HERB STUFFED TOMATOES

5 beefsteak tomatoes
1 cup chopped flat-leaf parsley leaves
3/4 cup Italian-style bread crumbs
1 cup grated provolone
1/4 teaspoon freshly ground black pepper
1 teaspoon butter, softened
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tomatoes in half, horizontally. Use a small spoon to gently hollow out the inside of the tomatoes, discarding the seeds and reserving the pulp and being careful not to puncture the outer shell. Chop the reserved pulp and put in a medium bowl. Add the parsley, bread crumbs, cheese, and pepper and mix gently to combine. Place the tomato halves in a buttered casserole dish, and fill with the bread crumb mixture. Drizzle the top of the tomatoes with olive oil. Bake until the tops are browned, about 20 minutes.

2 vine-ripened tomatoes
Salt
1/2 cup bread crumbs
1 clove garlic, minced
1/4 cup finely chopped fresh basil leaves
Freshly ground black pepper
1/2 cup grated Parmesan
1/4 cup olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Slice tomatoes in half horizontally and scoop out pulp and seeds. Salt insides and rest upside down on a sheet pan lined with a wire rack to extract juices, about 15 minutes. Meanwhile, in a medium bowl, mix together bread crumbs, garlic, basil, pepper, 1/4 cup of the grated Parmesan and oil. Stuff tomatoes with the filling, sprinkle with remaining Parmesan, and bake until tomatoes are cooked through and tops are golden brown, about 30 minutes.

2 large ripe tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
  • Bake in preheated oven for 15 minutes.

1 cup chopped onion
1 garlic clove, minced
1 tablespoon plus 2 teaspoons butter, divided
1/4 cup plus 1 tablespoon seasoned bread crumbs
2 tablespoons grated Parmesan cheese
4 large tomatoes, halved
1 tablespoon chopped fresh basil
1 tablespoon minced fresh parsley

Steps:

  • In a small skillet, saute onion and garlic in 1 tablespoon butter until tender. Melt remaining butter. In a small bowl, combine the onion mixture, bread crumbs, cheese and melted butter. Spoon 2 tablespoons onto each tomato half., Place on a baking sheet. Broil 8 in. from the heat for 4-5 minutes or until lightly browned. Sprinkle with basil and parsley. Serve immediately.

1 slice day-old bread
1 tsp chopped thyme
1 tbsp snipped chive or chopped parsley
1 tbsp olive oil
garlic clove , crushed
4 large tomatoes
4 tsp wholegrain mustard

Steps:

  • A big platter of these tomatoes goes well with grilled meat or fish, or serve them as a starter with cured meats and crusty bread.
  • Heat oven to 200C/fan 180C/gas 6. Toast the bread, then remove the crusts and break it up into the food processor to make crumbs. Add the thyme, chives or parsley, oil and garlic, then pulse briefly to mix.
  • Halve the tomatoes and put in one layer in a shallow ovenproof dish. Spread each cut side with a little mustard, then sprinkle a little of the crumb mix on the top. Bake for 15-20 mins until the topping is crunchy and lightly browned.

This recipe also came from the "Eating Well" magazine, 2005. This recipe is an excellent variation for the tomato. It is delicious! I modified the recipe for posting purposes.

4 ounces ground beef
1 cup cooked brown rice or 1/2 cup instant brown rice
4 large tomatoes
1/2 teaspoon kosher salt, divided
black pepper, to taste
1/2 cup green peas (cooked, if fresh, thawed, but not cooked, if frozen)
1/4 cup red onion, minced
1/2 cup parmesan cheese, grated, divided
1 tablespoon parsley, minced
1 cup breadcrumbs
2 tablespoons extra virgin olive oil
1 small garlic clove, minced

Steps:

