1 1/2 pounds boneless skinless chicken breasts (or 4 chicken breasts)
2 garlic cloves finely minced
3 tablespoons olive oil
¼ cup cilantro (chopped)
Juice of 1 lime
1/2 tsp. cumin
½ tsp paprika
½ tsp salt (or to taste)
¼ tsp black pepper
2 avocados diced
2 small (or 1 large tomato) (chopped)
¼ cup red onion (chopped)
1 jalapeno (de-seeded and chopped (optional))
1/4 cup cilantro finely chopped
Juice of 1 lime
fresh cracked pepper & salt to taste

Steps:

  • In a large bowl, whisk all the ingredients for the marinade and set aside.
  • Pound the breasts to even thickness or slice in half horizontally to get evenly sized breasts and add to the bowl of marinade. Mix through until the chicken is fully coated in the marinade. Use right away if needed or marinate for 30-minutes or up to 12 hours.
  • Grill chicken over medium-high heat or in a large heavy-duty skillet on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.

2 lbs. Chicken Cutlets
Olive Oil Blended with Minced Garlic or Dried Parsley
Thyme and Basil
Juice of One Lemon
1/2 C White Wine
2 T Soy Sauce
Salsa:
2 Ripe Avocados (peeled, seeded, and cut into small cubes)
1/2 C Fresh Lime Juice
1 Large, Ripe Tomato (diced) or Grape Tomatoes (diced)
Small Can of Corn (drained)
1/2 Red Onion (chopped)
1/4 C Fresh Cilantro (chopped)
1/2 t. Salt
1 T Sugar
3 T Extra Virgin Olive Oil
Rice:
Make rice for chicken to lay on.

Steps:

  • Mix olive oil blend with thyme, basil, lemon juice, white wine and soy sauce in a bowl. Pour marinade over chicken cutlets and refrigerate for 1-2 hours. Place chicken cutlets directly on grill or use grilling pan. Whisk lime juice, olive oil, sugar and salt in a bowl until blended. Add avocados, tomatoes, corn, red onion and cilantro. Pour salsa over chicken and serve on rice. NOTE: Salsa can be chilled or served at room temperature.

12 cherry tomatoes, halved
1/4 cup red onion, finely chopped
1 jalapeno pepper, seeded and diced
2 tablespoons fresh cilantro, chopped
1/4 cup fresh lime juice
1/2 avocado
1/2 cup low-fat plain yogurt
1/2 small red onion
1/4 cup fresh lime juice
1/4 cup fresh cilantro
4 (4 ounce) boneless skinless chicken breasts
salt, to taste
fresh ground black pepper, to taste

Steps:

  • The first 6 ingredients are for the salsa. The next four ingredients are for the marinade.
  • For the salsa:
  • In a small bowl, combine the tomatoes, red onion, pepper and cilantro.
  • Chop the avocado and sprinkle it with 2 tablespoons of lime juice to keep it from browning.
  • Add the avocado and remaining lime juice to the bowl and toss to combine.
  • (This can be made in advance and stored in the refrigerator for up to 1 day.)
  • For the chicken:.
  • In a small food processor, puree the yogurt, red onion, lime juice and cilantro to make a yogurt marinade.
  • Transfer the marinade to a shallow bowl or a plastic bag.
  • Add the chicken and coat well with the marinade.
  • Refrigerate for 1 hour or up to 8 hours.
  • Preheat the grill to medium-high.
  • Remove the chicken from the marinade, discard the remaining marinade and season the chicken with salt and pepper.
  • Grill the chicken on both sides until it is cooked through, about 6 minutes per side.
  • Serve the chicken with tomato-avocado salsa.

I get a monthly recipe from eatchicken.com, and this one looked good! Made it last night and we all loved it. It doesn't say how long to marinate the chicken - mine was in it for about an hour. I pounded it some too. I also added a bit more to my salsa - (which was really like guacamole) some salt, lime juice and minced garlic. (Looking at this now, I think the salt was to be divided between the marinade and the salsa, but I used 2 teaspoons in the marinade and it was fine) This is going to become a summer staple - believe me!

7 ounces chipotle chiles in adobo
4 large garlic cloves
2 tablespoons vegetable oil
1 teaspoon kosher salt
3 small whole chickens, cut into halves or 3 small whole chickens, cut into quarters
3 ripe Hass avocadoes, pitted, peeled, and cut into 1/2 inch pieces

1 lime, juice of
1/3 cup finely diced white onion
3 fresh cilantro stems, stemmed and chipped

Steps:

  • In a food processor, puree the chipotles, garlic, oil, and salt. Wipe the chickens with paper towels. Thoroughly coat the pieces on all sides with a layer of the chipotle paste.
  • Place in a nonreative baking dish or in resealable bags and refrigerate for 2 hours, or as long as overnight.
  • Heat the grill to medium. With the lid open, grill the chicken on both sides until well marked but not burned- about 7 minutes per side.
