PERFECT ROAST BEEF
A simple way to roast topside of beef to ensure it's super succulent, every time

- Remove the beef from the fridge 30 minutes before you want to cook it, to let it come up to room temperature.
- Preheat the oven to 240°C/475°F/ gas 9.
- Wash and roughly chop the vegetables - there's no need to peel them. Break the garlic bulb into cloves, leaving them unpeeled.
- Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with oil.
- Drizzle the beef with oil and season well with sea salt and black pepper, then rub all over the meat. Place the beef on top of the vegetables.
- Place the tray in the oven, then turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well done, leave it in for another 10 to 15 minutes.
- If you're doing roast potatoes and veggies, this is the time to crack on with them - get them into the oven for the last 45 minutes of cooking.
- Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them from burning.
- When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so. Cover it with a layer of tin foil and a tea towel and leave aside while you make your gravy, horseradish sauce and Yorkshire puddings.

Steps:
- 1. Marinate the beef overnight in one cup red wine, one cup beef broth, and garlic cloves.
- 2. Preheat oven 450 degrees. Place roast in roaster pan with marinate and bake for 10 minutes. Reduce heat to 275 degrees cover with foil and bake for 2 hours.
- 3. Remove roast from drippings. Place dripping in sauce pan adding the other cup of red wine and beef broth. Add beef bouillon. Bring to a boil and reduce by half. Stir in butter and serve over meat.

- Preheat the oven to its highest setting.
- Rub the beef with the olive oil, salt and pepper all over.
- Put a heavy-based roasting tray on the hob and when hot, add the beef.
- Sear the beef quickly on all sides to colour and crisp the outside.
- Transfer the beef immediately to the oven and leave the oven on its highest setting (about 240C/460F/Gas 8) for 20 minutes.
- Reduce the heat to 190C/375F/Gas 5 and roast for half an hour per kilo for rare, adding another ten minutes per kilo for medium rare, 20 minutes per kilo for medium, and 30 minutes per kilo for well done.
- Remove the beef from the oven, transfer it to a carving board and cover with foil. Allow it to rest in a warm place for 30 minutes.
- For the Yorkshire pudding, mix together the eggs, flour and a pinch of salt.
- Add the milk, stirring constantly, until you have a runny batter.
- Leave this to rest, covered, in the refrigerator for up to 12 hours.
- Place 1cm/½in of beef dripping in the bottom of each pudding mould, or if you are using a rectangular roasting tray, place 1cm/½in of beef dripping across the bottom.
- Heat the dripping in the oven (at 240C/460F/Gas 8) for about ten minutes, until it is piping hot.
- Remove the roasting tray from the oven, pour in the batter, and immediately return to the oven. Bake for 25 minutes, until golden brown and crispy, making sure not to open the oven door for the first 20 minutes.
- Serve immediately with the carved roast beef.
STUFFED BEEF ROAST WITH RED WINE SAUCE
Succulent roast beef with a delicious stuffing flavoured with horseradish and bacon, paired beutifully with an au jus-like wine sauce.

Steps:
- saute onion in oil over medium-high heat, for 5 to 10 minutes, stirring often.
- Add bacon. Cook for about 5 minutes until bacon is crisp. Do not drain.
- Combine bread crumbs, parsley, horseradish, and pepper. Add the bacon and onions and mix well.
- Cut a deep pocket into the long side of the roast, almost all the way through.
- Spoon stuffing into pocket. Tie with butcher string at 1 inch intervals.
- Place on rack in roasting pan. Pour water into bottom of pan.
- Roast uncovered, in 350 oven for about 1 3/4 hours until meat thermometer reads 155 for medium, or until desired doneness.
- Let stand, tented with foil, for 15 minutes before cutting into 1/2 inch slices.
- Red Wine Sauce:.
- Drain all but 2 Tbs drippings from roasting pan. Put in sauce pan and wisk in flour until smooth.
- Heat and stir for 1 minute.
- Add broth, wine, horseradish, salt and pepper. Cook for about 10 minutes until boiling and thickened. Strain.
- Serve over slices of beef.

- Dredge pot-roast in flour; brown all sides in cooking oil in Dutch oven.
- Slip rack under meat; sprinkle with salt and pepper.
- Add water, garlic, onion, tomato sauce, bay leaf and thyme.
- Cover and cook in slow oven (325 degrees F.) 3 1/2 hours or until tender.
- Cook sliced mushrooms in butter in small frying-pan until tender and golden.
- When meat is tender, remove to cutting board.
- Remove bay leaf.
- Thicken cooking liquid with 2 T flour combined with 1/4 c water, if desired.
- Add mushrooms and sour cream to cooking liquid; cook over moderate heat but do not allow to boil.
- Slice beef; serve with hot buttered noodles sprinkled with paprika.
- Pass our cream sauce separately.

- Set the oven to 190°C/375°F/Gas Mark 5. Mix the peppercorns and mustard powder with 2 tablespoons of the oil and rub the paste over the surface of the meat.
- Tuck some sprigs of thyme under the string or elastic around the meat.
- Put the onion in a roasting tin, and place the beef on top. Drizzle with the rest of the olive oil. Roast in the centre of the oven for about 15 mins per 500g if you want it medium-rare, or 20 mins per 500g if you prefer it medium to well cooked.
