SAUCE:
2 cups broccoli florets
8 ounces linguine or spaghetti
3 tablespoons peanut butter
2 tablespoons soy sauce
3/4 tablespoon lime juice
1 tablespoon sesame oil
1-2 garlic cloves, minced
Crushed red chili flakes, as much as you like
2 tablespoons chopped green onion or cilantro or parsley for garnish

Steps:

  • In a large pot, bring plenty of salted water to a boil. While water is coming to a boil, work on the sauce. Place all sauce ingredients (peanut butter through red chili flakes) in a bowl. Add 3 tablespoons of water, and whisk everything together till a sauce forms. Set aside. When the water boils, add the broccoli florets and continue boiling till the broccoli is bright green and crisp-tender, about 1 minute. Using a slotted spoon, remove the broccoli from the water and place in a wok. Bring the same water back to a boil. Then add pasta to the water and cook according to package instructions. Make sure you don't over cook the pasta. Drain well. Add the drained pasta to the wok with broccoli. Pour the peanut sauce all over the pasta and toss well. Taste the pasta, if it needs more salt, add soy sauce half a tablespoon at a time, tossing and tasting as you go. Garnish with chopped green onions, cilantro or parsley. Serve warm or cold. Broccoli is easy to chop, and cooks very quickly, so it's perfect in this easy, fuss free recipe. But If you want to add other vegetables to this noodle dish, here are some suggestions. Just make sure the total amount of vegetables is about 3 cups. - Shredded raw cabbage - Shredded carrots - Chopped cucumber - Red peppers cut into strips - Bean sprouts - Wilted kale - Baby corn - Fried tofu cubes

1 bunch green onions, sliced (white parts only)
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
⅓ cup peanut butter
¼ cup soy sauce
¼ cup hot water
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon crushed red pepper flakes

Steps:

  • Cook pasta in a large pot of boiling water until done. Drain.
  • Meanwhile, combine oil and onions in a small skillet. Saute over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove from heat.
  • Toss noodles with sauce, and serve.

This dish comes together quickly when one person prepares the sauce while another sautes the vegetables. Break the pasta in half before cooking to make serving easier. These noodles complement the pork perfectly, but they also become their own main dish when you add cooked shrimp or chicken.

2 carrots, peeled
1 tablespoon vegetable oil, divided
2 teaspoons grated peeled fresh ginger
3 garlic cloves, minced
1 cup fat-free, less-sodium chicken broth
1/2 cup natural-style peanut butter
1/4 cup low-sodium soy sauce
3 tablespoons rice or white wine vinegar
1 teaspoon chili garlic sauce (such as Lee Kum Kee)
1/4 teaspoon salt
cooking spray
2 cups red bell pepper strips
1 pound snow peas, trimmed
8 cups hot cooked linguine (about 1 pound uncooked pasta)
1/2 cup chopped fresh cilantro

Steps:

  • Shave the carrots lengthwise into thin strips using a vegetable peeler, and set aside. Heat 1 teaspoon oil in a small saucepan over medium heat. Add the ginger and minced garlic; saute 30 seconds. Add chicken broth and the next 5 ingredients (broth through salt); stir until well-blended. Reduce heat, and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas; saute 5 minutes or until tender. Remove from heat. Combine carrot, peanut butter mixture, bell pepper mixture, and linguine in a large bowl; toss well. Sprinkle with cilantro. Serve warm or at room temperature.

This is so easy and such a hit with kids! Compliments vegetables, chicken and tofu. I prefer to make this with crunchy peanut butter and whole wheat spaghetti. If you prefer more heat add more grated ginger or hot red pepper flakes to taste. I sometimes make an asian sauce on the side using the vinegar, soy sauce, sesame oil, ginger and garlic. Also powdered spices can be substituted. For very small children this can be made with simply peanut butter and water - they'll love it!

2 (3 ounce) packages ramen noodles, any flavor (you'll throw out the flavor packets anyway)
1/3 cup creamy peanut butter
1 garlic clove, crushed
1 tablespoon soy sauce
1 fresh lime, juice of (don't substitute lemon, don't use that fake lime stuff in a bottle)
red pepper flakes
2 carrots, shredded
1 red peppers or 1 yellow pepper, julienned
1 -2 scallion, julienned (green onions)

Steps:

  • Break up noodles in the package into smaller pieces. Throw away flavor packets (you don't need the sodium). Cook in boiling water for two minutes or until al dente and then drain.
  • Combine the peanut butter, garlic, soy sauce and lime juice. Add red pepper flakes to your preference. Stir or whisk until smooth.
  • Add the carrots, red pepper and scallions.
  • Pour over the noodles. You can substitute whatever vegetables you have on hand, if you have a can of water chestnuts or ½ a bag of bean sprouts or some celery that works too.
