3 strips bacon
6 large mushrooms
1 tablespoon butter
½ onion, diced
1 clove garlic, sliced
3 ounces cream cheese
3 ounces blue cheese
⅓ cup bread crumbs

Steps:

  • Cook bacon strips in a large skillet over medium heat until crispy; drain on paper towels. While the bacon is cooking, remove stems from mushrooms. Set caps aside, and chop stems.
  • Add butter to skillet with bacon grease. When melted, stir in mushroom stems, onion, and garlic. Cook, stirring frequently until the onions caramelize, 15 to 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a small baking dish with cooking spray.
  • Once the onion mixture has reached a deep, rich brown color, place into a blender along with bacon, cream cheese, blue cheese, and bread crumbs. Blend on low until ingredients are roughly chopped and evenly combined. Stuff cheese mixture into mushroom caps and place into prepared baking dish.
  • Bake in preheated oven until bubbly and lightly browned, 10 to 15 minutes.

12 whole fresh mushrooms, tough ends trimmed
1 tablespoon vegetable oil
1 tablespoon minced garlic
1 (8 ounce) package cream cheese, softened
¼ cup grated Parmesan cheese
¼ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a baking sheet with cooking spray.
  • Clean mushrooms with a damp paper towel. Carefully break stems from mushrooms. Chop stems extremely fine.
  • Heat oil in a large skillet over medium heat. Fry chopped mushroom stems and garlic in hot oil until any moisture has disappeared, taking care not to burn the garlic, 3 to 5 minutes. Spread mushroom mixture into a bowl to cool completely, about 10 minutes.
  • Stir cream cheese, Parmesan cheese, black pepper, onion powder, and cayenne pepper with the mushroom stems and garlic until very thick and completely mixed. Use a small spoon fill each mushroom cap with a generous amount of stuffing. Arrange stuffed mushrooms onto the prepared cookie sheet.
  • Bake in preheated oven until piping hot and liquid starts to form under the caps, about 20 minutes.

25 portabella mushrooms
1/4 cup diced red onion
1 tsp minced garlic
3/4 cup breadcrumbs
1/3 cup blue cheese
1 tsp parsley flakes
1 tsp salt

Steps:

  • Pop the stems off of your mushrooms and place the caps open end up on a lightly greased 9×13 baking dish. Save the stems and dice them up as small as you can and set aside.
  • In a pan on medium heat, saute your red onion and garlic until soft, about 5 minutes. Add your diced stems and cook until soft, another 5-8 minutes.
  • In a separate bowl, mix your blue cheese and 1/2 cup of your bread crumbs. Add your cooked onion mixture to the bowl and mix. Add 1 tsp parsley, 1 tsp salt, and it's ready to fill.
  • With a spoon, add your filling to each of the mushroom caps in a mound shape. Sprinkle the remaining 1/4 cup of breadcrumbs to the top of each mushroom, giving it a little crunch when baked.
  • Bake your dish in a pre-heated 400 degree oven for 20-25 minutes, until soft and darker. Be aware, they shrink.
  • Let them cool just a bit, but not too long as they are better served warm.

2 teaspoons olive oil

100 g/3.5 oz crumbled feta cheese ((or crumbly goat cheese/ricotta))
100 g/3.5 oz crumbled Roquefort cheese ((or your favorite blue cheese))
1/4 cup breadcrumbs
1/3 cup coarsely chopped pecans
2-4 tablespoons chopped fresh basil
1 tablespoon good quality olive oil

  • Heat olive oil in a pan over medium heat.

2 cloves garlic (minced)
5 ounces baby spinach
2 ounces gorgonzola
1 cup ricotta cheese
2 eggs
5 large basil leaves (chopped, about 2 Tablespoons)
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon white pepper
dash of cayenne
1/4 cup grated parmesan cheese
3 Tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare 2 baking sheets with silpat or parchment paper
  • In a large saute pan over medium heat, heat olive oil until shimmering.
  • Add onions and reserved mushroom stems, and sauté 3-4 minutes until onions soften.
  • Add garlic and spinach, and continue to stir, just until spinach wilts, 2-3 minutes.
  • Remove from heat.
  • In a food processor fitted with a blade, pulse ricotta, eggs, gorgonzola and spices, just until mixed.
  • Add spinach mixture and basil and pulse an addition 3 or 4 pulses, or until blended.
  • Spoon spinach mixture into mushroom caps or portabellos.
  • Bake at 350 degrees F. for about 30 minutes for caps and 40 minutes for portobellos. Remove mushroom caps and sprinkle with parmesan cheese. Return to oven and bake an additional 5 minutes or until cheese melts.

Olive oil cooking spray
1 (10 - 12 oz.) bag frozen spinach, (thawed)

  • Preheat oven and prepare baking sheet: Preheat oven to 400 degrees. Optionally you can line a baking sheet with aluminum foil for easier clean up.
  • Squeeze moisture from spinach: Place spinach on several layer of paper towels, spread it out a little then fold paper towels over and squeeze most of the excess moisture from spinach. Place in a medium mixing bowl.
  • Mix cheeses and seasoning: Add in cream cheese, 1/2 cup parmesan cheese, mozzarella cheese, garlic and season with salt and pepper to taste. Stir mixture to blend.
  • Oil mushrooms: Place mushroom caps on a baking sheet and spray top and bottom sides with non-stick cooking spray.

1 egg
3 garlic cloves (minced)
1/4 tsp smoked paprika

Steps:

  • Preheat the oven to 425 degrees F.
  • If the mushrooms need cleaning, wipe any outside dirt off using a damp paper towel.

