4 cups fresh strawberries, hulled and thinly sliced
3/4 cup confectioners' sugar
1 homemade pie crust or store-bought pie crust, pre-baked
2 cups whipped cream

Steps:

  • In a large bowl, add the strawberries and 1/4 cup of the sugar and mix together. Let macerate for at least 30 minutes.
  • Sprinkle 1/4 cup of the sugar on the bottom of the pie crust and pour the macerated strawberries on top. Pat down, so the berries come just to the edges. Sprinkle the remaining 1/4 cup sugar on top of the strawberries. Cover with whipped cream and use a spatula to smooth.

1 box (4-serving size) strawberry-flavored gelatin
1/4 cup sugar
1/2 cup boiling water
1 container (8 oz) frozen whipped topping, thawed
2 cups sliced fresh strawberries
8 fresh strawberry halves

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
  • Meanwhile, in medium bowl, mix gelatin, sugar and boiling water until gelatin is dissolved.* Refrigerate until mixture just begins to thicken and get syrupy, 10 to 15 minutes.
  • Stir whipped topping into gelatin mixture until well blended. Fold in sliced strawberries. Spoon into cooled baked shell. Arrange strawberry halves around outer edge of pie. Refrigerate at least 2 hours or until serving time. Store in refrigerator.

½ cup butter, melted
1 (8 ounce) package cream cheese, softened

½ (2 ounce) package strawberry Danish dessert mix (e.g. Junket)
1 cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together flour and confectioners' sugar. Stir in melted butter. Press mixture evenly into a 12 inch pizza pan.
  • Bake in preheated oven for 15 minutes. Allow to cool.
  • In a small mixing bowl, beat together cream cheese and white sugar until smooth. Spread over cooled crust. Arrange strawberries over cream cheese layer.

12 ounces Cool Whip (can also use 16 oz)
1 (8 ounce) package strawberry glaze (unsure if this is the exact oz. of the continer, can find by strawberries in produce sections)
1 quart strawberry, sliced to look like discs so they will lay on the top of the pizza

Steps:

  • Crust: Mix butter, powdered sugar (1/2 cup), flour - form into a ball, spread onto a pizza pan.
  • Bake 15 minutes at 350 degrees and let cool. Keep an eye on the crust while cooking - you don't want to over cook it. Remove the crust when it is golden.
  • Topping: Mix cream cheese, powdered sugar (1 cup), and cool whip - preferrably using electric mixer. Spread this mixture over the crust after crust is cool.
  • On top of white topping, add entire container of glaze and top with sliced strawberries. (you can also mix the strawberries and glaze together and place it on top that way too.
  • Serve and enjoy!

2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 sticks cold unsalted butter, cut into chunks
2 tablespoons milk
2 tablespoons coarse sugar
1 1/4 pounds rhubarb
2 pints strawberries
1 cup granulated sugar
2 heaping tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
Pinch of salt
2 teaspoons vanilla extract
Juice of 1/2 lemon

Steps:

  • Make the crust. Combine the flour, salt and butter in a large bowl. Gently cut the butter into the flour using 2 sharp knives in a crisscross motion until the butter is about the size of small peas. (The lighter the hand, the flakier the crust.) Slowly drizzle in 1/2 cup ice water and fold into the mixture with a fork until the dough comes together-you want to work the dough as little as possible. Add more water, 1 tablespoon at a time, if the dough is too dry. Turn the dough out onto a floured surface and divide into 2 balls. Form each into a disk, wrap in plastic and refrigerate at least 30 minutes. Meanwhile, trim the rhubarb and cut into 1/2-inch pieces. Hull the strawberries and slice. Combine the rhubarb, strawberries, granulated sugar, flour, cinnamon, salt, vanilla and lemon juice in a large bowl; toss.
  • Prepare the bottom crust. Preheat the oven to 425 degrees F. Roll out 1 disk of dough on a floured surface into a 12-inch round. Roll the dough onto the rolling pin, then carefully unroll it over a 9-inch pie plate. Gently press the dough into the plate with your fingers. Add the strawberry-rhubarb filling. Do not trim the overhanging dough.
  • Make the lattice. Roll out the remaining disk of dough into a 12-inch round. With an old-fashioned crimper, sharp knife or pizza cutter, cut into 1-inch-wide strips. Lay about half of the strips on the pie in one direction, about 1/2 inch apart. Fold back every other strip halfway. Lay a strip perpendicular to the first ones. Unfold the strips back over the new strip, then fold alternate strips back halfway. Add another perpendicular strip; unfold the strips back over it. Repeat to form a lattice. Pinch the overhanging top and bottom crusts together, trimming as needed, then fold the dough under itself and crimp with your fingers.
  • Bake the pie. Using your fingers, pat the lattice top with milk and sprinkle with coarse sugar. Put the pie on a baking sheet and place in the preheated oven. Bake 20 minutes, then reduce the oven temperature to 375 degrees F and bake until the crust is golden brown and the filling is bubbling, 50 more minutes. Let cool completely before slicing.

