutes. Then drain them, arrange them on a wooden board and slice them thinly and evenly. For the next stage you need two medium frying pans and a small saucepan. Heat a tablespoon of olive oil in the saucepan, add the onion and fry gently. Now heat 2 tablespoons of oil in each frying pan and when it begins to sizzle, add the potatoes, dividing them between the pans so that they don't overlap. Fry them over a high heat, turning them after 5-7 minutes to cook on the other side until they are golden brown and crisp all over. Then, using a slotted spoon, transfer them to the crumpled paper to drain and scatter on the fried onion. Loosen the top of the pepper mill a little to get a really coarse grind and sprinkle over the potatoes; crush some rock salt between your finger and thumb and sprinkle on. Lastly pull out the paper from underneath and serve at once - if you delay, the potatoes will go soggy.
ROASTED, SMASHED AND LOADED POTATOES

- Preheat the oven to 450 degrees F. Adjust the oven racks to the top and bottom positions.
- Place the potatoes on a sheet pan, pour 3/4 cup water over the potatoes and cover tightly with foil. Bake on the bottom rack until tender, about 30 minutes. Remove from the oven, drain any remaining water and let rest 8 minutes.
- Drizzle 3 tablespoons oil over the potatoes, making sure they are evenly coasted. Space the potatoes evenly on the sheet pan and, using a potato masher, flatten the potatoes to about 1/2 inch thick (about 1/2 the length of your thumb to the first joint). Sprinkle with salt and pepper. Drizzle the remaining 3 tablespoons olive oil over the potatoes and roast on the top rack for 15 minutes. Remove from the oven and sprinkle with the cheese. Roast on the bottom rack until golden brown, about 20 minutes. Remove from the oven and top with the sour cream and scallions. Serve immediately.
SCALLOPED POTATOES

- Preheat the oven to 350 degrees F. Rub the garlic around the inside of an 8 by 8 by 2-inch casserole dish and let it dry. Reserve the remaining garlic. Rub the butter around the inside of the dish. Reserve the remaining butter.
- Peel and thinly slice the potatoes on a mandoline or vegetable slicer (about 1/8-inch-thick slices).
- In a medium saucepan, combine the garlic, butter, potatoes, half-and-half, salt, pepper to taste, and nutmeg. Bring to a boil, lower the heat to medium-high, and cook, stirring, until the mixture has thickened, about 5 minutes. Transfer the mixture to the prepared dish. Shake the pan so the potatoes are distributed evenly.
- Bake the potatoes, basting occasionally, until lightly browned and bubbly, about 1 hour. Remove from the oven and let cool for 10 minutes before serving.
CREAMY SCALLOPED POTATOES
This is a delicious side dish can be largely assembled ahead: Leave off the last portion of cheese, cover the dish with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate it for up to one day. Remove it 30 minutes before baking, sprinkle with the remaining cheese, and bake as instructed.

- Preheat oven to 375 degrees. Rub the bottom and sides of a 3-quart baking dish with garlic; reserve garlic. Brush pan generously with butter. Peel potatoes, then cut into 1/8-inch-thick rounds.
- Transfer potatoes and garlic to a large pot with cream, milk, thyme, 1 tablespoon salt, 1/2 teaspoon pepper, and nutmeg. Bring to a boil over high. Reduce heat to medium and simmer 1 minute. Let cool slightly, about 10 minutes.

- Heat a large skillet over medium heat and add 1 Tbsp butter and 2 Tbsp olive oil. Once butter is melted and hot, arrange potatoes in the skillet, cut-side-down in one layer. Cook uncovered and undisturbed 8-10 minutes or until golden brown crust forms on the bottoms.
- Turn potatoes then cover and cook another 5 minutes or until golden brown on the second side, you'll hear it spit and splatter under the lid; just be careful when you first lift of the lid as juices from the lid can dribble into the pan and splatter. Keep the wee ones away from the stove. In hind sight, a dutch oven with taller walls might have been a better choice to cook these.
- Turn the potatoes again, cover and cook another 5 minutes or until you can easily pierce potatoes with a knife. Remove from heat and sprinkle with salt & pepper (I used about 3/4 tsp salt and 1/8 tsp pepper), toss with 2 Tbsp chives. Sprinkle with more fresh chives just before serving and enjoy.
SAUTEED SUMMER SQUASH, ZUCCHINI & SWEET POTATOES WITH GARLIC BREADCRUMBS

- Cut 1 cup each zucchini, summer squash and sweet potatoes into cubes. Combine in a large bowl and toss with 2 tablespoons of extra virgin olive oil, Old Bay seasoning and 1 /2 teaspoon of fresh cracked black pepper and 1/4 Kosher salt.
- In a large skillet over medium heat add 1 tablespoon of extra virgin olive oil, when oil starts to smoke add zucchini, summer squash and sweet potato mixture. Cook over medium heat while stirring frequently. After 10 minutes turn heat to low and cover. Cook for an additional 10 - 15 minutes or until the tines of a fork can pierce the sweet potato cubes easily. Remove the lid and let stand uncovered for 5 minutes then spoon into a serving dish.
- In a food processor tear rustic white bread into pieces and add minced garlic. Pulse until you have uniform breadcrumbs. Set aside.
- In a medium skillet add 2 tablespoons of unsalted butter, when butter is melted add half of the breadcrumbs and stir until breadcrumbs are evenly toasted. Sprinkle over vegetable mixture.
- Add 2 more tablespoons of butter to skillet and toast remaining breadcrumbs. When finished sprinkle on vegetable mixture.
- Serve.
