Sukuma Wiki- A healthy and economical braised collard greens full of flavor and Spice . Collard greens done right! Vegan or not!

1 kale bunch or collard greens
1-2 cups chopped or ground beef/chicken (optional)
3 medium tomatoes (diced )
1-2 teaspoons minced garlic
1 large white onion
2 or more tablespoons canola or cooking oil
1 Tablespoon smoked paprika
½ teaspoon coriander
1/2 teaspoon curry or turmeric spice
½ teaspoon cayenne pepper or more
½ juiced Lemon (about 1 tablespoon)
Tablespoon bouillon powder or cube

Steps:

  • In a medium- large skillet, add oil, onions, and garlic, and sauté, for about 2-3 minutes, stirring constantly to prevent any burns.
  • Then add, tomatoes , curry, coriander and paprika, and continue stirring with a heavy wooden spoon, about 2 minutes.
  • Add minced meat, bouillon powder; stir until ingredients have been thoroughly combine. Simmer for about 5 minutes or more. Throw in chopped collards, cayenne pepper, lemon juice, Continue cooking for another 5-10 minutes until flavors have blend and greens are cooked, according to preference. Adjust seasonings -Salt and pepper, turn off the heat.
  • Remove from the heat and let it cool. SERVE WITH UGALI.

3 tablespoons oil
1 onions, chopped or 1 minced onion
2 lbs kale or 2 lbs collard greens, destemmed and finely chopped
2 cups tomatoes, chopped
1 cup water or 1 cup stock
salt and pepper

Steps:

  • Heat the oil over med-high flame in a large, heavy-bottomed pot. Add the onion and saute until translucent. Add the greens in batches, sauteing each addition until wilted.
  • Add the tomatoes, water or stock, salt and pepper. Bring to a boil, then reduce heat to low and simmer gently until tender, from 20 to 30 minutes or done to your liking.
  • Adjust seasoning and serve with a little bit of the broth.
  • You can add a chopped chili pepper or two with the onions. If you like, add some leftover meat for more flavor.

A Kenyan vegetarian / side vegetable dish, which means "stretch the week" in Swahili. I became completely addicted to this while visiting Kenya. It is eaten with Ugali (I've posted that recipe separately), either on its own or (when it's to be had) with meat or fish. I love it on its own, and generally don't bother with meat if Sukuma Wiki is around! This is the easy, basic but less tasty version. If you're willing to put in a little bit more effort for a lot more flavour try Recipe #207540 which is a slightly more involved sukuma wikki that I've posted. Enjoy!

2 tablespoons oil
1 onion, chopped
1 tomatoes, chopped
1 bunch kale or 1 bunch greens, chopped
1/2 cup water
salt

Steps:

  • Heat oil in a frying pan and add the onions. Sauté about 2 to 4 minutes.
  • Add tomato and greens and sauté about 1 minute.
  • Add ½ cup water and then add salt to taste.
  • Let the mixture simmer until the sukuma is tender.
