2 tablespoons cream cheese, softened
2 tablespoons mayonnaise
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
4 flour tortillas (10 inches), warmed
4 leaf lettuce leaves
1/2 pound thinly sliced deli roast beef
8 thin slices tomato
4 slices red onion, separated into rings

Steps:

  • In a small bowl, beat the cream cheese, mayonnaise, cumin, salt, chili powder and cayenne until smooth. Spread 1 tablespoon on one side of each tortilla; top with lettuce, roast beef, tomato and onion; roll up tightly. Cut on a diagonal.

1/3 cup mayonnaise or salad dressing
1 tablespoon lime juice
1 teaspoon chili powder
1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon salt
4 (10 inch) flour tortilla, heated as directed on package
3/4 lb thinly sliced cooked roast beef
8 slices bacon, cooked crisply
1 ripe avocado, pitted, peeled and sliced
4 small leaves romaine lettuce
12 thin red onion rings

Steps:

  • In small bowl, combine mayonnaise, lime juice, chili powder, cayenne and salt. Set aside.
  • Spread 1/4 of the mayonnaise mixture over bottom half of each tortilla within 1 inch from edges. Divide roast beef, bacon, avocado, lettuce and onion evenly over bottom half of tortillas. Tuck in sides of tortillas; roll up tightly to enclose filling. Cut in half to serve.

1/2 cup minced ham
2 scallions chopped
3 tablespoons chopped flat-leaf parsley
1 chopped red pepper
1/4 teaspoon allspice
1-cup bread crumbs
1 egg
12 peeled seeded and diced tomatoes

Steps:

  • Pound out flank steak with meat mallet until 1/4-inch thick and roll up. Mix remaining ingredients and pour over steak in non-reactive dish. Refrigerate and let marinate for 8 hours. While beef is marinating mix all ingredients in filling except for tomatoes. Remove beef from marinade and shake off any excess liquid. Lay beef out flat and place 2 tablespoons of filling in the center of each piece. Roll each piece of beef tightly and secure with skewer. Heat large roasting pan on stove and put in 2 tablespoons of olive oil brown beef on all side and pour off excess fat. Pour the marinade over the beef and add chopped tomatoes. Simmer for 25 minutes making sure to turn beef if necessary. Remove from pan and cover with 2 tablespoons of sauce.

150g thin-cut frying steak , very thinly sliced
1 tsp mild chilli powder
2 good pinches of ground cumin
2 garlic cloves , finely chopped
2 tsp sunflower oil
1 yellow pepper , deseeded, quartered and sliced
1 red onion , thinly sliced
2 tomatoes , chopped
400g can black bean , drained
good handful fresh coriander
4 value soft tortilla wraps

Steps:

  • Put the steak in a bowl with the spices and garlic, and stir well. If you have time, leave to marinate for a couple of hrs. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
  • Add the pepper and half the onion, and stir-fry in the juices - add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
  • Meanwhile, heat the tortillas. The best way is directly on the gas flame, as it gives them a lovely charred flavour. Stir the beef into the beans and heat briefly. Serve with the tortillas and the reserved onion and coriander.

1 large flour tortilla (white or wheat)
chive & onion cream cheese
ranch dressing
prepared horseradish
3 -5 leaves romaine lettuce, torn
2 slices tomatoes, cut into strips
1/4 cup shredded montery monterey jack pepper cheese
4 -5 slices of angus roast beef

Steps:

  • Spread Onion and Chive cream cheese on one side of tortilla.
  • Lay out slices of Roast Beef evenly on tortilla.
  • Dribble a little Ranch dressing in a thin line down the middle.
  • Spread a small thin line of Horseradish down the middle.
  • Spread out the torn romaine lettuce evenly on tortilla but make sure all ingredients are a little away from the edges so you can fold it easier.
  • Put strips of tomato in a line down middle.
  • Spread Monterey Pepper Jack Cheese evenly on tortilla.
  • Fold the ends of the tortilla to the stuffing, then starting at one side, roll up the tortilla.
  • Makes one wrap.

1 beef top sirloin steak (1 pound), cut into thin strips
1/4 teaspoon pepper
3 tablespoons reduced-sodium soy sauce, divided
3 teaspoons olive oil, divided

1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1/4 cup dry red wine or reduced-sodium beef broth
6 tablespoons fat-free ranch salad dressing
6 flour tortillas (8 inches)
1-1/2 cups torn iceberg lettuce
1 medium tomato, chopped
1/4 cup chopped green onions

Steps:

  • In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. 1 package fajita seasoning mix
1 jar pepperoncini pepper

Steps:

  • Put roast in your crockpot and sprinkle half the package of fajita seasoning mix over top, then turn roast over and sprinkle other half.
  • Then pour the whole jar, including liquid, onto the roast and cook on high for 4-5 hours, or low 9-10 hours.
