SLOPPY JOES
These smoky, spicy Sloppy Joes are made completely from scratch -- no ketchup or seasoning packets -- and they make an easy weeknight dinner.

Steps:
- In a medium bowl, using your hands, mash the beef with the baking soda. Let it sit on the counter for 20 to 25 minutes to tenderize.
- Preheat the oven to 350°F and set a rack in the middle position.
- Heat the butter in a large skillet over medium heat until bubbling. Add the onion, bell pepper, and garlic and cook, stirring frequently, until softened, 4 to 6 minutes.
- Add the beef, salt, pepper, smoked paprika, cumin, oregano, and dry mustard and cook, breaking up meat with wooden spoon, until mostly brown, about 3 minutes. Add the tomato sauce, tomato paste, Worcestershire sauce, and hot sauce. Reduce the heat and simmer, uncovered, until the sauce is thickened, about 10 minutes.
- Meanwhile, butter the inside of the buns and place on a baking sheet, butter side up. Toast in the oven until warmed through and lightly crispy, about 5 minutes.
- Taste the sloppy Joe mixture and adjust seasonings. (If you like your Sloppy Joes sweet, feel free to add 1 teaspoon of brown sugar.) Spoon the mixture onto the toasted hamburger buns and serve.
- Freezer-Friendly Instructions: The meat mixture can be frozen for up to 3 months and reheated in the microwave om on the stovetop until hot.

THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

Steps:
- Melt butter in a large pot over high heat.
- Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
- Add capsicum and cook for 2 minutes until softened.
- Add beef and cook, breaking it up as you go, until it changes from red to brown.
- Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
- Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
- Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
- Toast rolls. Butter if desired (I don't).
- Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

This is a classic what some might call BBQ sandwiches. While true BBQ afficianados will certainly deny it the term BBQ, it's sweet tomatoey , beefy tang is always an easy crowd pleaser. Besides being delicious on a bun, it's a wonderful topper for baked potatoes.

- In hot Dutch oven, brown arm roast in oil.
- Cover and simmer for 1 1/2 hours adding water if necessary (if lid fits well, adding water shouldn't be necessary).
- Add onion and garlic and continue simmering for 1 hour, oruntil beef is fork tender.
- With two forks, break meat into coarse shreds and chunks.
- Add remaining ingredients, bring back to a simmer.
- Cover and simmer 1 hour.
- Grill lightly buttered hamburger buns and pile on the meat.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
