HOMEMADE STRAWBERRY POPSICLES

Homemade strawberry popsicles image

Easy and simple recipe for homemade strawberry popsicles, made with pure fresh strawberries, no sugar added.

Provided by Layla Pujol

Categories     Dessert     Snack

Number Of Ingredients 2

2 lbs of ripe fresh strawberries (washed and hulled)
Popsicle sticks

Steps:

  • Cut about 5-6 of the strawberries into thin slices and reserve to decorate the molds.
  • Cut the rest of the strawberries into halves or quarters and blend them until you have a puree.
  • Place the sliced strawberries in the popsicle molds, try to stick them to the edges, this will give the strawberries popsicles a fun fruity look.
  • Pour the strawberry puree into the popsicles molds, cover and insert the popsicles sticks. If you are using small cups as popsicle molds you can cover them with foil and insert the popsicle stick thru the foil to keep them in place. Or let them freeze for about an hour and then add the sticks.
  • Place the popsicles in the freezer for about 3-4 hours or until fully frozen. To make it easier to remove them you can dip the bottom of the mold in lukewarm water for about 10-20 seconds.

STRAWBERRY YOGURT POPSICLES

Strawberry Yogurt Popsicles image

Do-it-yourself yogurt popsicles? Yes, please! These are loaded with fresh strawberries and plain yogurt. They make such a good (and healthy!) treat when the weather gets warm.

Provided by Sally Vargas

Categories     Dessert     Snack     Freezer-friendly     Kid-friendly

Time 10m

Yield 10

Number Of Ingredients 7

For the simple syrup
1/2 cup granulated sugar
1/2 cup water
For the popsicles
1 pound (4 cups) strawberries, hulled and halved
1 tablespoon lemon juice
1 cup plain or vanilla yogurt

Steps:

  • Make the simple syrup: In a small saucepan over medium heat, stir the sugar and water together. Bring to a boil and stir until sugar is dissolved. Chill until cold, or set the pot in a bowl of ice to cool. This will make about 3/4 cup syrup; you will not use it all for this recipe. The leftover syrup can be stored in the fridge for several weeks.
  • Whisk the yogurt: In a bowl, whisk the yogurt to smooth out the lumps. (If you like sweetened yogurt, add honey or simple syrup to taste.)
  • Freeze the popsicles: Freeze for 1 hour. Remove the mold from the freezer and insert the popsicle sticks, leaving about 2 inches of each stick above the mold. Return to the freezer for another 3 to 4 hours, or until frozen.

STRAWBERRY POPSICLE

Everyone loves them in our family and the only thing better than this is the sour cherry version. Easy and fast to put together .Freeze it to get a popsicle or when it's half frozen, drink it with a straw. I'm not sure how many it makes, it depends on the size or the popsicle moulds. The amount of sugar and lime can be increased or decreased.

  • Whisk the yogurt: In a bowl, whisk the yogurt to smooth out the lumps. (If you like sweetened yogurt, add honey or simple syrup to taste.)
  • Fill the popsicle molds: Fill the molds by alternating about 1 tablespoon of fruit puree and 1 tablespoon of yogurt. Continue alternating yogurt and berries until the molds are filled to 1/4-inch from the top (this allows for expansion when freezing). With a skewer or chopstick, poke deep into the popsicle molds and swirl the yogurt and fruit together. Note: Exact proportions will depend on the size of your popsicle molds. You may end up with leftover strawberry puree, which can be refrigerated for up to 5 days or frozen for up to 3 months for future popsicles or stirred into plain yogurt for breakfast.
