Strawberry Rice Dessert Food

LEFTOVER RICE DESSERT WITH STRAWBERRIES

Steps:

• Combine strawberries and sugar and set aside to macerate.
• Beat cream in a chilled glass or metal bowl using an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until soft peaks form. Fold in macerated strawberries and rice. Sprinkle with grated chocolate.

CREAMY STRAWBERRY RICE PUDDING

Steps:

• Bring 3 cups water to boil in heavy medium saucepan. Add rice and salt. Reduce heat to medium-low and simmer uncovered until rice is very tender and water is absorbed, stirring occasionally, about 20 minutes. Add 1/3 cup sugar and cinnamon and stir to blend. Add milk and simmer until mixture is very thick, stirring frequently, about 25 minutes. Remove from heat. Cool 10 minutes. Stir in vanilla extract. Cool to room temperature, about 2 hours.
• Mix strawberries and remaining 3 tablespoons sugar in large bowl. Let stand until juices form, at least 30 minutes. (Rice pudding and strawberries can be prepared 4 hours ahead. Cover and refrigerate separately. Bring to room temperature before continuing.)
• Stir yogurt and 2 cups strawberry mixture into rice pudding. Transfer to large bowl. Top with remaining strawberry mixture and serve.

RISOTTO-STYLE STRAWBERRY RICE PUDDING

Steps:

• Cut strawberries into medium-size dice. In a small saucepan over medium-low heat, add strawberries, 1/4 cup sugar, and lemon juice. Cook until berries are soft and the juices have thickened slightly, about 10 to 15 minutes. Set aside to cool.
• Heat the milk in a medium saucepan over medium-low heat until it starts to steam. Remove one cup of milk, set it aside, and keep it warm. Stir into the larger pan of milk the remaining sugar, the vanilla bean and seeds, and the rice. Lower heat and cook, stirring constantly, until the rice is tender, about 20 minutes. Add the reserved milk, lemon zest, butter, and salt. Stir well and remove from the heat. This should have a more liquid consistency than regular risotto.
• To serve, layer rice pudding and strawberry mixture in tall clear glasses. Chill.

STRAWBERRY RICECAKE DESSERT

Steps:

• In a large bowl mix cream cheese with marshmallow creme. Mix well then add your Cool Whip and mix well just a few spins with hand mixture then with spatula continue to fold in well.
• Take a rice cake, spread approx 1 tablespoon of cream cheese mixture on top and then top that off with sliced fresh strawberries.
• Enjoy!