  • Preheat oven to 350 degrees. Coat an 8-inch square baking dish with cooking spray. Cook ground beef in a skillet over medium-high heat, breaking up pieces, until done.
  • Pour into a large bowl.
  • If using cooked rice, go to Step 4. To prepare instant brown rice, bring ½ cup water to a boil, reduce heat to low, cover and simmer for 5 minutes. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork.
  • Add cooked rice to the bowl with the meat.
  • Meanwhile, cut enough off the top of each tomato to remove the core (1/2 to 1 inch). Scoop out the inside of the tomato using a teaspoon. Finely chop ½ cup of the pulp and add to the bowl with the rice and meat. Season the inside of the tomatoes with ¼ teaspoon salt and pepper.
  • Add peas, onion, ¼ cup cheese, parsley, the remaining ¼ teaspoon salt and pepper to the rice mixture. Stir to combine. Divide the mixture evenly among the tomatoes and place the tomatoes in the prepared baking dish. Combine the remaining ¼ cup cheese, breadcrumbs, oil, and garlic in a small bowl. Sprinkle the mixture on top of the tomatoes.
  • Bake the tomatoes until the crumbs are golden brown and the tomatoes are soft, 25 to 30 minutes. Serve immediately. Makes 4 servings.

1 cup dried morel mushrooms
1 cup dried chanterelle mushrooms
1 cup dried shiitake mushrooms
1 cup warm water
3 cups white wine
6 medium tomatoes, cored, seeded plus 1 tomato, chopped
1/2 teaspoon salt
2 tablespoons olive oil
2 tablespoons minced shallots
1 tablespoon minced garlic
1 cup finely diced onion
1 1/4 cup panko crumbs (Japanese)
1/4 teaspoon pepper
3 1/2 ounces goat cheese, room temperature
1 tablespoon chopped fresh parsley leaves

Steps:

  • Put mushrooms, water, and wine into a container and soak until mushrooms are rehydrated. Remove mushrooms and squeeze out excess liquid. Reserve the liquid. Roughly chop mushrooms.
  • Sprinkle the cored and seeded tomatoes with salt and place upside down to drain. In a saute pan heat 2 tablespoons of olive oil and add shallots, garlic, and onion. Cook until translucent. Add mushrooms and cook for about 5 minutes then add 1/2 cup of the reserved mushroom liquid to pan and cook for another 4 or 5 minutes, or until most of liquid is absorbed. Add the panko and the chopped tomato and stir to combine. Season the mushroom mixture with salt and pepper and remove from heat.
  • Preheat the broiler. Mix together the room temperature goat cheese and parsley and reserve. Stuff each tomato with the mushroom stuffing and top with thin layer of goat cheese mixture. Place tomatoes on a baking sheet and put under the broiler for 2 to 3 minutes until cheese is slightly melted and golden.

1 cup cooked brown rice
4 large ripe but firm tomatoes (about 8 ounces each)
1/2 teaspoon kosher salt, divided
fresh ground pepper
1/2 cup tiny peas (cooked, if fresh, thawed, but not cooked, if frozen)
1/4 cup minced red onion
1/2 cup grated parmigiano-reggiano cheese, divided
1 tablespoon minced flat leaf parsley
1 cup breadcrumbs made from day-old whole wheat bread (see Tip)
2 tablespoons extra virgin olive oil
1 small garlic clove, minced

Steps:

  • Cooking Directions.
  • Preheat oven to 350 degrees F. Coat an 8-inch-square baking dish with cooking spray.
  • Cook ground beef or turkey in a small skillet over medium-high heat, crumbling with a spoon, until brown and cooked through, 1 to 2 minutes. Transfer to a large bowl.
  • Add cooked rice to the bowl with the meat.
  • Meanwhile, slice enough off the top of each tomato to remove the core (1/2 to 1 inch). Scoop out the tomato pulp using a teaspoon or melon baller. Finely chop 1/2 cup of the pulp and add to the bowl with the rice and meat. (Reserve the remaining pulp for another use; see Kitchen Tips.)
