6 layers of phyllo dough
1/2 cup sliced, pitted black olives
1 stick butter, melted
3 ripe tomatoes, thinly sliced
2 cups caramelized sliced onions
3/4 cup grated Parmesan cheese

Steps:

  • Butter a baking sheet with a brush. Lay down one layer of dough and brush with butter. Repeat process until all dough is layered and buttered. Fold in sides of rectangle to form a crust. Top with onions, olives, tomatoes and cheese. Bake at 375 for 30 minutes or until phyllo crust is golden brown.

olive oil flavored cooking spray
8 sheets frozen thawed phyllo pastry
2 cups shredded fat free mozzarella cheese
1/2 cup thinly sliced onion
1 lb tomatoes, thinly sliced
salt and pepper, to taste
1/4 cup grated parmesan cheese
3/4 teaspoon dried dill weed
1/2 teaspoon dried basil leaves

Steps:

  • Spray jelly roll pan with cooking spray; place sheet of phyllo on pan and spray generously with spray.
  • Repeat with remaining sheets phyllo.
  • Sprinkle mozzarella cheese and onion over phyllo; arrange tomato slices on top.
  • Sprinkle lightly with salt and pepper.
  • Sprinkle with Parmesan cheese and herbs.
  • Bake pizza at 375°F until phyllo is browned and cheese melted, about 15 minutes.

1/4 cup olive oil
2 cups onions, chopped
3 cloves garlic, minced
3 (10 ounce) packages frozen spinach, thawed and squeezed dry
1/2 cup fresh basil, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons lemon juice
1 teaspoon ground black pepper
20 sheets phyllo dough
1/2 cup butter, melted
4 cups mozzarella cheese, grated (1 pound)
3 medium tomatoes, sliced thin
2 cups feta cheese, crumbled
1 cup breadcrumbs

Steps:

  • In large skillet, heat oil over medium heat.
  • Add onion and garlic.
  • Sauté for 5 minutes or until onions are translucent.
  • Add spinach and sauté until all excess moisture has evaporated.
  • Add basil, oregano, lemon juice and pepper.
  • Mix well.
  • Cool slightly.
  • Prepare Phyllo pizza crust: Use 10 sheets of phyllo dough, brushing each with melted butter, margarine, oil or vegetable spray.
  • Use 1/4 cup butter.
  • Repeat this step.
  • Place length of phyllo across width of greased 15” x 10” x 1” cookie sheet or baking pan.
  • Overlap each set of 10 buttered phyllo sheets 5 inches at center.
  • Roll overlapping phyllo onto itself on cookie sheet to form “pizza crust.
  • ” Brush top layer with melted butter or olive oil and top with your favorite ingredients.
  • Spread spinach mixture on prepared phyllo sheets.
  • Top spinach with 1/2 of mozzarella.
  • Dredge tomatoes in bread crumbs and arrange on top of mozzarella.
  • Top with remaining mozzarella and feta cheese.
  • Bake in preheated 400°F oven for 25-30 minutes or until golden brown.

This is a recipe I adapted from Lex Culinaria (http://gorgeoustown.typepad.com/lex_culinaria/). It truly is a light, low carb, delicious summer dinner. I like to serve it with a wilted spinach salad and bacon vinaigrette.

6 sheets phyllo dough
1 large tomatoes, sliced 1/4-inch thick
1/4 cup parmesan cheese, finely grated
2/3 cup feta cheese, crumbled
12 leaves fresh basil
sea salt
fresh ground black pepper
olive oil
fresh basil (to garnish)

Steps:

  • Preheat oven to 400 degrees F.
  • In a 9" x 13" baking dish or on a baking sheet, lay out one piece of phyllo dough. Spray or brush a thin layer of olive oil covering the whole piece of phyllo.
  • Repeat until all 6 pieces are layered and coated with olive oil.
  • Sprinkle the Parmesan cheese over the phyllo, as evenly as possible.
  • Spread tomato slices out over the phyllo dough.
  • Tear the 12 leaves of basil and distribute evenly over the pizza.
  • Season with the sea salt and pepper.
  • If desired, drizzle with a little extra virgin olive oil.
  • Bake for about 15 minutes, or until feta begins to brown. Be sure to keep a watchful eye on it though, if the edges begin to brown too much before the feta is browned to your liking cover the edges with strips of foil to impede burning.
  • Garnish with fresh torn basil.

1/3 cup sundried tomato sauce
200 g feta cheese

Steps:

  • Preheat oven to 400.
  • Lightly brush a baking sheet with melted butter.
  • Place one sheet of phyllo on the baking sheet.
  • Lightly brush the phyllo sheet with butter and sprinkle with 1 TBSP Parmesean cheese Add onther sheet of phyllo and press down to adhere sheets together.
  • Repeat this process with remaining 8 sheets of phyllo, brushing the final top layer with butter Fold in all sides 1/4 inch to make a border, crimping the corners.
  • Spread sun dried tomato sauce over all and follow with the feta cheese and herbs Bake pizza on the middle rack of the oven until it is crisp and golden approx 12-15 minutes Remove from oven and let stand 6 minutes before serving.

7 sheets phyllo dough
5 tablespoons unsalted butter, melted
7 tablespoons freshly grated parmesan cheese
1 cup coarsely grated mozzarella cheese
1 cup very thinly sliced red onion
fresh thyme
1/2 teaspoon dried oregano, crumbled
fresh thyme sprig (to garnish)

Steps:

  • Preheat oven to 375 degrees.
  • Place phyllo between 2 sheets of waxed paper and cover with a damp towel to prevent drying out (VERY IMPORTANT).
  • Brush large cookie sheet with melted butter. Lay one sheet of phyllo on buttered sheet. Lightly brush top with melted butter. Sprinkle with 1 Tbsp parmesan. Lay on another sheet of phyllo and press so that it adheres to the first layer. Butter, sprinkle and layer remaining sheets of phyllo the same way, ending with a sheet of phyllo and reserving the last Tbsp parmesean.
  • Sprinkle top sheet of phyllo with mozzarella. Scatter onion evenly over the cheese. Arrange tomatoes in layer over onion. Sprinkle with thyme, oregano and remaining parmesan cheese.
  • Bake 20 to 30 minutes, watching that phyllo only browns and does not burn. Garnish with fresh thyme.
