1 sheet frozen puff pastry, thawed
4 cups fresh strawberries, sliced
1/4 cup plus 3 tablespoons sugar, divided
1-1/2 cups heavy whipping cream
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll puff pastry to a 10-in. square; cut into 12 rectangles (approx. 3x2-1/2 in.). Place on ungreased baking sheets. Bake until golden brown, 12-15 minutes. Remove to wire racks; cool completely., In a large bowl, toss strawberries with 1/4 cup sugar. Let stand 30 minutes, stirring occasionally. In another bowl, beat cream until it begins to thicken. Add vanilla and remaining sugar; beat until stiff peaks form., To serve, split pastries horizontally in half. Top each bottom half with 2 tablespoons whipped cream and 1 tablespoon strawberries; replace top half. Top with remaining whipped cream and strawberries.

1 package (17.3 ounces) frozen puff pastry
5 cups sliced fresh strawberries, divided
6 ounces white baking chocolate, chopped
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla extract
1 cup confectioners' sugar
1/3 cup malted milk powder
2 cups heavy whipping cream, whipped
Strawberry syrup, optional

Steps:

  • Thaw one puff pastry sheet (save remaining sheet for another use). Unfold pastry; cut lengthwise into three 3-in.-wide strips. Cut each strip into thirds, making nine squares. , Place 1 in. apart on ungreased baking sheets. Bake at 400° for 11-13 minutes or until golden brown. Remove to wire racks to cool., Place 2-1/2 cups strawberries in a blender; cover and puree; set aside. In a large microwave-safe bowl, melt white chocolate; stir until smooth. Cool slightly. Add cream cheese and vanilla; beat until smooth. Beat in the confectioners' sugar and malted milk powder until smooth. Stir in the puree. 8 tsp strawberry jam
1 egg
crumbs topping (optional)

Steps:

  • Pre heat the oven as instructed on the pastry package. Line a baking sheet with baking paper.
  • Roll out the pastry into a large square, until about 1/8" thick.
  • Using the pastry wheel cut the pastry into 16 squares.
  • Transfer the squares to the baking sheet.
  • Place half a teaspoon of jam in the middle of each square.
  • Using the pastry wheel or a sharp knife, cut from each corner to the center, on each square, until the pastry wheel meets the jam.
  • Grab one of the cut corners and fold towards the center then fold the opposite corner to the center and so on, to create a pinwheel shape. Repeat for all squares.
  • Brush each pinwheel with egg wash.
  • Optional - sprinkle some crumb topping
  • Bake in the oven as instructed on the pastry package or until the pastry is golden brown.

2 egg yolks
⅓ cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract

Steps:

  • In a microwave-safe bowl, whisk the yolks and sugar until pale in color.
  • Add cornstarch and whisk well. Add the vanilla extract and milk. Whisk until well combined.
  • Loosely cover the bowl with plastic wrap and microwave for 4 minutes, stirring halfway through. Remove plastic and stir.
  • Cover with a plastic wrap and chill at least 30 minutes.
  • Cut the thawed puff pastry into three equal-sized rectangles.
  • Pierce each piece of puff pastry with a fork.
  • Heat a nonstick pan over low heat. Place the puff pastry in the pan and cook for 10 minutes.
  • Flip the puff pastry sheets, and place a lid on the top of the pan. Cook for 10 minutes.
  • Remove the lid and sprinkle 1 teaspoon of sugar on sheet of puff pastry. Flip the pastry over so that the sugared side is on the bottom.
  • Bring the heat up to high. Place a piece of parchment paper over the puff pastry and weigh it down with another pan. Once the surface is caramelized, about 1-2 minutes, remove from the heat and let cool to room temperature on a cooling rack.
  • Place the custard in a piping bag fitting with an large round tip.
  • Pipe the custard on one sheet of puff pastry. Top with a layer of sliced strawberries, then pipe another row of custard. Top with another sheet of puff pastry, custard, sliced strawberries, custard, and the remaining puff pastry sheet.
  • Dust the top with powdered sugar.

