BACON-WRAPPED BURGER ROLL RECIPE BY TASTY

Steps:
- Preheat the oven to 350˚F (180˚C).
- In a large bowl, mix the ground beef, eggs, bread crumbs, salt, pepper, and garlic powder. Mix until well combined.
- Put the mixture in a medium baking tray lined with aluminum foil and distribute the meat mixture evenly.
- Add the ham, cheese, and spinach on top of the meat.
- Carefully lift the meat and form a roll.
- In another aluminum-lined baking tray, place the slices of bacon side by side, one next to the other. Place the meat roll on top of the bacon.
- Roll up the meat with the bacon, then wrap with foil.
- Bake the aluminum-wrapped roll for 25 minutes.
- Increase the temperature to 500˚F (260˚C). Remove the foil and bake for 20 more minutes until the bacon is golden brown and crispy.
- Cool for 5 minutes, then slice and serve.

Can be stuffed with any deli meat or cheese and you can use spinach and even hard boiled eggs! The texture is very different from meatloaf which could be considered a second cousin. My family looks forward to it every time. I serve it with buttered orzo pasta and peas.

- In a large zip-lock bag mix first 11 ingredients.
- Prepare a large sheet pan with parchment paper or foil (spray with water so meat won't stick).
- Cut ziplock bag and lay out beef mixture to form a large rectange. Flatten out evenly.
- Tear salami and cheese into long pieces and lay out on top of meat.(Any of your own ideas can be added now. I've used Italian hams, swiss cheese, mushrooms, etc.).
- Roll up length wise using the paper or foil as a tool.
- Pinch ends and lay seam side down.
- Bake at 375 for 40-45 minutes.

- combine onion and 1/3 cup water in saucepan; simmer, covered, about 5 minutes.
- Add bread cubes and toss.
- Combine meat, egg, seasonings and a dash of pepper.
- On waxed paper, pat meat into a 14" X 8" rectangle.
- Spread bread mixture over meat; sprinkle with 3/4 cup of cheese.
- Starting at narrow end, roll meat mixture.
- Place seam-side-down in a sprayed loaf pan.
- Bake, uncovered, at 350F for 70 minutes.
- Top with remaining cheese; bake until melted.

- 1. Sauté onion in butter until soft-in a 10-inch skillet; stir in mixed vegetables. Heat over low fire; cover and cook for 10 minutes if raw or until almost tender and heated through.Drain any liquid from pan; set aside to cool. Prepare meat.
- 2. Combine meat, eggs, mustard, Worcestershire sauce, salt and pepper in a medium bowl; mix well to combine. Spread meat mixture on a jelly roll pan(15x10-inch)lined with foil and sprayed with non stick spray. Pat out evenly to fit pan.
- 3. Spread with cooled vegetable mixture to within 1-inch of edges; sprinkle with the cheese. Starting with the 10-inch side, roll up jelly roll style, lifting the foil as you roll to help guide it. Place seam side down on the spread out foil. Top with the bacon slices (tuck ends under if too long.)
- 4. Bake in 375^ oven for 15 minutes then turn oven to 350^ for about 45 minutes or until a deep brown. Let sit for 10 minutes then transfer to serving platter; cut into 1-inch thick slices with a sharp knife. Great served with mashed garlic potatoes and broccoli or green beans, if desired.

- Preheat oven to 350 degrees.
- Heat the drippings, add the onion and garlic and sauté until the onion is transparent. Remove to mixing bowl and add the ground beef. Add the egg.
- Soften the bread in water, press out the excess water and add bread to the meat. Add the salt, oregano and pepper. Mix thoroughly.
- Sprinkle a piece of waxed paper with crumbs. Press the meat on the crumbs to make a rectangle about 1/2 inch thick.
- Beat the mashed potatoes with the parsley and spread on top of the meat. (If leftover potato is used, reheat before spreading).
- Using the waxed paper as an aid, roll the meat and potatoes, jelly-roll fashion, and place in a loaf pan or on a shallow baking pan. Grease the pan if the meat is very lean. Place the bacon on top if using or brush with additional drippings; baste at least once during baking.
- Bake about one hour and serve with a brown sauce made from the pan drippings, or with mushroom, tomato or other sauce.

