ARMADILLO EGGS (STUFFED JALAPENOS)
These are so yummy. The cheese and bacon are a great compliment to the jalapeno flavor and reduce the heat of the peppers. This is my adaptation of an appetizer I had many years ago.

Steps:
- Slice jalapenos in half and clean out seeds (be sure to get them all or they will be hot).
- Mix cheese, onion and garlic salt together and spoon into jalapeno halves.
- Wrap each with 1/2 strip of bacon.
- Place on cookie rack placed over a cookie sheet to catch the drippings.
- Bake at 350 for about 45 minutes or until the bacon is crisp.
- The thin bacon wraps easier.
- I just tuck the ends under the bottom.
- Amazingly, these are not hot if you get all the seeds out.
- There are never enough of them no matter how many I make because they are so popular.

- Cut each jalapeno in half lengthwise; remove seeds and stems. Stuff each pepper half with about 1 tablespoon cheddar cheese. In a bowl, combine the uncooked sausage, biscuit mix and remaining cheese; mix well. Shape about 2 tablespoonfuls around each pepper., Dip into eggs, then roll in coating mix. Place on a baking sheet coated with cooking spray. Bake at 350° for 35-40 minutes or until golden brown.

- For the stuffing I like to use Stove Top stuffing for pork.
- Cook stuffing mix according to package directions.
- Combine sausage with stuffing.
- Cut stem and seeds from jalapenos, fill with cheese. Add egg to sausage and stuffing mixture. Mold mixture in egg shape around jalapenos.
- Roll in bread crumbs until covered well.
- Bake in a 400 degree farenheit preheated oven for 30 minutes or until brown.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
- Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.
- In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.
- Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.
- Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.

- Cut lengthwise slit in top of each pepper; scrape out seeds and veins. Combine next 3 ingredients; spoon into peppers.
- Roll peppers in flour; dip in eggs, then roll in cracker crumbs until evenly coated. Place in single layer in shallow pan. Refrigerate 15 min.
- Heat oil in medium saucepan to 375ºF. Add peppers, in batches; cook 3 min. or until golden brown. Drain on paper towels. Serve warm.

Steps:
- cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
- Preheat oven to 375 degrees.
- Soften the cream cheese in the microwave for about 20 seconds.
- Place the cream cheese in a bowl.
- Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
- Fill the jalapenos with the creame/ranch/cheese mixture.
- Trim any excess fat from the bacon, preferably with kitchen scissors.
- Wrap all of the peppers with the bacon.
- Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
- Enjoy the best stuffed jalapeños you have ever had.
