SWEET APPLE FRITTERS
I grew up eating these apple fritters. They are shaped like a pancake and sprinkled in cinnamon-sugar. We always had this with dinner as a side dish. They are also easy to make for a crowd since you can fry them up in advance and then pop them into the oven just before dinner.

Steps:
- In a large bowl, beat eggs with milk, salt and sugar.
- Add flour and baking powder to egg mixture and mix until smooth.
- Preheat oven to 325 degrees.
- Peel and core apples.
- Slice 1/4 to 1/2" thick so that they are shaped liked doughnuts with the core hole in the center of each slice.
- Squeeze lemon juice over apples.
- Heat oil in large skillet.
- Dip apples in batter and let excess drip off, then brown on each side in skillet.
- Lay on a cookie sheet in a single layer.
- Sprinkle with cinnamon sugar.
- Bake for 30 minutes or until soft.

Cinnamon, cardamom, and freshly ground black pepper lend warm spice to these sweet apple fritters. Any firm apple works well here.

- Fit a wide heavy pot with candy thermometer. Pour in oil to a depth of 2" and heat over medium-high until thermometer registers 375ºF.
- Meanwhile, whisk flour, 1/4 cup sugar, 3/4 tsp. cinnamon, and 1 1/4 tsp. salt in a large bowl. Add beer in a slow, steady stream, whisking until smooth.
- Whisk pepper, cardamom, 1/8 tsp. salt, and remaining 3/4 cup sugar and 1/4 tsp. cinnamon in a medium bowl.
- Working with 4-5 slices at a time, dip apples in batter, shaking off excess. Fry until golden, about 1 1/2 minutes on each side. Transfer fritters with a slotted spoon to paper towels to drain. Immediately toss in spiced-sugar mixture and serve warm.

- In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the egg, milk, butter, orange juice, zest and vanilla. Add to dry ingredients just until moistened. Fold in apples., In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. - Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

- Stir in the milk, eggs, and oil until well combined.

- Drop spoonfuls of batter into the hot oil. Avoid overcrowding the pan. Fry until golden, about 2 1/2 minutes on each side.
- Using a slotted spoon, transfer fritters onto a plate lined with paper towels. Let the excess oil drain briefly.

- Whisk together the flour, confectioners' sugar, baking powder, cinnamon, allspice, salt and nutmeg in a large bowl. Pour in the cider and vanilla extract, and whisk to make a smooth batter.
- Preheat the oven to 200 degrees F.
- Pour enough oil into a heavy-bottomed soup pot so it comes about a third of the way up the sides. Heat the oil over medium heat until a deep-frying thermometer inserted in the oil registers 360 degrees F.
- Peel, core and slice the apples into rounds, about 1/3-inch thick. Put some flour in a shallow bowl. Working in batches, dust the apple slices in the flour, then dip in the batter to evenly coat.
