LA ISLA'S STUFFED FRENCH TOAST

La Isla's Stuffed French Toast image

Provided by Food Network

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

2 tablespoons soft unsalted butter, plus additional for sauteing
4 ounces cream cheese, room temperature
1 1/2 tablespoons guava marmalade, plus additional for drizzling (recommended: LaFe)
5 ounces diced strawberries
3 ounces guava shells (recommended: LaFe)
4 thick slices Pullman-style bread, refrigerated
Powdered sugar, for dusting
6 extra-large eggs
1 tablespoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons sugar
1 teaspoon vanilla extract
4 ounces whole milk
4 ounces evaporated milk
10 ounces corn cereal (recommended: Cornflakes)
6 ounces sliced almonds

Steps:

  • In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
  • Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
  • Preheat oven to 375 degrees F.
  • Egg batter:
  • Add all the ingredients to a medium shallow bowl and mix well.
  • French Toast:
  • Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
  • Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.

STUFFED FRENCH TOAST II

Stuffed French Toast II image

This is a nice change from ordinary French toast. I make this more than the standard recipe. Although this is my family's favorite version, it is very versatile. You can substitute peanut butter for the cream cheese, use different jams or preserves, different extracts or spices - the options are practically limitless! Serve with maple syrup and sprinkle with powdered sugar.

STUFFED FRENCH TOAST

Stuffed French Toast image

This recipe is delicious and perfect for a weekend brunch. It can easily be prepared in advance and refrigerated until serving time, just give each piece a little extra time to heat through in the frying pan.

Provided by S. Merrill

Categories     Breakfast

Time 40m

Yield 5-6 serving(s)

Number Of Ingredients 10

1 (8 ounce) package neufchatel cheese, softened
1 cup apricot jam
1 teaspoon vanilla
1/2 cup finely chopped pecans
1 loaf sweet French bread
4 eggs
1 cup whipping cream
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla
1/2 cup orange juice

Steps:

  • In a small bowl beat together the cream cheese, 2 tablespoons of the apricot jam, and the 1 teaspoon of vanilla until light and fluffy. Stir in the pecans and set aside.
  • Cut the bread into ten to twelve 1 1/2-inch-thick slices; cut a pocket in the top of each. Fill the pocket with about 1 1/2 tablespoons of the cheese mixture.
  • Combine the remaining apricot jam and orange juice in a small saucepan. Warm over low heat, whisking as jam melts so the mixture is a smooth syrup.
  • Beat together eggs, whipping cream, cinnamon and the 1/2 teaspoon vanilla. Preheat a large frying pan over medium heat, or use a griddle, if preferred. Using tongs, dip filled bread slices in the egg mixture, being careful not to squeeze out the filling. Cook in lightly greased pan for about 2 minutes per side or until lightly brown. Keep warm in a 300 degree oven while cooking remaining slices.
  • To serve, drizzle warm syrup over the hot French toast.
  • Tip: For lower fat, use 1 cup refrigerated egg product in place of whole eggs and 1% milk instead of whipping cream.
