Large fresh strawberries (6)
2 tablespoons of sugar
Water
White sugar

Steps:

  • Wash the strawberries. Remember to remove the green top off the strawberry.
  • Slice each strawberry in half lengthwise and put them into a pot.
  • Add at least 2 tablespoons (29.6 ml) of white sugar.
  • Turn the heat to medium and add 1 cup of water.
  • Boil for 15 minutes on medium heat.
  • After rising for 7-10 minutes, stir it and mash it with a spoon or a fork.
  • (Optional) When 5 more minutes have passed, stir it again.
  • Turn off the heat, put the sauce into a serving bowl. Refrigerate before serving.

1/2 cup sugar
Juice of 1/2 lemon
1 teaspoon vanilla extract

Steps:

  • Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Remove from the heat; stir in the vanilla.
  • Strain through a fine-mesh sieve into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.

BRANDIED STRAWBERRY SAUCE

Came out as a result of the RSC #11 contest. This didn't have the required number of ingredients, but I liked the taste. Good with pound cake, ice cream, french toast or whatever you like. Needs to cool before using and keep refrigerated.

2 tablespoons honey
2 tablespoons orange juice
3 tablespoons brandy
2 cups strawberries, hulled and quartered
1 teaspoon cornstarch

Steps:

  • In a small saucepan, heat honey, orange juice and brandy to boil. Reduce heat and add strawberries.
  • Simmer for 10 minutes.
  • Stir in corn starch.
  • Remove from heat and let cool. Refrigerate before use.
  • Use as a topping.

4 steak fillets
2 cups fresh pureed strawberries
1 cup A.1. Original Sauce
1/2 cup balsamic vinegar
4 cups spinach
1/2 cup goat cheese
1/4 cup chopped walnuts
salt and pepper

Steps:

  • Season steaks with a dash of salt and pepper and set aside.
  • In a medium size pot, mix the strawberries, A1 and balsamic together over medium heat. Stir frequently. After about 20-30 minutes the sauce will reduce by about half.
  • In a bowl, mix together the spinach, walnuts and goat cheese. Set Aside.
  • Heat up grill and place the filets on. Cooking time varies based on how you like your meat. For medium rare, cook for about 4-5 minutes on each side.
  • Once steak is done, take off grill and let the meat rest.
  • Fork some of the salad mixture onto each plate and top with steak and reduction sauce.

For those of you who don't know what a reduction is, it's a sauce that's cooked longer than normal sauce. This allows the water of the sauce to cook off, leaving a more syrupy sauce. Anyway this works great for crepes and pancakes. I got this recipe just by experimenting with the filling while I was cooking the crepes.

Steps:

  • Place all ingredients in a pot on low heat.
  • Stir and let simmer for 5 minute.
  • Repeat step 2 until sauce begins to steam.
  • Turn heat to medium and stir.
  • For a light sauce you want about 1 inch of sauce in the pot.
  • For a thick sauce you want 1/2 inch of sauce in the pot.
  • Drizzle over anything while the sauce is still hot.