If using fresh strawberries, mash, sprinkle with sugar, cover, refrigerate for 2 hours, and add 1/4 cup water when cooking. I had unsweetened frozen strawberries and added 3 packets of splenda while cooking.

  • Cook over medium heat, stirring, until thickened (about 5 minutes).
  • Cool and spread over cream cheese filling.
  • Refrigerate at least 4 hours.

1 quart fresh strawberries
1 cup white sugar
3 tablespoons cornstarch
¾ cup water
½ cup heavy whipping cream

Steps:

  • Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  • In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. This Classic Strawberry Pie is the perfect summer dessert recipe made with an all-butter crust and fresh strawberries. It's a simple pie recipe that's easy enough for anyone to make - even beginners!

3 cups all purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
1 cup cold unsalted butter, cut into small chunks
1/2 teaspoon lemon juice
6-7 tablespoons ice cold water
5 cups sliced fresh strawberries
4 tablespoons cornstarch
3/4 cups granulated sugar
1 pinch salt
a splash of lemon juice
1 egg
1 tablespoon water
1-2 tablespoons coarse sugar

Steps:

  • Add the flour, sugar and salt to the bowl of your food processor (or a large bowl if your making the dough by hand).
  • Turn the food processor on low speed and add the chunks of cold butter one at a time while the food processor runs until all the butter is added and the mixture resembles coarse crumbs.If making by hand, use a pastry blender or your hands to work the butter into the dough until the mixture is crumbly. Try not to handle the butter too much (the heat from your hands will soften it) - use quick movements and don't worry if some larger chunks of butter still remain.
  • Add the lemon juice and the water slowly as the food processor runs on low, just until the dough comes together and pulls away from the sides of the bowl. Depending on the weather and even on the brand of flour, I use anywhere between 5 and 8 tablespoons of water. If making by hand, use your hands to form the dough gently and quickly using just enough water for the dough to come together.
  • Dump the rough dough onto the counter and divide the dough into two disc shapes and wrap each one separately in plastic wrap, placing it in the fridge to chill for 45 minutes or overnight.
  • Add the sliced strawberries to a bowl, along with the cornstarch, sugar, salt and lemon juice. Toss just until combined.
  • Set the filling aside while you prepare the crust for baking.
  • Preheat your oven to 400 degrees Fahrenheit. If your oven runs hot, set it to 375 degrees Fahrenheit. (Use an oven thermometer to ensure the correct temperature)
  • Remove the chilled pie dough from the fridge and let it sit for about 10 minutes before rolling. Roll out one of the balls of dough into a large circle using a rolling pin. Add a generous amount of flour to the rolling surface and to the rolling pin, to prevent sticking and cracking.
  • Peel the rolled out dough off the counter surface gently by rolling it backwards onto the rolling pin.
  • Transfer it to a 9-inch pie plate and gently press the dough into the bottom of the pie plate and over the edges (try for a 1-2 inch overhang if possible).
  • Add the strawberry filling to the pie crust and smooth out the top.
  • Repeat the rolling out process with the second ball of dough, this time slicing it into about 10 long, thin slices using a pizza cutter (or a pastry cutter, if you have one).
  • Create a lattice pattern using the strips of dough, overlapping every second vertical strip with every second horizontal strip.
  • Trim any dough that hangs over the edge of the pie to 1-2 inches past the edge (try to keep the overhang amount even all the way around). Tuck any overhanging dough under and into the pie plate to create a clean edge.
  • If your pie plate has a wide edge, seal the edge of the pie by creating a fluted pattern - press into the edge of the pie from the outside with your left thumb and index finger while pressing into the edge of the pie from the inside with your right index finger. Do this all the way around the edge of the pie to create a fluted pattern (and see my tutorial HERE for how to create a beautiful fluted edge to your pies!)
  • Beat the egg and 1 tablespoon of water and brush it lightly onto the unbaked crust. Use a light hand while brushing - too much egg wash creates an eggy texture after baking.
  • Dust the crust with the coarse sugar and bake at 400 degrees Fahrenheit for about 10 minutes, and then reduce the heat to 375 (350 if your oven runs hot) and bake for an additional 35-45 minutes or until the crust is evenly browned and the filling is bubbly.
  • Let cool to room temperature before slicing and serving with a scoop of vanilla ice cream.

