SAUTEED BROCCOLINI AND GARLIC

Steps:
- In a large pot, bring 8 cups of water and the salt to a boil. Remove and discard the bottom third of the broccolini stems. If some stems are very thick, cut them in half lengthwise.
- When the water comes to a full boil, add the broccolini, return to a boil, and cook over high heat for 2 minutes, until the stalks are crisp tender. Drain and immediately immerse the broccolini in a large bowl filled with ice water to stop the cooking. Drain in a colander and set aside.
- Heat the oil in a saute pan. Add the garlic and cook over low heat, stirring occasionally, for 1 to 2 minutes. Add the broccolini and stir until heated through.
SAUTEED BROCCOLINI
Steps:
- Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water.
- Melt the butter in a large saute pan. Add the lemon zest and garlic and stir. Drain the broccolini and add it to the garlic mixture and heat for 2 minutes. Add the lemon juice, 1/2 teaspoon salt and the pepper, and toss well before serving.
SUGAR-DUSTED BANANA CAKE
Use the ripest bananas you can for this cake. All of the mixing for this cake must be done by hand with a wooden spoon.

- Grease and flour a 9-inch by 11-inch baking pan.
- Preheat the oven to 375 degrees F.
- All mixing must be done by hand with a wooden spoon.
- In a small bowl, mix all the dry ingredients except flour and granulated sugar.
- In a large mixing bowl, cream the granulated sugar and shortening.
- Add the dry ingredients (not the flour), the eggs, vanilla, and milk to the sugar and shortening mixture.
- Mix thoroughly.
- Add the smashed bananas and mix.
- Add the flour, continuing to mix.
- Pour in the batter and bake at 375°F for 25 minutes or until a knife through the center of the cake comes out dry.
- Cover with confectioners' sugar.
- Let cool and cover again with confectioners' sugar.

I wanted the flavors to carry through the whole meal. I encourage you to alter seasonings to your liking! I eat this broccoli straight out of the pan.

- Heat a frying pan on medium-low heat until pan is hot.
- Add oil and butter to cover bottom of pan (I dot the pan 3 times with oil and add just a little butter for flavor and swirl).
- Let oil heat up for 1-2 minutes.
- Add minced garlic. Let cook for one minute, stirring.
- Add broccoli to pan.
- Sprinkle fresh ground pepper, salt, and garlic power or desired spices on broccoli.

- Fill a pot with water and bring to a boil. Fill a large bowl or pot with half ice and half water. When the water comes to a boil, add the broccoli florets using a strainer with a handle if possible. Allow the broccoli to cook for 1 to 2 minutes until just tender. Immediately remove from the boiling water, using the strainer or draining, and transfer to bowl of ice to stop the cooking process. - Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil; add broccoli, cover, and steam until tender, 2 to 6 minutes. Let broccoli cool at room temperature until cool enough to touch.

SUGAR DUSTED CRANBERRIES
I wasn't sure how bitter, raw cranberries could turn into this tart-sweet holiday treat. They would be great year-round; however, you must start with fresh cranberries. The following is the original recipe. I had a 7.5 oz pkg of organic cranberries, so I reduced everything by a third. I also only had the ground versions of the cinnamon and cloves. It stilled turned out great, but I would use the whole versions next time.

- Combine cane sugar, cinnamon sticks, cloves and 3 cups of water in saucepan.
- Bring to a boil over medium heat. Simmer until sugar dissolves, stirring occasionally.
- Pour into a glass bowl, and stir in cranberries. Cover, and refrigerate 8 hours.
- Drain cranberries. Reserve liquid, straining out cinnamons sticks and cloves, for use as a syrup to add to Cosmos or Cape Cods.
- Toss cranberries with superfine sugar in large bowl until coated.
- Place on baking sheet lined with parchment paper.
- Let dry 2 hours.

- Tip the flour into a food processor. Cut the butter into small pieces and drop them into the bowl, then whizz until the mixture looks like breadcrumbs. Add the sugar, vanilla and egg yolks and whizz to a smooth dough.
- With your hands, roll the dough on a lightly floured surface into a sausage shape about 25cm/9in long and 5cm/2½in in diameter. Wrap the roll and chill for at least 1 hour. (The roll can be frozen for up to 6 weeks. To use, remove from the freezer and allow to thaw for one hour at room temperature so that the dough is soft enough to be sliced into biscuits.)
- Preheat the oven to 180C/gas 4/fan 160C and lightly grease 2 large baking sheets. Using a sharp knife, cut the dough into slices, each a generous 5mm/¼in thick, then arrange them on the greased baking sheets, spacing the biscuits slightly apart so they have a bit of room to spread as they cook.
- Bake for 20 minutes until the biscuits are just turning pale golden around the edges, then transfer to a wire rack to cool. Dust generously with icing sugar. The biscuits will keep fresh for up to one week stored in an airtight tin.