1 large package (24 ounces) white mushrooms
1 cup plain whole wheat bread crumbs
1 small onion - finely chopped
4 large garlic cloves - minced
1/4 tsp. black pepper
1/2 tsp. salt
1/4 cup extra virgin olive oil
4 Tbsp. Parmigiano-Reggiano grated cheese
optional: 2 Tbsp. chopped fresh parsley
extra Parmigiano grated cheese for topping

Steps:

  • Preheat oven to 350 degrees.
  • Thoroughly wash each mushroom, gently rubbing and removing dirt. Allow them to drain for a few minutes.
  • Pop the stems and remove them from caps and set aside.
  • Chop stems finely along with garlic and onion. Place into a small bowl. Add whole-wheat breadcrumbs, salt, pepper, Parmigiano cheese, and olive oil. Mix all ingredients well. The mixture should be moist, not dry. If needed, add more olive oil until you reached a moist breadcrumb mixture.
  • Using a teaspoon, spoon mixture into the caps of each mushroom, creating a slight dome. Continue to stuff until all the mixture is gone, even creating higher dome is fine too.
  • Using a foil or glass baking tray, lightly coat the bottom with cooking spray. Carefully arrange the mushroom caps in a single layer on the prepared tray. Sprinkle with extra grated Parmigiano cheese (about a half teaspoon per cap) on top of each mushroom.
  • Bake for 30 to 40 minutes in the oven at 350 degrees. Bake until the mushrooms are soft when pierced with a fork and the filling is golden brown. Remove and serve.

2 tbsp olive oil
½ onion, finely chopped
2 garlic cloves, finely chopped
200g/7oz spinach
100g/3½oz goats' cheese or other creamy cheese
100g/3½oz roasted red peppers (from a jar) drained and roughly chopped
50g/1¾oz cheddar, grated
squeeze lemon juice, optional
salt and freshly ground black pepper

Steps:

  • Heat the oven to 190C/170C Fan/Gas 5. Brush the mushrooms with 1 tablespoon of the olive oil and place, cap side up, on a baking tray. Bake for 20 minutes until beginning to soften.
  • Meanwhile, heat the remaining oil in a frying pan. Add the onion and mushroom stems and cook for 3 minutes until beginning to soften. Add the garlic and spinach and season with salt and pepper. Cook over a medium heat until the spinach has wilted. Increase the heat and cook until all the liquid in the pan has evaporated. Remove from the heat.
  • Spoon the goats' cheese, red peppers and half of the Cheddar into a bowl. Add the cooked spinach mix and combine. Season with salt, pepper and a squeeze of lemon juice, if using.
  • Remove the mushrooms from the oven, turn them over and divide the filling between each one. Sprinkle the remaining Cheddar over the top.
  • Return to the oven and bake for a further 15 minutes, until the mushrooms are tender and the cheese is golden.

20 white button or cremini mushrooms (about 10 ounces)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chopped onion (half medium onion)
2 tablespoons minced garlic (4 to 5 cloves)
2 teaspoons chopped fresh rosemary or thyme, see notes for parsley
2 ounces shredded cheese like sharp cheddar, mozzarella, Swiss or a combination

Steps:

  • Heat oven to 375° degrees Fahrenheit.
  • Using a damp paper towel, brush all dirt from the mushrooms. Remove the mushroom stems. Cut away and discard any hard bits of the stems, then finely mince them.
  • Add the mushroom caps to a rimmed baking sheet or sizeable oven-safe skillet that fits the mushrooms in one layer. Toss them with a tablespoon of olive oil and lightly season with fresh ground black pepper. Arrange them cavity-side-up so that they are ready to be stuffed.
  • Melt butter in a skillet over medium heat. Add the onions, chopped mushroom stalks, and a pinch of salt. Cook, occasionally stirring, until the onions smell sweet and are soft, about 5 minutes.
  • Add the garlic and herbs, then cook for another minute or until the garlic is fragrant. Before the garlic begins to brown, scrape the mixture into a bowl and set it aside to cool.
  • Add the breadcrumbs to the same skillet. Place it over medium-low heat, and then cook, stirring, until they are lightly toasted; about one minute.
  • Stir the cheese into the onions and garlic mixture, then divide the filling between the mushroom caps. Sprinkle the toasted breadcrumbs on top.
  • Bake the mushrooms until the cheese has melted and the mushrooms have softened; 15 to 20 minutes.

1 cup (8oz | 250g) cooked crab or lobster meat
1/2 cup Panko breadcrumbs, divided (-- OPTIONAL! Leave out for low carb mushrooms)
1/3 cup freshly grated Parmesan cheese
1/3 cup whole egg mayonnaise
1/3 cup spreadable cream cheese, (softened)
1/3 cup chopped green onions, ((I use 3 stalks -- green and white parts))
2 large cloves garlic, (minced (or 4 small cloves))
1 tablespoon finely chopped fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/2 tablespoon olive oil

Steps:

  • Preheat the oven to 375°F (175°C). Lightly grease a large baking sheet with cooking oil spray.
  • Wipe mushrooms clean with damp paper towel. Remove stems and scoop out gills. Discard.
  • Arrange mushrooms on baking sheet. Lightly spray mushrooms with olive oil spray; set aside.
  • In a large bowl combine crab meat, 1/3 cup Panko crumbs, parmesan, mayo, cream cheese, garlic, green onions, herbs, salt and pepper.

Steps:

  • 1. Preheat the oven to 425 degrees F. Remove the stems from the mushrooms and set aside. Place the caps, stem-side down on a baking sheet and brush the outsides with the oil. Bake until soft, but still holding their shape, 15 minutes.
  • 2. Meanwhile, crisp the bacon in a medium skillet over medium heat. Transfer bacon to a paper towel-lined plate and reserve the skillet and drippings.