BIEROCKS (GERMAN HAMBURGER- AND CABBAGE-FILLED ROLLS)
This is a staple food in the small Kansas (primarily German-American) town where I was born, and is now a favorite at my house here in Belgium. The recipe comes from my Grandma Rosie. My mother uses a BOX OF HOT ROLL MIX for the roll portion, but as that is not available to me, I have included the hot roll recipe from the Better Homes and Gardens New Cook book. Your yield will depend on the size of rolls you make, but I would estimate about 15 to 20. Preparation time includes time for allowing dough to rise (estimated). Don't let the length of the recipe (or my assembly instructions) spook you, it is really very easy and the assembly is fun for kids, too ! In my opinion they are just as tasty cold as warm from the oven.

- FILLING: In a large frying pan, cook the cabbage and onion together until the cabbage is completely softened and golden.
- This process can be hastened by adding a half-cup of water (or so) and covering the pan, but eventually cook all the liquid off before proceeding.
- Season with salt, pepper, and cayenne, if desired.
- In a separate pan, brown the hamburger.

- Mix the cabbage/onion with the hamburger thoroughly.
- You may complete this part of the recipe in advance,refrigerating until needed, or just before you are ready to assemble the rolls.
- DOUGH: In a large mixing bowl combine 2 cups of the flour and the yeast.
- In a saucepan heat milk, sugar, butter and salt just till warm (115-120 degrees F) and butter is almost melted; stir constantly.
- Ad to flour mixture; add eggs.
- Beat at low speed for 1/2 minute, then three minutes at high speed.
- Stir in as much remaining flour as you can mix in with a spoon.
- Turn out onto a floured surface.
- Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
- Shape into a ball, and place in a greased bowl; turn once.
- Cover and let rise in a warm place till double (about 1 hour).
- Punch down and cover; let rest 10 minutes.
- ASSEMBLY: Roll out the dough into a large rectangle, and a thickness of about 1/4 inch.
- Cut into squares of 3 inches by 3 or 4 inches by 4.
- By the spoonful, place some filling mixture into the center of each square, apportioning all of the mixture among the squares.
- For each, bring the two opposite corner ends of the dough square up to meet one another, then do the same with remaining ends and pinch them (all 4) together with your fingers.
- You will see that you now have open slits along the diagnals; pinch these together as well, making a seam of each.
- Water on your fingertips will facilitate them staying"glued" together.
- The end product should be a square with a seam running from each corner to the center where all four are joined.
- Set the squares on a baking sheet (if you had trouble keeping the seams closed, you can flip them over so that the seams are against the baking sheet, thereby keeping all the filling in place and making a nicer presentation).
- Let raise 30 minutes.
- Bake in a pre-heated oven at 375 °F for 30 minutes or until golden brown.
GIANT STUFFED BURGER RECIPE BY TASTY

- Preheat oven to 350˚F (180˚C).
- On a parchment paper-lined baking sheet, lay 5 of the bacon strips down back to back. Lifting up every other strip, fold about 1-inch (2 cm) the bacon back on itself. Lay another slice of bacon perpendicular to the strips and fold the flaps back over the horizontal strip of bacon. Repeat with the rest of the bacon until a tight weave has formed.
- Bake for 30 minutes, or until desired crispiness has been reached.
- In a 10-inch (25 cm) cast iron skillet heat the butter over medium-low heat. Add the onions and cook until a deep gold color, about 45 minutes. Remove from heat.
- In a bowl, mix together the beef, garlic powder, paprika, salt and pepper. Divide the beef mixture in half.
- On a piece of parchment paper spread half of the meat into a large circle about 10 inches (25 cm) long and 1 inch (2 cm) thick. Repeat with the other half of meat on a separate piece of parchment paper.
- Sprinkle half of the cheddar and half of the Monterey Jack over one disk of ground beef, along with half of the parsley. Place the bacon lattice on top.
- Sprinkle the rest of the cheddar and Monterey on top of the bacon lattice, along with the rest of the parsley.
- Top with the caramelized onions. Place the other circle of meat on directly on top. Begin pinching together the meat patties making sure the fillings are not coming out, until a giant burger is formed.
- Heat a greased 10 inch (25 cm) cast iron skillet over medium heat. Place the giant burger in the skillet carefully while peeling away the bottom piece of parchment. Cook for 5 minutes, until it is a deep brown color.
- Using a large plate, place it over the skillet. While holding the plate in place flip the skillet so the burger falls onto to plate. Place the skillet back on the heat and slide the burger back into the pan so the cooked side is facing up now. Cook for another 5 minutes.
- Remove from heat and place skillet in the oven to finish cooking for 5 minutes
- Remove from pan using spatulas and place on a cutting board for serving.
- Cut into 8 or more pieces. Serve on a roll with lettuce and tomato.

MOM'S LEGENDARY STUFFED HAMBURGERS

- Prepare a grill for medium heat. When hot, lightly oil the grate.