GLAZE:
1 c sugar
1/4 c cornstarch
2 c crushed strawberries

Steps:

  • 1. Prepare Crust: Roll out cookie dough to fit a 12" pizza pan and bake according to package instructions or your own recipe until lightly golden. Cool completely.
  • 2. Filling: In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Spread over crust. Arrange 2 cups sliced strawberries over filling.
  • 3. Glaze: In a saucepan, combine sugar, cornstarch and crushed berries until blended. Bring to a boil. Cook and stir for 2 minutes until thickened.
  • 4. Cool slightly. Spoon over strawberries and refrigerate until serving.

1/3 cup superfine sugar
2 large egg yolks
1/4 teaspoon almond extract (or 1 tablespoon Amaretto)
1 cup finely ground blanched almonds (almond meal)
1 tablespoon allpurpose flour
1 pound fresh or frozen puff pastry
2 pints strawberries, stemmed
1 large egg yolk
4 sprigs mint
Confectioners' sugar
Best-quality vanilla ice cream

Steps:

  • Frangipane:
  • In the bowl of an electric mixer, beat the butter and sugar together until light and fluffy, scraping down the bowl as necessary. Add the egg yolks, beat in well, and add the almond extract. Remove the beater and stir in the ground almonds and flour until evenly blended. the mixture should be the consistency of a thick paste.
  • Pizzas:
  • Preheat the oven to 400 degrees. On a lightly floured surface, roll out the pastry to a 1/8-inch thickness and, using a plate or cardboard circle as a template, use a very sharp knife to cut four 7-inch circles. Spread a circle of frangipane (they should be touching each other so that you can fit as many as possible onto the circle of frangipane). Beat the egg yolk lightly with a fork and brush the border of the pastry with it (try not to let any yolk dribble down onto the cut edges of the pastry, otherwise it will not rise as high). Bake the tarts for about 20 minutes, until the edges are golden and the pastry is baked through. Remove from the oven and allow to cool for 5 minutes. Place a sprig of mint in the center of each tart and sprinkle it lightly with confectioners' sugar. Serve while still warm, accompanied by a scoop of vanilla ice cream

I have never tasted something so delicious. I received the recipe from a co worker who made this for me for my birthday when she found out I loved strawberries. This melts in your mouth. It's a perfect summer desert. It's one of my personal favorites.

1 1/2 pkg fresh strawberries
2 pt strawberry glaze
2/3 c powdered sugar
1 tsp vanilla
2 pkg 8 softened cream cheese
1 disposable aluminum pizza pan
1 roll of pillsbury sugar cookie dough

Steps:

  • 1. Spray your aluminum pan with Pam cooking spray and cook the cookie dough as one big cookie spreading it over the entire aluminum pan bottom. Cook until done but leave a little doughy. Let this cool before putting any of the ingredients on top of it. Give it about 30 minutes or more.
  • 2. Mix 2/3 cup of powdered sugar, 1 tsp of vanilla, and 2- 8 oz softened cream cheeses all together. Put this mixture on the cooled cookie crust.
  • 3. Then cut your strawberries and place them however you want them aligned around the pizza pan. Then put the strawberry glaze over the strawberries. WARNING!!!! it's very easy to get the Sugar free version of this glaze and it tastes horrible. Be sure to read the packaging.
  • 4. Then cover and let it refrigerate overnight to set.

2 large onions, sliced thin

1/4 lb mushroom, sliced
1 green bell pepper, sliced
4 tomatoes, seeded and sliced
2 cloves garlic, minced
1/2 teaspoon thyme
1/2 cup dry salami or 1/2 cup pepperoni, cut into slivers
1 cup grated mozzarella cheese
1/2 teaspoon oregano
1/4 cup sliced black olives
1/4 cup tomato sauce (of your choice)

Steps:

  • In a large skillet heat 2 T.
  • oil over medium high heat, add the onions and saute for 8 min.
  • Remove to a large bowl and salt and pepper them Same skillet add 1 t.
  • oil and saute the mushrooms and peppers-remove to the same bowl and salt and pepper them.
  • Add 2 t.
  • to the skillet and saute the tomatoes, garlic, thyme, oregano.
  • Remove to bowl and add sauce.
  • Fold in the salami and cool.
  • Place half of this mixture on the bottom of shell-then half the cheese-remaining mixture-remaining cheese-sprinkle black olives on top.
  • Bake in a 350 oven for 25-30 minutes.
  • Let stand at 15 minutes before cutting.
  • Serve hot.
