Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Beat egg white and water together in a bowl using an electric mixer until frothy. Add walnuts to egg white mixture and stir until coated.
- Mix sugar, cinnamon, and salt together in a bowl; add to walnuts and stir until coated. Spread coated walnuts onto a baking sheet.
- Bake in the preheated oven, stirring every 15 minutes, until walnuts are fragrant and crisp, about 1 hour.

- Toss together sugar, cinnamon, and walnuts in large bowl. Place in 1 ½-quart casserole dish.
- Cut butter into 8 pieces and arrange on top.
- Cook on high in microwave for 5 to 6 minutes; stir and pour nuts onto a strip of foil. Toss to coat well. Serve warm or cold.

My Sister-In-Law makes these nuts for the holidays. They are so easy to make and will disappear quick, so make a couple batches, give them as gifts or simply put in a candy dish around the house during the holidays. So Yummy!

- Stir together 1st 3 ingredients until sugar melts.
- Cook to soft ball stage (236 degrees).
- add 1 tsp of vanilla.
- mix till mixture begins to thicken.
- Add 3 1/2 C walnuts or pecans stir till coated.
- turn out on greased platter or cookie sheet till cool.
- When cool enough to touch break them in pieces.

- Lightly grease a baking sheet. In a 1 quart glass measure, combine walnut halves, sugar, and water. Cook in microwave oven on high setting for 8 to 8 1/2 minutes, or until sugar has caramelized. Stir several times during cooking. Pour out onto prepared baking sheet, and separate into pieces. Let cool completely. store in an airtight container.

SUGARED WALNUTS
I got this recipe from a student's process speech more than 30 years ago, and I've never found one I like better. A great Christmas gift, especially if you have a low-cost source for the nuts.

Steps:
- Spread the walnuts out on a large cookie sheet; bake at 275° for about 15 minutes, stirring frequently.
- Remove from oven and set aside.
- Combine the sugar, water, cinnamon and salt in a 3 quart saucepan and cook to 236°, soft-ball stage, WITHOUT STIRRING. Note: Use a candy thermometer for exact temperature if at all possible. You get much better results.
- Remove from heat and stir in the vanilla and the nuts.
- Stir gently until the nuts are well coated and mixture has begun to cool down.
- Turn out onto a greased cookie sheet, separating any pieces that have clumped together.
- Cool completely.

- Preheat oven to 350 degrees. Combine sugar and salt in a large bowl.
- Bring a small saucepan of water to a boil. Add walnuts, and blanch 2 minutes. Drain, and immediately toss with sugar-salt mixture.
- Transfer walnuts to a rimmed baking sheet, and bake, stirring occasionally, until golden brown, about 10 minutes. Let cool.

I have not tried this recipe. I got this recipe from Linda's Low Carb. You can use any kind of nuts for this but you'll have to adjust the counts.

- In a small bowl, whisk the egg white with a fork until frothy. Whisk in all but the nuts until as well blended as possible. Add the nuts and stir to coat them with the egg white mixture.
- Spread the nuts on a foil-lined baking sheet that's been sprayed with cooking spray. Bake at 325º for 15-20 minutes until the coating has set and becomes crisp.
- Cool then break apart before eating. Store in an airtight container at room temperature.
- COCOA COATED NUTS VARIATION:.
- 2 ounces pecans, about 3/4 cup *.
- 2 ounces almonds, about 3/4 cup *.
- 1 egg white.
- Generous pinch salt.
- 1/8 teaspoon vanilla.
- 1/2 cup granular Splenda or equivalent liquid Splenda.
- 2 tablespoons cocoa, sifted.
- In a small bowl, whisk the egg white with a fork until frothy. Whisk in all but the nuts until as well blended as possible. The mixture will be very thick and almost dry. Add the nuts and stir with a rubber spatula until they are well coated. Spread the nuts on a nonstick foil lined baking sheet. Bake at 325º for 15-20 minutes until the coating has set and becomes crisp. Cool then break apart before eating. Store in an airtight container at room temperature.
- Makes 4 servings or about 4 1/2 ounces.

DAWN'S CANDIED WALNUTS

- Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.
- Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). Remove from heat, and stir in vanilla immediately. .
- Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

CINNAMON-SUGARED WALNUTS
Steps:
- Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil.
- Spread the walnuts out on the prepared baking sheet and roast for 5 minutes. Let cool, then transfer to a bowl. Lightly coat the aluminum foil with canola oil.
- In a second bowl, combine the corn syrup, maple syrup, brown sugar, cinnamon and salt. Stir to combine, breaking up any lumps of cinnamon. Add the walnuts and toss to coat thoroughly. Pour the walnuts onto the oiled baking sheet.
- Bake, stirring occasionally, until the walnuts are golden brown, 12 to 15 minutes. Remove from the oven and let cool. Sprinkle over desserts, or serve with cheese or as a snack.
