OLD FASHIONED SUGAR COOKIES II
My friend, Gloria gave me this recipe...she makes these cookies every year for her Christmas family get-togethers. I wanted to save this recipe to my Recipe Box. Nutmeg can be used in place of mace.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, stir together the flour, sugar, baking powder, salt and mace. Cut in the butter using a pastry blender or rub between your fingers. When butter pieces are no larger than pea size, stir in the egg, vanilla and heavy cream. Blend thoroughly. On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 5 to 8 minutes in the preheated oven, until the edges begin to brown. Remove from baking sheets to cool on wire racks. Cool completely before frosting.
- To make the frosting: In a medium bowl, beat the confectioners' sugar, 1/2 teaspoon vanilla, 1 1/2 tablespoons of cream and salt until smooth and creamy. Spread on top of cooled cookies. Let the frosting dry before storing or serving.

- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on high speed until light and fluffy, about 5 minutes. Add eggs, vanilla, and salt; mix on medium speed until combined. With mixer on low speed, add flour in 2 batches, mixing just until incorporated.
- Divide dough into 4 equal portions. Place each on a piece of plastic wrap; flatten into disks. Wrap in plastic wrap; refrigerate until firm, at least 2 hours or up to 1 week.
MACE COOKIES
Rolled cookies made with ground mace.

Steps:
- Combine flour, baking powder and mace. Set aside. Preheat oven to 375 degrees F (190 degrees C).
- In large bowl, cream shortening and sugar together. Beat in eggs, then beat in the milk and vanilla extract. Beat in lemon zest. Gradually blend in dry ingredients. Cover and chill for at least four hours.
- Roll out dough on floured surface to 1/8 inch thickness. Use a 2 inch round cookie cutter and cut into rounds. Place 1 inch apart on prepared cookie sheets.
- Bake for 10-12 minutes or until lightly colored. Cool on cookie racks.

SUGAR MACE COOKIES
A lovely sugar cookie that is perfumed with mace and that I add vanilla sugar to. Perfect all year round. Yield depends on the size that you make the cookies.

Steps:
- Cream sugar and butter.
- Add egg, milk, and vanilla; beat well.
- Stir together flour, baking powder, mace, and 1/2 teaspoon salt; blend into creamed mixture.
- Divide in half.
- Cover; chill 1 hour.
- Preheat oven to 375 degrees F.
- On lightly floured surface, roll each half to 1/8-inch thickness, if dough is too soft to roll and cut nicely knead in more flour, a little at a time, until it's a good consistency. .
- Cut with cookie cutters.
- Sprinkle with vanilla sugar if using.
- Bake on ungreased cookie sheet at for 7 to 8 minutes.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Grind the oats in a blender until resembling coarse flour.
- In a medium bowl, mash beans to a smooth paste. Stir in the white sugar, brown sugar and vanilla until well blended. Combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean mixture. Stir in the dates, coconut, raisins and walnuts. - Cut vanilla bean in half lengthwise.
- Carefully scrape out seeds, using a small sharp knife.
- Set seeds aside.
- Beat butter in a large mixing bowl at medium speed of an electric mixer until creamy.
- Gradually add vanilla sugar and vanilla bean seeds, beating until light and fluffy.
- Add egg and vanilla extract, mixing well.
- Combine flour,spices and salt,gradually add to butter mixture, beating until smooth.
- Divide dough into four.
- Wrap each in plastic wrap, and chill 1 hour.
- Roll each dough to 1/4" thickness on a lightly floured surface.
- Cut with 3" and 4" your favorite cookie cutters.
- Place on lightly greased cookie sheets.
- Bake at 350° for 8 to 10 minutes or until edges of cookies are lightly browned.
- Cool 1 minute on cookie sheets; remove to wire racks, and cool completely.
- Combine 1/2 cup white chocolate morsels and 1 tablespoon shortening in a 1-cup glass measure.
- Melt morsels according to package directions.
- Place cookies on a wire rack over wax paper.
- Pour or spread white chocolate mixture over each cookie, tilting cookie to coat completely.
- Sprinkle cookies with sparkling sugar.
- Let stand until frosting hardens.
- Repeat procedure with remaining white morsels, shortening, and sugar until all cookies are decorated.

- Beat until creamy.
- Slowly stir in sifted flour, baking soda, and cream of tartar.
