1 small onion, finely chopped
1 red bell pepper, finely chopped
2 cloves garlic, minced
1 tablespoon butter
1/3 cup ketchup
1/2 cup grated carrot
1 teaspoon dried basil
2 large tomatoes, diced
One 10-ounce can tomatoes with chiles, such as Rotel
3 cups sliced fresh string beans, in 1/2-inch pieces
Salt and pepper
Salt and pepper
Rice, for serving

Steps:

  • In a medium skillet, saute the onions, bell peppers and garlic in the butter until tender. Add the ketchup, carrots, basil, and fresh and canned tomatoes, then cook for 10 to 15 minutes more. Add the string beans, season with salt and pepper and continue cooking until the vegetables are tender, taking care not to overcook the beans. Serve over rice or as a side dish.

3 tablespoons olive oil
6 garlic cloves, peeled
1 lb green beans, ends trimmed
salt
crushed hot red pepper flakes
1 (28 ounce) can tomatoes, with their liquid (preferably Italian plum tomatoes like San Marzano)

Steps:

  • Heat olive oil in large, heavy skillet over medium heat.
  • Smash the cloves of garlic and toss them into the pan.
  • Cook, shaking the pan, until lightly browned, about 2 minutes.
  • Scatter the beans over the oil, season them lightly with salt and red pepper, and turn with tongs until they begin to wilt, about 3 minutes.
  • Meanwhile, crush the tomatoes coarsely with your hands and add them to the beans.
  • Cover the pan, cook until the beans are tender- about 10 minutes.
  • Taste and adjust seasoning to your liking, and serve hot.

1 small sweet onion, chopped
1 large garlic clove, minced
2 tablespoons olive oil
1 (8 ounce) can tomato sauce

3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon red wine vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Cook green beans in boiling water to cover 5 to 10 minutes or to desired degree of doneness; drain and set aside.
  • Saute onion and garlic in hot oil in a large skillet over medium-high heat 5 minutes or until onion is tender.

1 teaspoon salt
1/4-1/2 teaspoon pepper
1 tablespoon olive oil
3 large onions, chopped
2 garlic cloves, minced
1 cup dry red wine or 1 cup beef broth
1 (14 1/2 ounce) can diced tomatoes, undrained
2 celery ribs, with leaves chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
1 bay leaf
1 lb carrot, cut into 1/2 inch slices

Steps:

  • Season brisket with salt and pepper. In a Dutch oven, brown brisket in oil over medium-high heat. Remove and keep warm.
  • In the same pan, saute onions and garlic until tender. Place brisket over onions. Add the wine or broth, tomatoes, celery, thyme, rosemary, and bay leaf.
  • cover and bake at 325°F for 2 hours, basting occasionally. Add carrots; bake 1 hour longer or until meat is tender. Discard bay leaf. Cool for 1 hour; cover and refrigerate overnight.
  • Trim visible fat from brisket and skim fat from tomato mixture. Thinly slice beef across the grain.
  • In a saucepan, warm tomato mixture; transfer to a shallow roasting pan. Top with sliced beef. Cover and bake at 325°F for 30 minutes or until heated through. Serve sauce over beef.

I'm sure this dish will take you back, whether you make it with "Italian" string beans (those flat wide ones), regular string beans, or the more expensive, thinner haricots verts. It isn't necessary to start with a long-simmered tomato sauce for these beans; in fact, the flavor will be fresher with this quick-cooked marinara made right in the pan. The acidity of the tomatoes will turn the string beans a sort of olive green. That doesn't bother me at all-it reminds me of the way my grandmother cooked vegetables. Maybe they weren't the brightest-green vegetables I've ever seen, but they certainly were the most delicious.

Number Of Ingredients 6

3 tablespoons extra-virgin olive oil, plus more for finishing the dish if you like
6 cloves garlic, peeled
1 pound flat "Italian" string beans, regular string beans, or haricots verts, ends trimmed
Salt
Crushed hot red pepper
One 28-ounce can Italian plum tomatoes (preferably San Marzano) with their liquid

Steps:

  • Heat the oil in a large, heavy skillet over medium heat. Whack the garlic cloves with the side of a knife and toss them into the pan. Cook, shaking the pan, until lightly browned, about 2 minutes. Scatter the string beans over the oil, season them lightly with salt and red pepper, and turn with tongs until they begin to wilt, about 3 minutes.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.