1 3/4 cups strawberries washed and diced
1 tablespoon water
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 sheet puff pastry thawed
sprinkle of flour
1 egg white
3/4 cup powdered sugar
1-2 tablespoons milk

Steps:

  • In a saucepan on medium low heat add the strawberries, water, sugar and cornstarch and mix. Cooke 3-4 minutes and using a potato masher or fork smash the strawberries a bit.
  • Preheat oven to 400 degrees
  • Sprinkle some flour on a cutting board and lay out the puff pastry. Using a rolling pin or cup roll out the creases in the puff pastry. Cut the puff pastry into four large squares.
  • Add about 2 tablespoons of the strawberry filling into the middle of the squares.
  • Fold the corner over to form a triangle. Using a fork crimp the edges to seal.
  • Transfer the turnovers to a baking sheet and brush the top with the egg whites. Using a small knife make to small slit in the top.
  • Bake 15 minutes
  • In a small bowl add the powdered sugar and 1 tablespoon of milk. Mix and add the rest of the milk if needed for desired consistency.
  • Let turnovers cool 5 minutes then using s spoon drizzle over the top.

about 8 strawberries or banana, pineapple, blueberries, etc

1 egg
1 Tbsp water
powdered sugar for dusting
GLAZE - OPTIONAL
1 c confectioners' sugar
2 - 3 Tbsp lemon juice

Steps:

  • 1. Preheat the oven to 400 degrees F. Spray a baking sheet with non stick cooking spray - or use parchment paper. Mix glaze if using.
  • 2. Beat the egg and water in a small bowl with a fork; Set aside. Unfold 1 pastry sheet on a lightly floured surface. Using a round cutter, cut the pastry sheet into 9 (3 inch) circles. Repeat with the remaining pastry sheet. (Don't waste the scraps - re roll them and cut into as many circles as possible) Place half of the pastry circles onto a parchment lined or sprayed baking sheet. Strawberry Puff Pastry Braid With Cream Cheese image

8 oz cream cheese (softened)
1 cup icing sugar
2 cups fresh strawberries (hauled and diced)
1 tablespoon orange zest (dry or fresh)
2 tablespoons sugar (optional)
1 puff pastry sheet (thawed)
hand mixer
mixing bowl
silicone spatula
fine sieve
baking paper
baking sheet
sharp knife
cutting board
turner
optional - rolling pin

Steps:

  • Pre heat the oven at 390 F.
  • In a mixing bowl, add cream cheese and icing sugar and mix on medium for 2 minutes than on high until smooth and creamy. Keep refrigerated.
  • Dice strawberries and strain well through a fine sieve. Discard the juice.
  • Place a piece of baking paper on the working surface large enough to fit the pastry sheet. Roll out the thawed pastry. I would recommend lightly roll out the pastry with a rolling pin (i didn't and the pastry was a bit too thick to bake).
  • Spread the cream cheese evenly, using a spatula.
  • Add a layer of diced strawberries.
  • Sprinkle orange zest and sugar.
  • Roll up the puff pastry, not very tight though or the filling will spill out.
  • If the edge end up on top of the roll flip it under.
  • Using a sharp knife, cut the roll in half, lengthwise.
  • Twist each of these halves then braid the twists together, without applying pressure. Both the twists and the braid should be pretty loose. Don't worry if some filling spills out, you can clean it when you're done braiding and add it on top of the braid.
  • Grab the baking paper by the ends and transfer the roll to a baking sheet.
  • Bake in the middle of the oven at 390 F for about 20 minutes or until the bread gets a golden brown top.
  • Leave to cool a little then cut into slices.
  • Serve warm or cold.

2 quarts strawberries (fresh taste the best)
1 1/2 cups sugar (just until well coated)
1 (17 1/3 ounce) box puff pastry sheets

  • Wash and slice strawberries into thin slices.

  • Mix together until well coated.

1 (17.3 ounce) package puff pastry (thawed according to packing directions (2 sheets))
1 and 1/2 cups chopped strawberries
2 tablespoons (25 grams) granulated sugar
1 tablespoon (8 grams) cornstarch
4 ounces (57 grams) cream cheese ((softened))
1/4 cup (30 grams) powdered sugar
1/2 teaspoon vanilla extract
1 large egg white ((lightly beaten))
1 cup (120 grams) powdered sugar

  • Preheat the oven to 400°F. Line two large baking sheets with parchment paper and set aside.

1 egg
One 17.3-ounce package frozen puff pastry, thawed

Demerara sugar, for garnish
1/4 cup pistachios, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Using an electric mixer, whip the cream cheese and sour cream in a small bowl until fluffy. Add the granulated sugar and whip until well combined, making sure there are no lumps. Reserve for later use.
  • Beat the egg and 1 tablespoon water in a small bowl with a fork.
