9 ounce refrigerated three cheese-filled tortellini
8 ounce broccolini, cut up, or 2 cups broccoli florets
1 15-19 ounce can cannellini (white kidney beans), rinsed and drained
0.25 cup slivered pitted Kalamata olives
2 tablespoon olive oil
2 tablespoon white balsamic vinegar
0.5 teaspoon crushed red pepper
1 cup quartered cherry or grape tomatoes
0.5 cup crumbled feta cheese (2 oz.)
0.25 cup snipped fresh basil

Steps:

  • In a deep large skillet bring 1 to 2 inches water to boiling. Add tortellini; cook 7 to 8 minutes or until tender, stirring occasionally. Stir in broccolini; cook 1 to 2 minutes or until broccolini is crisp-tender. Drain in colander. Return tortellini and broccoli to skillet.
  • Stir the next five ingredients (through crushed red pepper) into pasta mixture. Heat through. Sprinkle with remaining ingredients.

1 cup fresh broccoli florets
2 packages (9 ounces each) refrigerated cheese tortellini
2-1/2 cups shredded Parmesan cheese, divided
1/4 teaspoon coarsely ground pepper
2 teaspoons minced fresh parsley

Steps:

  • In a large saucepan, cook cream and broccoli, uncovered, over medium-low heat for 5-6 minutes or until broccoli is crisp-tender. Meanwhile, cook tortellini according to package directions. , Stir 2 cups cheese and pepper into broccoli mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until mixture is thickened, stirring occasionally. , Drain tortellini; add to sauce and toss to coat. Sprinkle with parsley and remaining cheese.

1 package (19 ounces) frozen cheese tortellini, cooked and drained
1 package (16 ounces) frozen chopped broccoli, thawed
1 jar (2 ounces) diced pimientos, drained
2 tablespoons chopped onion
SAUCE:
1 garlic clove, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup milk
1/3 cup plus 1/4 cup grated Parmesan cheese, divided

Steps:

  • In a large bowl, combine the tortellini, broccoli, pimientos and onion; set aside. In a large saucepan, saute garlic in butter for 1 minute. Stir in the flour, salt, pepper and nutmeg. Gradually stir in milk until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in 1/3 cup Parmesan cheese until melted. Fold in broccoli mixture., Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 40-45 minutes or until hot and bubbly, stirring twice. Top with remaining Parmesan. Cover and let stand for 5 minutes or until cheese is melted.

2 pounds broccoli, stalks removed, heads cut into small florets
4 garlic cloves, thinly sliced
1 1/2 pounds frozen cheese tortellini
3 plum tomatoes, seeded and diced

Steps:

  • Bring a large pot of salted water to a boil. Heat 1 tablespoon butter in a large skillet over medium. Add broccoli and garlic; season with salt and pepper. Cook, tossing occasionally, until broccoli is crisp-tender, 6 to 8 minutes (if skillet gets too dry, add a little water).
  • Cook tortellini in boiling water until al dente. Drain, reserving 1/2 cup pasta water; return tortellini to pot. Add broccoli mixture, tomatoes, and remaining 2 tablespoons butter; season with salt and pepper, and toss gently to combine. Gradually, add enough reserved pasta water to create a sauce that lightly coats tortellini. Serve immediately.

140g Tenderstem broccoli , cut into short lengths
250g fresh tortellini
3 tbsp pesto (fresh if you can get it)
2 tbsp toasted pine nuts
1 tbsp balsamic vinegar
8 cherry tomatoes , halved

Steps:

  • Bring a large pan of water to the boil. Add the broccoli, cook for 2 mins, then add the tortellini and cook for 2 mins, or according to pack instructions. Drain everything, gently rinse under cold water until cool, then tip into a bowl. Toss with the pesto, pine nuts and balsamic vinegar. Add the tomatoes, pack into containers and chill. Let the salad get to room temperature during the morning to get the most flavour from the tomatoes and pesto.

½ cup mayonnaise
½ cup white sugar
2 teaspoons cider vinegar

Steps:

  • Cook tortellini in a large pot of boiling water until tender but firm (about 5 min).

7 ounces cheese tortellini
1 cup broccoli, cut into small florets
1/2 cup finely chopped fresh parsley
1 tablespoon chopped pimiento
1 (6 ounce) jar marinated artichoke hearts, do not drain
2 green onions, sliced
1 tablespoon chopped fresh basil
1/2 teaspoon garlic powder
1/2 cup Italian dressing
6 cherry tomatoes
1/4 cup freshly grated parmesan cheese
1/4 cup sliced black olives

Steps:

  • Cook tortellini according to package directions (I use the fresh tortellini that are tri-colored).
  • Make sure to cut the broccoli into bite sized florets.
  • I also lightly steam them before adding to the salad.
  • In a large bowl mix together tortellini, broccoli, chopped parsley, pimento, UN-DRAINED artichoke hearts, green onions, basil and garlic powder.
  • Add Italian dressing (I use Bernsteins Restaurant Recipe Italian or Newman's Own); stir to mix.
  • Refrigerate until serving time.
  • Just before serving, stir in olives, cherry tomatoes that have been cut in half, and parmesan cheese.
