Steps:

  • In a large heavy saucepan, combine the peanuts, sugar and water. Bring to a boil; cook until syrup has evaporated, about 10 minutes. , Spread peanuts in a single layer in a greased 15x10x1-in. baking pan; sprinkle with salt. , Bake at 300° for 30-35 minutes or until dry and lightly browned. Cool completely. Store in an airtight container.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan over medium heat, combine sugar and water. Bring to a boil, and stir until sugar is dissolved. Add peanuts, and cook stirring, over medium heat until peanuts are evenly coated, and no syrup is left in pan. Spread nuts out on a baking sheet.
  • Bake in preheated oven for 20 minutes, stirring every 5 minutes to evenly roast peanuts.

2 cups unsalted roasted peanuts (10 ounces)
1 cup sugar
1/3 cup water
Coarse salt

Steps:

  • Heat peanuts, sugar, and water in a 12-inch skillet over medium heat, stirring occasionally, until sugar is grainy and crystallized, 15 to 18 minutes. (Sugar should not caramelize.)
  • Raise heat to medium-high, and continue to cook, stirring constantly, until sugar just starts to melt again. (Sugar will start to caramelize. Adjust heat if sugar begins to burn or smoke.) Sprinkle with 1 1/2 teaspoons salt. Once peanuts are coated, with some crystallized sugar remaining, transfer to a parchment-lined baking sheet; spread into a single layer using a rubber spatula.
  • Transfer sheet to a wire rack, and let stand until cool and hardened, about 30 minutes.

This is the result and they were a hit. 'Addictive' was the word most people used. Would be a great gift to give out during the holidays.

1 cup white sugar
½ cup water
2 cups raw peanuts
1 ½ teaspoons chipotle chile powder
1 teaspoon kosher salt
¼ teaspoon chili powder
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Stir sugar into water in a saucepan over medium heat; cook and stir until the sugar dissolves completely. Add peanuts, chipotle chile powder, kosher salt, chili powder, and garlic powder into the liquid.
  • Bring the mixture to a boil and cook, stirring constantly, until the liquid evaporates and the remaining syrup coats the nuts, about 15 minutes; spread immediately onto the prepared baking sheet. Use forks to separate any peanuts stuck together and to get an even layer.

1 tablespoon maple flavoring
4-1/2 cups raw Spanish peanuts with skins
1/2 teaspoon salt

Steps:

  • In a large saucepan, combine the first four ingredients. Cook and stir over medium heat for 20 minutes or until almost all of the liquid is absorbed. Spread into a greased 15x10x1-in. baking pan; sprinkle with salt., Bake at 350° for 24-26 minutes or until peanuts are well coated, stirring two to three times. Remove to a waxed paper-lined baking sheet to cool completely. Store in an airtight container.

4 cups unsalted peanuts

Steps:

  • Preheat oven to 300 degrees F.
  • Combine water and sugar in a saucepan. Bring to a boil, and stir until sugar is dissolved, to make a syrup.
  • Add peanuts. Continue to cook over medium heat, stirring regularly, until peanuts are evenly coated, and no syrup is left in pan.
  • Spread nuts out on baking sheets. Bake at 300 degrees F for about thirty minutes to one hour or until sugar is completely dried. Gently stir the peanuts a few times while baking. Remove from oven and place on paper towels, let cool, and store in airtight containers.

Here is what was stated about the recipe: "Candied peanuts - or caramelized peanuts - are a popular Moroccan snack sold by street vendors and small shops which also offer roasted hummus, nuts, sunflower seeds, and other treats. Caramelized peanuts are fairly easy to make at home, but you'll need to be patient and work over a low heat to avoid burning the sugar as it caramelizes." I definitely recommend the addition of the salt if you want a sweet and salty peanut.

2 cups raw peanuts, with skin
1 cup sugar
1/3 cup water
1 pinch salt (optional, but I will add more then a pinch for that sweet or salty combo)

Steps:

  • Combine the sugar and water in a skillet. Cook over medium heat, stirring constantly, until the mixture thickens into a syrup.
  • Add the peanuts and continue stirring for about 10 minutes, or until the liquids evaporate and a sandy-textured sugar mixture coats the peanuts.
  • Lower the heat and continue stirring as the excess sugar in the pan begins to melt. This will take another several minutes. Once the syrup begins to form, it will turn from clear to golden to amber. Stir constantly, and be careful that the heat is not so high as to burn or darken the syrup too much.
  • When the syrup is a medium amber color and the sugary coating on the peanuts has glazed, add the salt if using and turn the peanuts out into your prepared pan. Spread the candied peanuts into a single layer to cool.
  • Be sure the caramelized peanuts are completely cool before storing in an airtight container.
