Provided by Dorothy Kern

Categories     Dessert

Time 6h30m

Number Of Ingredients 9

1 6-ounce box strawberry Jell-o
2 cups boiling water
2 cups crushed pretzels (about 5 cups of twists, see note)
3 tablespoons granulated sugar
3/4 cup unsalted butter (melted)
8 ounces cream cheese (softened)
1 cup granulated sugar
8 ounces Cool Whip
2 pounds fresh strawberries (hulled and sliced)

Steps:

  • Place Jello powder in a medium sized bowl. Carefully pour boiling water over the powder, stir until it's all dissolved. Let sit at room temperature until it is completely cool.
  • While the Jello is cooling, make the crust. Stir together the crushed pretzels with sugar and melted butter. Press into the bottom of a 9x13-inch pan. Chill for at least 30 minutes.
  • Make the cheesecake: Beat the cream cheese and sugar with a hand mixer until smooth, then mix in the whipped topping.
  • Spread cheesecake mixture on top of the crust. Make sure that the cheesecake completely touches all edges of the pan - leave no holes or areas where it's open, otherwise the jello will soak through when you pour it on. Chill 1 hour.
  • Assemble the dessert: place the strawberries in a single layer on top of the cheesecake mixture. Carefully pour the cooled jello mixture evenly over the berries and cheesecake. Chill until set, at least 3 hours.
  • Dessert can be made up to 24 hours ahead. Enjoy within 3 days.

STRAWBERRY PRETZEL SALAD

Strawberry Pretzel Salad image

What is it about the three distinct components in this popular midwestern party dish? The pretzels are salty and mixed with butter and sugar. The cream cheese is tangy and folded together with light and airy whipped topping. And the strawberry gelatin is packed with a whole pound of fresh strawberries and provides a tart sweetness to finish off the dish. The trio of flavors - salty-sweet, tangy and tart - are layered together for the perfect dessert with a hometown feel.

Time 5h20m

Yield 10 to 12 servings

Number Of Ingredients 7

3 cups mini pretzel twists (about 6 ounces)
1/2 cup sugar
1 stick (8 tablespoons) unsalted butter, melted
8 ounces cream cheese, at room temperature
One 8-ounce container frozen whipped topping, such as Cool Whip, thawed
One 6-ounce package strawberry flavored gelatin, such as Jell-O
16 ounces strawberries, hulled and sliced thin

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the pretzels, sugar and butter to a food processor and process until crumbled and well combined. Press the mixture into the bottom of a 9-by-13-inch glass baking dish. Bake until the pretzels are set and slightly more golden than before, about 10 minutes. Let cool slightly, about 10 minutes.
  • Meanwhile, clean the food processor, add the cream cheese and pulse 5 to 6 times to soften, scraping the bowl as needed. Transfer to a medium bowl and fold in the whipped topping until well combined. Spread the cream cheese mixture on top of the cooled pretzels, making sure that it goes all the way to the edges so that no pretzels can be seen, and refrigerate until chilled, about 30 minutes.
  • Bring 2 cups of water to a boil in a small saucepan. Remove from the heat and stir in the strawberry gelatin. Continue to stir constantly until the gelatin has dissolved, about 2 minutes. Add 2 cups of cold water to the mixture and stir to combine. Stir in the strawberries. Use a ladle to carefully spoon the gelatin mixture on top of the chilled cream cheese mixture. Refrigerate until the gelatin is set, about 4 hours and up to overnight.
  • Slice into squares and serve cold.

STRAWBERRY JELLO PRETZEL SALAD

Strawberry Jello Pretzel Salad image

I recently saw this recipe on "The View". All the ladies thought it was 'really good', except for Barbara Walters who thought it was just 'good'. I haven't prepared it yet but would like to know your opinion. I like Cool Whip for it's convenience but, for those who prefer real whipped cream try my recipe for Recipe#114075. I've guesstimated the servings and prep time which includes allowing the jello to set. NOTE: Fresh pineapple should NOT be used in this recipe or any other recipe containing Jello because the jello will not set. This is 'not true' with canned pineapple.

  • Mix Jello: Start by mixing the jello so it has time to cool. Pour the powdered jello into a medium mixing bowl. Pour in the boiling water and whisk together until well combined. Make sure all of the powdered jello is mixed and dissolved. Set aside while you work on the other layers.
  • Make Crust: Place the pretzels into a large ziplock bag and use a rolling pin to roughly crush them. Alternatively, you could put them in a bowl and break them up by hand. Putting them into a food processor doesn't work well, I have found. You don't want them powdered, just nicely broken up like in the video and pictures in the post. Pour the crushed pretzels into a mixing bowl and add the sugar and the melted butter for the crust. Stir until well combined.
  • Bake Crust: Pour the prepared crust mixture into an ungreased 9x13" (23 x 33 cm) pan. This can be glass, ceramic, or metal. However, I prefer to use glass so you can see all of the layers. Spread the crust mixture out evenly in the pan (it will just barely cover the bottom) and use the bottom of a measuring up to firmly press it down until it is in a thin even layer. Bake at 350 F (180 C) for about 12 minutes until set and toasted. Allow to cool completely before adding the filling.
