SUGAR-FREE COCONUT CAROB BARS
Easy-to-make, 6-ingredient coconut carob bars made without sugar or sweetener! A nutrient-rich, high-fat low-sugar treat with rich chocolate flavor.

- Add all ingredients to a food processor and blend to combine until completely smooth, scraping down sides as needed.
- Taste and adjust flavor as needed, adding more carob powder for "chocolate" flavor or sweetness, maca powder for caramel flavor, salt for saltiness, vanilla for vanilla flavor, or coconut butter for creaminess. If it appears too liquidy, add an additional 1 Tbsp (9 g // as recipe is written // adjust if altering batch size) coconut flour. You're looking for a pourable liquid, but not too watery.
- Pour into cupcake liner molds, a lined loaf pan, or silicone chocolate molds like these or these, and let cool until firm. Depending on the temperature of your home, they may solidify at room temperature. If not, carefully transfer to the refrigerator until firm. Then remove from molds and enjoy. Because coconut butter chilled has some texture, don't be worried if the tops of your bars have a bit of ridging to them - that's totally normal!
- Store in a sealed container in the refrigerator up to 2 weeks or in the freezer for 1 month or longer. Let thaw slightly before enjoying for best texture.

BANANA AND CAROB RUFFLES DOG TREAT
When Three Dog Bakery opened in Lee's Summit, MO, last year, it became the 47th location - a dream that seemed impossible 31 years ago, when the original Kansas City shop was the only canine bakery in the country. Far ahead of the trend, founders Mark Beckloff and Dan Dye started making dog food to help their rescue mutt, Gracie, who had stomach sensitivities. These doggie truffles are a longtime favorite.

- Make the cake base: Preheat the oven to 350˚. Coat a nonstick 8-inch round cake pan with cooking spray. Combine the water, diced and mashed bananas, 1/8 teaspoon vanilla, the egg and honey in a large bowl and whisk well. Whisk the whole-wheat flour with the baking powder in a separate bowl. Add to the banana mixture and mix well. Spread in the prepared pan.
- Bake until a toothpick inserted in the center of the cake comes out dry, 1 hour to 1 hour 15 minutes. Invert the cake onto a rack; let cool completely.
- Roughly break up the cooled cake and transfer to a food processor. Process into coarse crumbs.
- Make the frosting: Combine the cream cheese, carob powder and remaining 1 tablespoon vanilla in a large bowl. Beat with a mixer on medium-high speed until smooth, 1 to 2 minutes.
- Add the carob frosting to the crumb mixture and mix with a rubber spatula. Scoop into balls with a small dough scoop. Roll in carob powder, chopped peanuts or coconut. Refrigerate until ready to serve, or up to 5 days.
SUGAR FREE BANANA AND CAROB CAKE
My husband is allergic to sugar and chocolate! After I'd recovered from this shocking turn of events, I decided to adapt my famous (in my family!) chocolate and banana cake to be made with honey and carob powder. It's very quick to make, you don't need any special equipment, and the result is moist, gently sweet, and reasonably guilt-free! You can make little tweaks as you like - a teaspoon of cinnamon, a sprinkle of sultanas. Just remember if you add in any 'wet' ingredients (such as extra fresh fruit), it may help to add in a spoon or so of extra flour.

- Melt the butter and honey together, stirring over a low heat. Once the honey is all melted, take off the heat and let it cool.
- Sift the flour, carob powder and baking powder into a large mixing bowl and reserve.
- Mash the bananas in a separate bowl along with the almond and/or vanilla essence, and gently beat in the eggs. Add the butter and honey mixture (making sure it is not too hot, as that may begin to cook the eggs), and gently stir it all together.
- Gently fold the wet banana/egg/butter mix into the dry flour/carob mix until it's all incorporated.
- Pour the cake mix into a lightly greased and lined 18cm cake tin, and bake for around 25-30 minutes at 170C. Test it in a few places with a skewer - it's done if it comes out clean, but if you get some cake mix coming out, another 5 minutes or so. Make a cup of tea and enjoy!
SUGAR-FREE BANANA BREAD

- Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
- Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
- Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
- Children: Drizzle with agave syrup if using.

THE ULTIMATE CAROB CAKE
My son is allergic to chocolate so I spent several years perfecting the ultimate carob cake recipe. I have finally achieved it! Oh, and it also had to be Feingold friendly, since we are 100% feingold.

- For cake:
- Put oven on to 350°. Grease and flour two 8-inch cake pans.
- In a large bowl, mix together first five (dry) ingredients. Make well in bowl for wet ingredients.
- In a separate medium bowl, mix together oil, milk and eggs. Pour into the well in dry ingredients.
- As you begin to beat the batter, add the cup of hot coffee. Beat until well mixed then for two minutes on high.
- Pour into prepared pans. Bake for 30 minutes or until toothpick placed in center comes out dry.
- Cool for 10 minutes. Remove from pans and continue to cool on racks until completely cooled. Finish by icing with Buttercream that follows:.
- For Icing:
- Cream butter and shortening with mixer. Add vanilla extract.
- Gradually add confectioners' sugar while continually beating with mixer. Icing will seem dry.
- Add milk continually, mixing and scraping sides of bowl, until icing appears light and right consistancy for icing cake.
- Cover until you are ready to icing.
- Makes about 3 cups.
